%20With%20us%20no%20longer%20being%20a%20mere%20two%20subway%20rides%20away%20from%20my%20favorite%20greenmarket,%20I%20had%20resigned%20myself%20to%20having%20a%20ramp-less%20spring%20this%20year,%20as%20Google%20searches%20came%20up%20with%20a%20lot%20of%20ways%20to%20build%20a%20ramp,%20but%20not%20to%20buy%20wild%20leeks%20locally.%20This,%20to%20be%20honest,%20didn%E2%80%99t%20surprise%20me%20all%20that%20much.%3C/p%3E%3Cp%3EThen,%20in%20what%20was%20potentially%20the%20oddest%20exchange%20ever%20in%20the%20bar%20at%20the%20Stamford%20Morton%E2%80%99s%20Steakhouse,%20I%20suddenly%20had%20in%20my%20possession%20a%20bag%20filled%20with%20roughly%20two%20pounds%20of%20gorgeous,%20fresh%20ramps,%20and%20all%20it%20cost%20us%20was%20two%20beers.*%3C/p%3E%3Cp%3EIn%20the%20past%20I%E2%80%99ve%20only%20used%20ramps%20in%20their%20fresh,%20ephemeral%20state%20to%20make%20pesto%20and%20salsas%20meant%20to%20be%20consumed%20right%20away,%20but%20this%20unexpected%20bounty%20was%20practically%20begging%20to%20be%20pickled.%20Seeing%20a%20shot%20of%20a%20Gibson%20with%20a%20pickled%20ramp%20instead%20of%20a%20cocktail%20onion%20sealed%20the%20deal,%20and%20our%20copy%20of%20Think%20Like%20a%20Chef%20had%20an%20easy%20enough%20technique%20to%20bring%20everything%20together.%20They%E2%80%99re%20now%20hanging%20out%20in%20our%20fridge%20getting%20good%20and%20pickled,%20and%20by%20next%20week%E2%80%99s%20episode%20of%20Mad%20Men%20we%E2%80%99ll%20be%20enjoying%20one%20of%20Roger%20Sterling%E2%80%99s%20preferred%20cocktails,%20albeit%20with%20a%20more%20colorful%20garnish.%20And%20if%20you%20find%20yourself%20in%20possession%20of%20an%20unexpected%20bundle%20of%20ramps%20this%20season,%20this%20is%20likely%20the%20best%20way%20of%20prolonging%20the%20magic%20of%20a%20very,%20very%20short%20season.%20Just%20don%E2%80%99t%20throw%20out%20the%20leaves%20when%20you%20separate%20them%20for%20the%20pickle%E2%80%93those%20will%20go%20into%20a%20fantastic%20pesto%20tomorrow.%3C/p%3E%3Cp%3E*The%20guy%20was%20going%20to%20give%20them%20to%20us%20for%20free,%20but%20Michael%20(rightly)%20felt%20weird%20about%20taking%20them%20for%20nothing%20so%20we%20got%20the%20guy%20two%20pints%20of%20Sam%20Summer.%3C/p%3E%3Cp%3EPickled%20Ramps%3C/p%3E%3Cp%3EAdapted%20from%20Think%20Like%20a%20Chef%3C/p%3E%3Cp%3EPrep%20the%20ramps:%20trim%20off%20the%20root%20ends%20of%20each%20ramp,%20remove%20the%20outer%20layer%20of%20the%20bulb%20(this%20will%20easily%20come%20off,%20by%20the%20way)%20and%20trim%20off%20the%20leaf,%20leaving%20about%20a%20quarter%20inch%20of%20green%20or%20so.%20EXTREMELY%20IMPORTANT%20NOTE:%20You%20can%20use%20the%20leaves%20to%20make%20pesto%20or%20salsa.%20If%20you%E2%80%99re%20planning%20on%20doing%20so%20but%20not%20until%20the%20next%20day%20(which%20is%20as%20late%20as%20you%20should%20wait),%20do%20not%20wash%20the%20leaves.%20Wrap%20them%20up%20in%20paper%20towels%20and%20put%20them%20away%20in%20the%20crisper.%20Then%20wash%20the%20ramp%20bulbs.%20And%20then%20bring%20a%20large%20pot%20of%20salted%20water%20to%20boil.%3C/p%3E%3Cp%3EAs%20you%E2%80%99re%20doing%20the%20last%20step,%20also%20use%20a%20small%20saucepan%20and%20combine%20the%20vinegar,%20water,%20and%20sugar%20and%20bring%20to%20a%20boil.%20Add%20in%20the%20spices%20and%20bay%20leaf,%20then%20bring%20down%20the%20heat%20to%20low%20and%20keep%20the%20pot%20warm.%3C/p%3E%3Cp%3EWhen%20the%20large%20pot%20is%20boiling,%20add%20the%20ramps%20and%20cook%20for%203%20minutes.%20Drain%20and%20run%20under%20cool%20water.%20Add%20them%20to%20a%20jar%20that%20can%20hold%20at%20least%20a%20quart%20(preferably%20glass)%20and%20then%20pour%20the%20hot%20brine%20over%20the%20ramps.%20Let%20cool,%20then%20refrigerate%20for%203%20days%20prior%20to%20use.%3C/p%3E){kind=link}
