%3C/p%3E%3Cp%3ECalzone%20with%20Fresh%20Mozzarella,%20Ricotta%20Salata,%20Proscuitto,%20Sun-Dried%20Tomato%20and%20Thyme%3C/p%3E%3Cp%3EWhen%20I%20was%20growing%20up,%20the%20concept%20of%20the%20savory%20pie%20didn%E2%80%99t%20really%20go%20farther%20than%20the%20mince%20pies%20that%20my%20dad%20would%20get%20to%20enjoy%20at%20Thanksgiving%20and%20Christmas%20dinners,%20mostly%20because%20the%20thought%20of%20meat%20in%20a%20pie%20so%20completely%20revolted%20me%20that%20I%20ignored%20it%20and%20happily%20went%20on%20eating%20my%20grandmother%E2%80%99s%20apple%20pie%20in%20peace.%20%20Even%20as%20I%20got%20older,%20the%20thought%20of%20eating%20anything%20but%20fruit%20in%20pastry%20seemed%20alien%20to%20me%E2%80%93I%20never%20got%20into%20Hot%20Pockets%20(though%20Jim%20Gaffigan%20has%20shown%20me%20that%20I%20haven%E2%80%99t%20missed%20much%20there)%20and%20frozen%20pot%20pies%20out%20of%20the%20box%20weird%20me%20out%20with%20their%20peas%20and%20gloopy%20sauces.%3C/p%3E%3Cp%3EThen%20college%20came,%20and%20I%20finally%20tried%20my%20first%20calzone.%20%20Why%20it%20had%20taken%20me%20until%20I%20hit%20the%20age%20of%2019%20to%20try%20one%20of%20these%20is%20one%20of%20those%20mysteries%20I%20will%20never%20solve,%20but%20my%20guess%20is%20that%20my%20parents%20don%E2%80%99t%20care%20for%20them%20and%20figured%20that%20ordering%20pizza%20was%20always%20a%20safer%20option.%20%20My%20first%20wasn%E2%80%99t%20remarkable%20on%20its%20own%20(after%20all,%20it%20came%20from%20the%20cafeteria),%20but%20it%20showed%20me%20that%20dough%20and%20savory%20ingredients%20did%20belong%20together,%20so%20long%20as%20they%20more%20resembled%20a%20pizza%20folded%20into%20itself%20rather%20than%20anything%20I%20previously%20associated%20with%20only%20containing%20fruits.%3C/p%3E%3Cp%3EAll%20that%20considered,%20my%20calzone%20(and%20stromboli)%20consumption%20was%20still%20unremarkable,%20as%20I%20tend%20to%20default%20to%20pizza%20whenever%20the%20opportunity%20to%20order%20it%20arises.%20%20So%20when%20this%20past%20weekend%E2%80%99s%20Cook%20and%20Tell%20on%20Serious%20Eats%20presented%20the%20challenge%20of%20making%20one%E2%80%99s%20own%20savory%20pie,%20it%20seemed%20like%20the%20perfect%20opportunity%20to%20try%20my%20hand%20at%20revisiting%20a%20dish%20that%20gets%20too%20often%20ignored%20around%20these%20parts,%20and%20the%20results%20were%20pretty%20freaking%20fantastic.%3C/p%3E%3Cp%3EWhile%20it%20seems%20like%20a%20lot%20of%20cheese%20goes%20into%20the%20recipe%20below,%20keep%20in%20mind%20that%20it%20will%20yield%20leftovers%E2%80%93I%20could%20barely%20make%20it%20through%20half%20of%20mine%20due%20to%20the%20cheesy%20richness,%20but%20for%20me,%20that%E2%80%99s%20only%20prolonging%20the%20magic%20for%20another%20day.%3C/p%3E%3Cp%3ECalzone%20with%20Fresh%20Mozzarella,%20Ricotta%20Salata,%20Prosciutto,%20Sun-Dried%20Tomato%20and%20Thyme%3C/p%3E%3Cp%3EServes%202%20with%20leftovers%3C/p%3E%3Cp%3E1%20quantity%20pizza%20dough,%20divided%3C/p%3E%3Cp%3EPreheat%20oven%20to%20450%20degrees.%20%20Combine%20cheese,%20prosciutto,%20tomatoes,%20and%20thyme%20in%20a%20bowl,%20season%20with%20salt%20and%20pepper%20and%20set%20aside.%20%20For%20each%20dough%20ball,%20gently%20stretch%20into%20a%20circle%20shape%20and%20place%20half%20of%20the%20filling%20on%20one%20side%20of%20each%20circle.%20%20Fold%20remaining%20half%20over,%20pinch%20dough%20to%20close,%20and%20transfer%20to%20a%20baking%20sheet%20lined%20with%20foil%20and%20cornmeal%20(the%20cornmeal%20is%20optional,%20but%20adds%20a%20subtle%20texture).%20%20Brush%20with%20egg%20wash,%20and%20bake%20for%2015%20minutes%20(you%20may%20want%20to%20switch%20to%20broil%20for%20the%20last%20few%20minutes%20in%20order%20to%20get%20more%20of%20a%20golden%20brown%20finish%20on%20the%20crust).%3C/p%3E%3Cp%3EServe%20with%20your%20favorite%20sauce.%20%20Buon%20apetito!%3C/p%3E){kind=link}
