Gluten Free Recipes
Hi All,
Just looking over these lovely gluten free recipes and the many faces of all who have joined this group. I'm curious how long people have been gluten free and if the health benefits been increasing for you. For myself, I find that each year since my diagnosis has shown greater health, stronger endurance, more energy and almost none of the usual colds and flu.
Any one else have something to share?

I've been gluten free for a little over 2 years now. I too find my health increasing more and more over time. I do have some endurance issues but hoping those improve with more time. I take lots of D3 and sublingual B to help me as my tummy can be very sensitive still and I worry about losing the nutrition from the food.
HI Baking Barb,
I know what you mean about losing nutrition from the food. I used to eat as much as a football player and was still hungry. It's nice to eat a normal amount of food and feel it be utilized. It's hard not to worry but I believe people with gluten intolerance can really fully recover.

I have been gluten free since July 2007 and prior to that I was very sick all of my life.
I was always really thin (with a big belly) no matter what I ate!
Now, however, because of a medication I was given after a misdiagnoses, I am fat and having trouble losing the weight.
I have, however, felt 150% better since going gluten free.

I have been gluten free since January 2011, it is very helpful to see these types of websites! I have psoratic arthritis, going gluten free has helped me. I now need to consider going dairy free also. Its amazing how food effects your body.
