%3C/p%3E%3Cp%3EA%20bit%20of%20background%20is%20in%20order.%20It%20was%20our%20first%20big%20weekend%20back%20at%20home%20after%20the%20holidays,%20traveling,%20our%20awesome%20NYE%20in%20Boston%20and%20two%20nasty%20stomach%20bugs,%20so%20we%20wanted%20to%20have%20some%20New%20York-style%20fun.%20E%20really%20wanted%20to%20see%20a%20movie%20[Ed.%20-%20Black%20Swan!%20It's%20really,%20really%20good--an%20intense%20Aronofsky%20tour%20de%20force],%20so%20we%20went%20to%20a%20matin%C3%A9e%20in%20Times%20Square%20and%20then%20had%20a%20late%20lunch%20at%20Katz%E2%80%99s%20Deli.%20This%20meant%20we%20weren%E2%80%99t%20super-hungry%20for%20a%20big%20Saturday%20night%20dinner,%20so%20we%20decided%20on%20a%20few%20tapas.%20E%20wanted%20another%20tortilla%20and%20I%20decided%20to%20have%20another%20crack%20at%20it,%20my%20last%20attempt%20being%20only%20marginally%20successful.%3C/p%3E%3Cp%3EMy%20part%20of%20the%20whole%20endeavor%20was%20a%20traditional%20Spanish%20tortilla%20(E%20had%20other%20dishes%20to%20make%20which%20she%20will%20elaborate%20on%20later).%20I%20used%20my%20mandoline,%20though%20it%20has%20seen%20better%20days,%20to%20give%20lovely%20thin%20slices%20of%20potatoes%20for%20the%20dish.%20For%20Christmas%20I%20had%20received%20a%20lovely%20nonstick%20skillet,%20perfect%20for%20eggs,%20but%20too%20small%20to%20brown%202%20lbs%20of%20thinly%20sliced%20tubers%20and%20E%20was%20using%20the%20big%20saute%20pan,%20so%20I%20improvised%E2%80%A6%3C/p%3E%3Cp%3EBrowning%20potatoes%3C/p%3E%3Cp%3EIt%20didn%E2%80%99t%20give%20them%20the%20awesome%20crisp%20of%20pan-frying%20in%20a%20cup%20of%20olive%20oil,%20but%20this%20gave%20the%20taters%20some%20color%20without%20tying%20up%20my%20range%20or%20risking%20an%20oily%20finished%20product.%20Once%20they%20were%20done,%20I%20moved%20them%20to%20the%20hot%20skillet%20with%20eight%20beaten%20eggs%20and%20a%20tiny%20amount%20of%20chopped%20rosemary%20and%20cooked%20until%20eggs%20were%20nearly%20set.%20Next,%20I%20had%20the%20difficult%20task%20of%20sliding%20the%20guy%20out%20on%20to%20a%20plate,%20then%20flipping%20back%20into%20the%20skillet,%20uncooked%20side%20down.%20Did%20I%20pull%20it%20off?%20Yes.%20Was%20it%20harrowing?%20A%20bit.%3C/p%3E%3Cp%3EThe%20tortilla%20was%20worth%20it.%20I%20don%E2%80%99t%20know%20how%20many%20more%20I%E2%80%99ll%20have%20to%20fiddle%20and%20flip%20and%20risk%20feeding%20to%20the%20floor%20before%20turning%20it%20becomes%20commonplace,%20but%20I%E2%80%99m%20willing%20to%20keep%20at%20it.%20At%20least%20until%20I%20botch%20a%20dinner%20or%20suffer%20a%20severe%20burn.%20So%20keep%20honing%20your%20technique,%20good%20readers.%20Until%20next%20time,%20cook%20on!%3C/p%3E){kind=link}
