keeping vegetables fresh

Since I am new here this may be an old subject, if it is I apologize. For the last three months I have been keeping my fresh vegetables in canning jars in the fridge. Lettuce, onions, celery, radishes, peppers, etc. When I get the vegetables home I clean them and let them drain, the lettuce I blot and get as dry as I can. I use clean canning jars and they have to have the lids with the rubber around the rim. Pack the jars with the vegetables, I can usually get a head of lettuce in two quart jars. I keep a roll of masking tape in the kitchen so I can put the date on that I buy them. I am in love with this idea. The lettuce stays fresh and crisp. I at the last of lettuce yesterday that I had put up 10 days before. I don't think I would keep it anymore than 14 days. I have eaten a lot more salads and since the vegetables are all ready to use I find myself adding them to other recipes. I also don't have any waste except for what I trim off to begin with.

Lettuce in canning jars?? I had not imagined...thx! Would you like our Garden Mustard Pickle recipe ~ only for the bold.
