%3C/p%3E%3Cp%3ETomato,%20Tarragon%20and%20Parmigiano-Reggiano%20Pizza%3C/p%3E%3Cp%3EWhat%20is%20the%20appeal%20of%20making%20pizza%20at%20home?%20I%20mean,%20you%20have%20to%20make%20the%20dough,%20pray%20that%20the%20humidity%20is%20in%20your%20favor%20to%20ensure%20that%20it%20is%20elastic%20enough%20(but%20not%20too%20elastic)%20and%20also%20pray%20that%20the%20pizza%20will%20make%20it%20in%20one%20piece%20from%20the%20peel%20to%20the%20oven,%20regardless%20of%20the%20amount%20of%20cornmeal%20spread%20on%20the%20peel%20to%20help%20the%20process%20along.%20Yes,%20there%20are%20many%20things%20conspiring%20against%20you%20when%20you%20attempt%20to%20make%20pizza%20in%20the%20summertime,%20but%20one%20key%20advantage%20has%20you%20coming%20back%20to%20through%20more%20dough%20down%20every%20time:%20the%20power%20of%20custom%20toppings.Homemade%20pizza%20becomes%20a%20blank%20canvas%20for%20me%20to%20test%20flavor%20combinations%20that%20seem%20like%20they%E2%80%99d%20be%20natural%20partners%20but%20I%E2%80%99d%20yet%20to%20try%20out%E2%80%93and%20the%20latest%20of%20these%20was%20tomato%20and%20tarragon.%20I%20love%20tarragon;%20in%20fact,%20it%E2%80%99s%20one%20of%20my%20favorite%20herbs%20because%20I%E2%80%99m%20a%20sucker%20for%20anything%20tasting%20of%20licorice,%20and%20when%20I%20read%20recently%20that%20tomatoes%20and%20tarragon%20make%20for%20a%20classic%20pairing%20I%20was%20intent%20on%20giving%20it%20a%20try.%20It%20ended%20up%20being%20the%20perfect%20starting%20pizza%20for%20Michael%20and%20I,%20because%20he%20wanted%20one%20that%20wasn%E2%80%99t%20heavy%20on%20the%20cheese.%20A%20simple%20sauce%20made%20from%20San%20Marzano%20tomatoes,%20garlic%20and%20salt%20went%20on%20the%20pie%20first%20and%20sprinkled%20with%20a%20little%20Parmigiano-Reggiano%20cheese,%20and%20then%20with%20only%20a%20few%20minutes%20remaining%20on%20the%20baking%20process%20the%20oven%20was%20opened%20and%20the%20remainder%20was%20tossed%20on,%20along%20with%20a%20heavy%20sprinkling%20of%20tarragon.%3C/p%3E%3Cp%3EGoat%20Cheese,%20Salami%20and%20Roasted%20Red%20Pepper%20Pizza%3C/p%3E%3Cp%3EAs%20for%20the%20second%20pie%E2%80%A6well,%20I%20have%20to%20say%20that%20Michael%20and%20I%20almost%20came%20to%20verbal%20blows%20when%20he%20saw%20what%20I%20had%20purchased%20from%20the%20deli%20at%20Fairway.%20As%20is%20likely%20the%20case%20across%20the%20country,%20the%20Fairway%20deli%20case%20is%20notoriously%20busy%20on%20Sundays,%20and%20waiting%20ten%20minutes%20while%20other%20customers%20load%20up%20on%20cold%20cuts%20and%20potato%20salads%20is%20a%20necessary%20evil.%20I%E2%80%99m%20usually%20the%20one%20stuck%20waiting%20while%20Michael%20breezes%20through%20the%20cold%20room%20to%20pick%20up%20meat,%20seafood%20and%20dairy,%20and%20the%20longer%20I%20wait%20the%20more%20intrigued%20I%20become%20by%20unknown%20salami%20logs%20covered%20in%20that%20familiar%20white%20mold.%20I%20bought%20one%20made%20in%20Piemonte%20that%20was%20in%20part%20made%20with%20Barolo%20(because%20how%20can%20that%20NOT%20be%20good?)%20and%20when%20I%20proudly%20showed%20Michael%20my%20find%E2%80%A6he%20was%20not%20pleased.%20He%20was%20expecting%20some%20nice%20salami%20from%20Genoa,%20not%20this%20hard,%20dried-out%20log%20that%20was%20not%20easy%20to%20slice%20and%20even%20less%20easier%20to%20bite%20into%20on%20the%20finished%20product%E2%80%A6but%20so%20it%20goes.%3C/p%3E%3Cp%3E(The%20biggest%20question%20that%20arose%20was%20to%20blonde-bake%20the%20dough;%20we%20normally%20don%E2%80%99t%20take%20that%20step,%20but%20I%20think%20if%20you%E2%80%99re%20going%20to%20bake%20the%20pizza%20in%20the%20midst%20of%20summer,%20it%E2%80%99s%20almost%20mandatory%20to%20do%20so.%20It%20will%20definitely%20make%20the%20topping-heavy%20pizza%20transition%20to%20the%20oven%20much%20easier,%20that%E2%80%99s%20for%20sure.)%3C/p%3E%3Cp%3EAnd%20trust%20that%20there%20was%20no%20grumpiness%20present%20at%20the%20dinner%20table%20when%20we%20dove%20into%20this%20delightful%20pie.%3C/p%3E%3Cp%3EGoat%20Cheese,%20Salami%20and%20Roasted%20Red%20Pepper%20Pizza%3C/p%3E%3Cp%3EServes%202%3C/p%3E%3Cp%3E1/2%20quantity%20of%20pizza%20dough%3C/p%3E%3Cp%3E1%20link%20of%20dried%20Italian%20salami,%20sliced.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20be%20ready%20to%20broil.%20Stem%20and%20seed%20the%20red%20pepper%20and%20then%20quarter%20it.%20Arrange%20the%20quarters%20on%20a%20baking%20sheet%20lined%20with%20foil%20and%20roast%20for%20about%205-7%20minutes,%20keeping%20an%20eye%20on%20the%20pepper%20slices%20at%20all%20times.%20When%20the%20skin%20is%20blackened,%20removed%20from%20the%20oven%20and%20place%20into%20a%20covered%20bowl%20to%20steam;%20when%20cooler,%20remove%20skins%20and%20slice%20into%20strips.%3C/p%3E%3Cp%3EWhen%20the%20pepper%20is%20done,%20change%20the%20oven%20to%20bake%20but%20maintain%20the%20high%20temperature%20to%20bake%20the%20pizza.%3C/p%3E%3Cp%3EStretch%20the%20dough%20as%20you%20normally%20would%20onto%20a%20pizza%20peel,%20transfer%20to%20the%20oven%20and%20bake%20for%20about%206%20minutes%20to%20get%20a%20nice%20blonde-bake%20on%20the%20pizza%20(note:%20this%20is%20particularly%20helpful%20in%20the%20summer%20and/or%20if%20you%20want%20to%20use%20sauces,%20because%20you%20create%20a%20solid%20base%20for%20the%20toppings%20to%20sit%20upon)%20and%20remove%20to%20add%20the%20toppings.%20Add%20the%20cheese,%20peppers%20and%20salami%20to%20the%20pizza,%20return%20to%20the%20oven%20and%20bake%20for%20another%206%20minutes%20or%20until%20the%20cheese%20is%20melted.%20Let%20rest%20for%20a%20few%20minutes%20after%20the%20pizza%20is%20removed%20from%20the%20oven%20and%20then%20slice%20and%20serve.%3C/p%3E){kind=link}
