%3C/p%3E%3Cp%3EPeach,%20Prosciutto%20di%20Parma%20and%20Goat%20Cheese%20Crostini%3C/p%3E%3Cp%3EConfession%20time:%20I%20am%20not%20a%20fan%20of%20melon.%20Any%20melon.%20Watermelon%20especially.%20I%20can%E2%80%99t%20quite%20explain%20it%E2%80%93I%20otherwise%20adore%20fruit,%20but%20melons%20just%20have%20a%20taste,%20texture%20and%20smell%20that%20are%20off%20to%20me.%20I%20still%20remember%20the%20first%20time%20I%20tried%20it%E2%80%93I%20was%20all%20of%20eight%20or%20nine%20years%20old%20and%3C/p%3E%3Cp%3Eit%20was%20my%20first%20trip%20to%20Rehoboth%20Beach,%20and%20my%20parents%20had%20taken%20us%20to%20a%20random%20restaurant%20for%20breakfast,%20likely%20chosen%20because%20it%20had%20a%20buffet%20and%20therefore%20would%20please%20both%20my%20brother%20and%20me.%20I%20piled%20some%20watermelon%20and%20honeydew%20on%20my%20plate%20because%20my%20mom%20though%20I%E2%80%99d%20like%20it,%20and%20when%20I%20took%20that%20first%20bite%20I%E2%80%A6did%20not%20enjoy%20it%20at%20all.%20Since%20then%20I%E2%80%99ve%20never%20developed%20the%20taste%20for%20it,%20and%20to%20be%20honest%20the%20smell%20of%20watermelon%20to%20this%20day%20makes%20me%20a%20little%20ill.%3C/p%3E%3Cp%3ENeedless%20to%20say:%20the%20classic%20Italian%20pairing%20of%20prosciutto%20with%20melon%20has%20never%20been%20something%20I%E2%80%99ve%20had%20much%20interest%20in,%20much%20less%20tasted.%20Then%20I%20saw%20Angharad%E2%80%99s%20post%20on%20pairing%20peaches%20with%20prosciutto%20over%20at%20Eating%20for%20England%20and%20I%20was%20immediately%20intrigued.%3C/p%3E%3Cp%3EPeach,%20Prosciutto%20di%20Parma%20and%20Goat%20Cheese%20Crostini%3C/p%3E%3Cp%3EDoes%20this%20ever%20work:%20the%20slices%20of%20peach%20are%20just%20sweet%20and%20juicy%20enough%20to%20play%20nicely%20in%20the%20sandbox%20with%20the%20ham,%20and%20using%20a%20mild%20goat%20cheese%20keeps%20the%20bite%20light%20and%20creamy.%20If%20you%20want%20more%20sweetness%20you%20can%20drizzle%20some%20honey%20over%20the%20slices%20like%20Angharad%20did,%20but%20personally%20I%20have%20more%20of%20a%20salt%20tooth%20than%20a%20sweet%20one,%20so%20I%20rubbed%20some%20garlic%20on%20the%20toasted%20bread%20to%20make%20it%20more%20savory.%3C/p%3E%3Cp%3EEither%20way:%20run,%20don%E2%80%99t%20walk%20to%20you%20local%20market%20and%20get%20the%20ingredients%20to%20make%20this%20since%20peaches%20are%20at%20their%20peak%20right%20now,%20and%20you%E2%80%99ll%20forget%20that%20prosciutto%20with%20melon%20was%20ever%20a%20thing%20in%20the%20first%20place.%20An%20added%20bonus:%20no%20need%20to%20break%20out%20the%20melon%20baller.%3C/p%3E%3Cp%3EPeach,%20Prosciutto%20di%20Parma%20and%20Goat%20Cheese%20Crostini%3C/p%3E%3Cp%3Eadapted%20from%20Eating%20for%20England%3C/p%3E%3Cp%3E12%20slices%20of%20bread%20from%20a%20thin%20baguette,%20about%20half%20an%20inch%20to%203/4%E2%80%B3%20thick%3C/p%3E%3Cp%3E1-2%20peeled%20garlic%20cloves%3C/p%3E%3Cp%3EGoat%20cheese%20(I%20like%20Charvie%E2%80%99s%205.3%20oz%20pyramid%20because%20it%E2%80%99s%20so%20easy%20to%20spread;%20if%20using%20a%20regular%20log%20make%20sure%20you%20let%20it%20come%20to%20room%20temperature%20before%20using)%3C/p%3E%3Cp%3EArrange%20slices%20of%20bread%20on%20a%20pan%20and%20broil%20until%20just%20golden%20brown,%20which%20should%20take%20no%20longer%20than%20five%20minutes%20(and%20likely%20shorter%20depending%20on%20how%20well%20your%20broiler%20works).%20Remove%20from%20oven%20and%20let%20cool%20slightly;%20when%20they%20are%20still%20warm%20but%20easier%20to%20grasp%20rub%20the%20garlic%20clove%20over%20the%20toasted%20side%20of%20all%20of%20the%20slices.%20Spread%20a%20thin%20layer%20of%20goat%20cheese%20on%20each%20slice,%20then%20a%20little%20piece%20of%20the%20prosciutto,%20and%20finally%20the%20peach.%20Arrange%20on%20a%20serving%20platter%20and%20serve%20immediately.%3C/p%3E){kind=link}
