%3C/p%3E%3Cp%3ECopper%20River%20Sockeye%20Salmon%20with%20Mojo%20Sauce%3C/p%3E%3Cp%3EHeat%20waves%20are%20awesome,%20aren%E2%80%99t%20they?%20They%20sap%20your%20energy%20completely,%20make%20venturing%20outside%20after%208AM%20and%20before%208PM%20a%20dangerous%20proposition,%20and%E2%80%93if%20you%E2%80%99re%20anything%20like%20me%E2%80%93a%20big%20ol%E2%80%99%20sweaty%20mess.%20I%20literally%20walked%20across%20the%20river%20from%20my%20office%20to%20go%20to%20the%20farmers%20market%20on%20Thursday%20at%20lunch%20(at%20most%20six-tenths%20of%20a%20mile)%20and%20came%20back%20drenched.%20And%20very%20flushed%20(from%20exertion,%20not%20from%20sun%20thankfully).%20The%20trains%20didn%E2%80%99t%20fare%20much%20better%E2%80%93Friday%20afternoon%20three%20(!)%20trains%20coming%20from%20New%20Haven%20got%20tangled%20up%20in%20wires%20because%20of%20the%20heat,%20so%20I%20had%20to%20drive%20myself%20home%20because%20they%20suspended%20service%20around%205:00.%3C/p%3E%3Cp%3EAt%20least%20I%20wasn%E2%80%99t%20one%20of%20the%20poor%20people%20who%20were%20trapped%20on%20those%20trains.%3C/p%3E%3Cp%3EMango-Pluot%20Gazpacho%3C/p%3E%3Cp%3ESo%20the%20weekend%20left%20us%20both%20a%20little%20sapped%20of%20energy.%20Like%20we%20had%20just%20enough%20to%20squeeze%20in%20trips%20to%20Fairway%20and%20workouts%20and%20that%20was%20it.%20It%20felt%20like%20the%20hardest%20thing%20in%20the%20world%20to%20decide%20what%20to%20make%20for%20dinner%20since%20nothing%20looked%20particularly%20good%20because%20my%20cravings%20ran%20away%20and%20hid%20from%20the%20heat.%20But%20Michael%20found%20a%20recipe%20in%20a%20tapas%20cookbook%20I%20bought%20at%20an%20A.C.%20Moore%20years%20ago%20(yeah,%20that%20makes%20no%20sense%20to%20me%20either),%20and%20then%20I%20had%20five%20books%20on%20the%20couch%20next%20to%20me,%20determined%20to%20figure%20out%20the%20rest%20of%20the%20menu.%20Finding%20a%20simple%20chicken%20wing%20recipe%20in%20The%20Book%20of%20Tapas%20and%20an%20even%20simpler%20mango%20gazpacho%20in%20Viva%20la%20Vida%20provided%20enough%20food%20to%20eat,%20but%20not%20so%20much%20to%20feel%20overly%20stuffed.%3C/p%3E%3Cp%3EWhat%20was%20really%20great%20about%20this%20menu%20was%20how%20little%20we%20had%20to%20actually%20get%20for%20it;%20in%20fact,%20the%20mango%20gazpacho%20(originally%20with%20peach,%20but%20changed%20to%20pluot%20when%20the%20peaches%20I%20got%20were%20inedible,%20mealy%20messes)%20required%20the%20most%20shopping.%20It%20also%20took%20the%20least%20time%20to%20assemble:%20slice%20and%20dice%20a%20mango%20(with%20no%20skin),%20and%20then%20slice%20and%20dice%20a%20pluot%20and%20add%20to%20a%20bowl%20with%20mango%20nectar,%20a%20chiffonade%20of%20mint%20leaves,%20a%20hint%20of%20rice%20vinegar,%20and%20a%20solid%20cup%20of%20dry%20white%20wine.%3C/p%3E%3Cp%3EMango-Pluot%20Gazpacho%3C/p%3E%3Cp%3EWhy%20yes,%20it%20was%20as%20delicious%20as%20it%20sounds.%20And%20hopefully%20looks.%3C/p%3E%3Cp%3ELemon-Garlic%20Chicken%20Wings%3C/p%3E%3Cp%3EThe%20fish%20and%20chicken%20too%20a%20little%20more%20effort,%20but%20only%20moderately%20so%E2%80%93the%20chicken%20wings%20were%20a%20simple%20%20combination%20of%20lemon,%20garlic,%20white%20wine,%20olive%20oil,%20and%20parsley.%20The%20mojo%20for%20the%20salmon%20was%20garlic,%20olive%20oil,%20cumin%20and%20pimenton%20de%20la%20vera,%20and%20the%20salmon%20was%20simply%20gently%20browned%20on%20all%20sides%20and%20doused%20in%20the%20stuff.%3C/p%3E%3Cp%3ELemon-Garlic%20Chicken%20Wings%3C/p%3E%3Cp%3EFor%20a%20meal%20in%20the%20midst%20of%20a%20heatwave,%20it%20worked%20out%20rather%20well.%20Even%20clean-up%20required%20minimal%20effort%20by%20yours%20truly.%3C/p%3E%3Cp%3EMango-Pluot%20Gazpacho%3C/p%3E%3Cp%3Eadapted%20from%20Viva%20la%20Vida%3C/p%3E%3Cp%3EFor%20the%20Mojo%20sauce:%20grind%20the%20garlic,%20paprika%20and%20cumin%20in%20the%20bowl%20of%20a%20food%20processor%20or%20stick%20blender.%20Slowly%20add%20the%20olive%20oil%20and%20then%20the%20vinegar%20in%20steady%20streams%20until%20sauce%20is%20thickened.%20Season%20with%20a%20little%20salt%20if%20needed.%3C/p%3E%3Cp%3EFor%20the%20salmon:%20remove%20the%20skin%20and%20any%20pinbones%20and%20cut%20fillet%20in%20half%20and%20then%20for%203/4-inch-thick%20pieces,%20aiming%20for%20nugget-sizes.%20Season%20fish%20with%20salt%20and%20pepper.%20Heat%20olive%20oil%20in%20a%20large,%20heavy-bottom%20skillet,%20and%20when%20hot%20add%20the%20salmon%20and%20cook%20for%20about%2010%20minutes%20until%20all%20sides%20are%20browned.%20Remove%20to%20serving%20dish%20and%20add%20some%20Mojo%20sauce%20and%20serve%20immediately%20with%20additional%20sauce%20served%20on%20the%20side%20for%20dipping.%20Garnish%20with%20parsley.%3C/p%3E){kind=link}
