%3C/p%3E%3Cp%3EPan-Fried%20Striped%20Bass%20with%20Pancetta%20and%20Parsley%3C/p%3E%3Cp%3EA%20few%20months%20ago,%20right%20around%20Valentine%E2%80%99s%20Day,%20one%20of%20my%20coworkers%20asked%20me%20for%20some%20advice%20on%20making%20paella,%20and%20if%20I%E2%80%99d%20mind%20lending%20him%20a%20cookbook%20with%20a%20recipe%20in%20it.%20That%20night%20found%20me%20pulling%20my%20various%20Spanish%20cookbooks%20and%20reviewing%20the%20paella%20recipes%20contained%20therein;%20I%20wanted%20to%20give%20him%20one%20that%20was%20authentic%20but%20presented%20in%20an%20accessible%20way.%20I%20ended%20up%20bringing%20in%20my%20copies%20of%20The%20Barcelona%20Cookbook%20and%20Made%20in%20Spain%20for%20him%20to%20peruse,%20and%20between%20the%20two%20he%20was%20able%20to%20cobble%20together%20a%20recipe%20that%20would%20work%20for%20him.%3C/p%3E%3Cp%3EMy%20point%20of%20this%20story?%20When%20I%20went%20and%20pulled%20all%20of%20those%20cookbooks%20off%20the%20shelves,%20I%20realized%20I%20had%20upwards%20of%20at%20least%20fifteen%20dedicated%20to%20Spanish%20and//or%20Catalonian%20cooking.%20And%20that%20only%20counts%20the%20books%20we%20keep%20downstairs%E2%80%93the%20less-often%20used%20go%20upstairs%20in%20our%20loft%20%E2%80%9Clibrary.%E2%80%9D%3C/p%3E%3Cp%3ECommon%20sense,%20recollection,%20and%20this%20blog%E2%80%99s%20archives%20tell%20me%20that%20I%20shouldn%E2%80%99t%20be%20so%20surprised%20by%20this,%20but%20I%20am%20all%20the%20same.%3C/p%3E%3Cp%3EThis%20dish%20comes%20from%20one%20of%20the%20very%20first%20Spanish%20cookbooks%20I%20ever%20bought,%20an%20impulse%20purchase%20while%20browsing%20the%20aisles%20at%20a%20Crate%20and%20Barrel.%20I%E2%80%99ve%20featured%20it%20here%20before%E2%80%93the%20Catalan%20meatball%20soup%20is%20a%20favorite%20of%20mine%E2%80%93but%20lately%20I%E2%80%99ll%20leave%20it%20be%20in%20favor%20of%20other%20books%20that%20have%20more%20refined%20or%20unique%20versions%20of%20the%20dishes%20contained%20in%20its%20pages.%20But%20two%20weekends%20ago%20I%20revisited%20it%20for%20the%20first%20time%20in%20months,%20and%20when%20I%20found%20a%20frightfully%20simple%20pan-fried%20trout%20recipe%20with%20bacon,%20I%20knew%20I%20had%20Wednesday%E2%80%99s%20dinner%20set.%3C/p%3E%3Cp%3EThere%E2%80%99s%20not%20much%20to%20it:%20take%20a%20cleaned%20whole%20fish%20(head%20and%20tail%20removed),%20and%20dust%20it%20with%20some%20seasoned%20flour.%20Then%20season%20the%20belly%20and%20stuff%20it%20with%20slivers%20of%20garlic.%20It%E2%80%99s%20fried%20in%20the%20rendered%20fat%20from%20some%20pancetta%20chunks,%20then%20removed%20and%20served%20with%20said%20cubes%20of%20pancetta,%20some%20parsley,%20and%20some%20wedges%20of%20lemon.%3C/p%3E%3Cp%3EServed%20with%20a%20big%20salad,%20the%20fish%20above%20was%20enough%20to%20satisfy%20both%20of%20us,%20even%20if%20one%20had%20just%20gotten%20home%20from%20a%20serious%20session%20at%20the%20gym.%3C/p%3E%3Cp%3EPan-Fried%20Striped%20Bass%3C/p%3E%3Cp%3Eadapted%20from%20Spanish%20Country%20Kitchen%3C/p%3E%3Cp%3EServes%202%3C/p%3E%3Cp%3EOne%20striped%20bass,%20fully%20dressed%20(head%20and%20tail%20removed,%20gutted,%20and%20scales%20removed)%3C/p%3E%3Cp%3EIn%20a%20small,%20non-stick%20pan,%20slowly%20cook%20the%20pancetta%20with%20a%20tablespoon%20or%20so%20of%20olive%20oil%20until%20the%20fat%20has%20rendered%20out%20and%20the%20pieces%20are%20crispy;%20drain,%20set%20aside,%20and%20keep%20the%20fat%20in%20the%20pan.%3C/p%3E%3Cp%3EPlace%20the%20flour%20onto%20a%20plate%20and%20season%20well%20with%20salt%20and%20pepper,%20and%20dust%20well%20on%20both%20sides.%20Season%20the%20belly%20of%20the%20fish%20with%20salt,%20and%20place%20the%20garlic%20slivers%20inside.%20Bring%20the%20pork%20fat%20in%20the%20pan%20up%20to%20medium%20heat,%20and%20carefully%20cook%20each%20side%20of%20the%20fish%20for%203%20minutes%20on%20each%20side.%20Bring%20the%20heat%20up%20to%20medium%20high,%20and%20cook%20each%20side%20again%20for%20an%20additional%20two%20minutes.%20Remove%20the%20fish,%20drain%20the%20fat,%20and%20quickly%20re-heat%20the%20pancetta%20until%20warm;%20top%20the%20fish%20with%20the%20pancetta%20and%20the%20parsley,%20and%20garnish%20with%20lemon%20wedges.%20Serve%20immediately.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
