.%3C/p%3E%3Cp%3EPizza%20alla%20Caprese%20con%20Mascarpone%20e%20Parmigiano%20Reggiano%3C/p%3E%3Cp%3EI%20have%20no%20idea%20as%20to%20how%20we%20pulled%20this%20off%20on%20TV.%3C/p%3E%3Cp%3E%E2%80%93Michael%20on%20our%20last%20demo%20on%20Connecticut%20Style,%20in%20which%20we%20successfully%20completed%20making%20a%20pizza%20on%20air.%3C/p%3E%3Cp%3EThere%E2%80%99s%20an%20easy%20reply%20to%20this%20observation,%20of%20course:%20climate%20control.%20Air%20conditioning%20is%20a%20delightful%20thing%20in%20a%20kitchen,%20but%20alas:%20our%20small%20New%20York%20kitchen%20does%20not%20have%20it.%20This%20means,%20of%20course,%20that%20certain%20culinary%20activities%20must%20be%20curtailed%20when%20the%20humidity%20is%20so%20bad%20it%20can%20take%20hours%20for%20wet%20hair%20to%20dry%20after%20a%20shower,%20and%20this%20escapade%20a%20few%20weeks%20ago%20proved%20that%20to%20a%20fault.%20The%20smoke%20alarm,%20while%20a%20constant%20companion%20in%20our%20kitchen%20when%20the%20oven%20is%20on%20at%20full%20blast%20on%20a%20good%20day,%20was%20freaking%20out%20because%20we%20kept%20spilling%20cornmeal%20and%20rosemary%20onto%20the%20floor%20of%20our%20gas%20oven%20and%20things%20got%20a%20little%20smoky.%3C/p%3E%3Cp%3EWe%20needed%20the%20cornmeal%20because%20as%20silky%20and%20wonderful%20as%20my%20dough%20turned%20out,%20by%20the%20time%20it%20came%20to%20transferring%20the%20first%20pie%20(a%20combination%20of%20leeks%20and%20rosemary)%20from%20the%20peel%20to%20the%20sheet%20pan%20in%20the%20oven,%20it%20refused%20to%20come%20off%20of%20the%20peel.%20It%20was%20more%20recalcitrant%20than%20a%20cow%20and%20while%20it%20ended%20up%20on%20the%20pan%20eventually,%20it%20did%20so%20in%20a%20strange%20blob%20and%20scattered%20some%20rosemary%20needles%20on%20the%20oven%20floor.%20Not%20wanting%20a%20repeat%20performance%20of%20this%20we%20had%20to%20leave%20the%20damn%20oven%20door%20open%20(another%20surefire%20way%20to%20set%20the%20smoke%20alarm%20off,%20by%20the%20way)%20and%20the%20two%20of%20us%20had%20to%20coax%20off%20the%20second%20pie%20using%20fingers,%20spatulas%20and%20the%20like.%20This%20was%20moderately%20more%20successful%20as%20we%20didn%E2%80%99t%20lose%20any%20toppings%20this%20time%20around,%20only%20spilling%20some%20corn%20grits.%3C/p%3E%3Cp%3EBy%20the%20by:%20we%20normally%20make%20caprese%20pizza%20with%20fresh%20mozzarella,%20but%20considering%20that%20we%20had%20leftover%20mascarpone%20in%20the%20fridge%20to%20use%20up%20we%20spread%20a%20thin%20layer%20of%20that%20on%20the%20dough%20and%20topped%20it%20all%20with%20some%20Parmigiano-Reggiano,%20and%20it%20was%20absolutely%20fantastic.%20I%20strongly%20urge%20you%20to%20try%20it.%3C/p%3E%3Cp%3EProsciutto%20di%20Parma,%20Cremini%20Mushroom%20and%20Cacio%20Roma%20Pizza%3C/p%3E%3Cp%3EIt%E2%80%99s%20a%20shame%20that%20our%20pizza-making%20has%20to%20go%20on%20hold%20for%20the%20time%20being,%20because%20both%20the%20caprese%20pizza%20as%20well%20as%20the%20one%20above%20ended%20up%20being%20combinations%20that%20we%20really%20enjoyed.%20We%20were%20in%20the%20mood%20for%20a%20meat%20pizza,%20but%20I%20was%20not%20feeling%20sausage%20because%20I%20didn%E2%80%99t%20want%20something%20that%20greasy.%20We%20had%20some%20prosciutto%20di%20San%20Daniele%20in%20the%20fridge%20that%20ended%20up%20working%20perfectly:%20paired%20with%20cremini%20mushrooms%20and%20Cacio%20di%20Roma%20cheese%20(my%20new%20favorite%20when%20I%20need%20a%20mild,%20melting%20cheese),%20we%20got%20the%20meaty%20taste%20we%20were%20seeking%20without%20it%20being%20too%20heavy%20either%20on%20the%20peel%20or%20on%20our%20palates.%3C/p%3E%3Cp%3EThe%20trick%20here%20is%20not%20laying%20the%20prosciutto%20on%20the%20pie%20when%20it%20first%20goes%20into%20the%20oven%20because%20it%20will%20become%20too%20crispy.%20Adding%20it%20halfway%20through%20though%20will%20warm%20it%20up%20nicely%20and%20mesh%20well%20with%20the%20mushrooms%20and%20cheese.%3C/p%3E%3Cp%3EJust%20try%20to%20avoid%20making%20this%20on%20a%20really%20humid%20day%20to%20avoid%20any%20potential%20fire%20hazards/pizza%20fails.%20A%20tiny%20bit%20of%20sauce%20is%20OK%20here%20too,%20but%20I%20would%20throw%20the%20dough%20into%20the%20oven%20for%20a%20blond%20bake%20beforehand%20for%20about%205-8%20minutes%20so%20it%20can%20withstand%20the%20added%20weight.%3C/p%3E%3Cp%3ECome%20to%20think%20of%20it%E2%80%93that%E2%80%99s%20what%20we%20should%20have%20done%20for%20some%20of%20these%20pizzas%20in%20the%20first%20place.%20Oh%20well%E2%80%93c%E2%80%99est%20la%20vie.%20They%20were%20still%20delicious.%3C/p%3E%3Cp%3EMushroom%20and%20Proscuitto%20di%20San%20Daniele%20Pizza%3C/p%3E%3Cp%3EServes%202%3C/p%3E%3Cp%3E1/2%20pizza%20dough%20recipe%3C/p%3E%3Cp%3ESet%20oven%20to%20bake%20at%20the%20highest%20temperature%20you%20can.%20Sprinkle%20either%20an%20upside-down%20baking%20sheet%20or%20a%20pizza%20peel%20with%20cornmeal,%20and%20gently%20stretch%20out%20the%20dough%20to%20fit%20the%20peel/pan.%3C/p%3E%3Cp%3ELayer%20on%20the%20cheese%20(not%20too%20much%20or%20the%20dough%20will%20be%20weighed%20down)%20and%20then%20the%20mushrooms,%20transfer%20pie%20to%20pan%20in%20oven/move%20pan%20into%20oven%20and%20bake%20for%20about%206%20minutes.%20Open%20oven%20and%20carefully%20layer%20on%20slices%20of%20prosciutto,%20then%20resume%20baking%20for%20another%206%20minutes.%20Carefully%20remove%20pie%20from%20oven,%20let%20cool,%20and%20then%20cut%20to%20serve.%3C/p%3E){kind=link}
