%3C/p%3E%3Cp%3EWhite%20Bean%20and%20Arugula%20Dip%3C/p%3E%3Cp%3E%E2%80%9CThe%20Big%20Game%E2%80%9D%20has%20come%20and%20gone,%20the%20football%20season%20is%20by%20most%20definitions%20over,%20and%20many,%20many%20avocado%20pits%20and%20skins%20now%20lie%20in%20trash%20cans,%20the%20only%20reminders%20that%20Super%20Bowl%20Sunday%20is%20the%20biggest%20day%20of%20the%20year%20for%20guacamole.%20%20The%20end%20of%20the%20football%20season,%20however,%20should%20not%20mean%20forgetting%20about%20dips,%20in%20particular%20healthy%20ones%20that%20shouldn%E2%80%99t%20only%20be%20brought%20out%20to%20eat%20on%20any%20given%20autumn%20Sunday.%20%20More%20often%20than%20not,%20a%20bean-centric%20dip%20will%20make%20an%20appearance%20on%20a%20random%20Tuesday%20or%20Wednesday%20night%20around%20here,%20often%20paired%20with%20Alton%20Brown%E2%80%99s%20sardine%20sandwiches%20and%20a%20bunch%20of%20celery%20sticks,%20creating%20a%20lovely%20meat-light%20spread%20that%20satisfies%20without%20any%20guilty%20feelings%20of%20over-indulgence.%3C/p%3E%3Cp%3EThis%20was%20a%20newish%20sort%20of%20creation%20on%20Saturday%E2%80%93I%20was%20in%20the%20mood%20for%20something%20to%20snack%20on%20in%20the%20afternoon%20before%20any%20thoughts%20of%20dinner%20were%20in%20our%20head,%20and%20I%20wanted%20something%20other%20than%20our%20normal%20chickpea%20spread,%20so%20I%20suggested%20to%20Michael%20that%20we%20make%20something%20with%20white%20beans.%20%20Using%20an%20old%20recipe%20from%20Everyday%20Italian%20and%20making%20many%20adjustments%20based%20on%20what%20we%20had%20(in%20the%20end%20only%20keeping%20the%20white%20beans,%20garlic%20and%20olive%20oil),%20Michael%20whipped%20up%20a%20delightful,%20garlicky%20dip%20that%20(gasp!)%20even%20included%20leafy%20greens.%20%20Toasting%20some%20pitas%20to%20accompany%20it,%20it%20took%20a%20monumental%20amount%20of%20self-control%20to%20not%20devour%20the%20entire%20blender%20jar%20on%20the%20spot.%20%20Only%20the%20promise%20of%20a%20delicious%20dinner%20could%20keep%20us%20in%20check%E2%80%A6but%20that%20will%20be%20a%20tale%20for%20another%20day.%3C/p%3E%3Cp%3EWhite%20Bean%20and%20Arugula%20Dip%3C/p%3E%3Cp%3Eheavily%20adapted%20from%20Everyday%20Italian%3C/p%3E%3Cp%3EServes%206%20as%20an%20appetizer%3C/p%3E%3Cp%3ECombine%20arugula,%20beans,%20garlic,%20and%20oregano%20into%20a%20food%20processor%20or%20a%20blender%20and%20process%20until%20they%20are%20combined,%20but%20before%20the%20mixture%20is%20perfectly%20smooth.%20%20Add%20lemon%20juice%20and%20some%20salt,%20and%20drizzle%20in%20about%20a%20quarter%20to%20a%20third%20of%20a%20cup%20of%20olive%20oil,%20with%20constantly%20checking%20to%20make%20sure%20the%20mixture%20is%20blending%20evenly.%20%20Just%20before%20the%20dip%20is%20at%20the%20consistency%20desired,%20add%20some%20more%20salt%20and%20freshly%20ground%20pepper%20and%20process%20until%20perfectly%20smooth.%3C/p%3E){kind=link}
