%3C/p%3E%3Cp%3ESquid%20with%20Burst%20Tomatoes%3C/p%3E%3Cp%3ELast%20week%20was%20not%20particularly%20enjoyable:%20besides%20being%20grey%20and%20kind%20of%20cold%20for%20August,%20a%20succession%20of%20events%20left%20me%20feeling%20pretty%20damn%20defeated%20by%20the%20end%20of%20the%20week.%20In%20an%20effort%20to%20boost%20our%20spirits%20halfway%20through,%20I%20did%20what%20I%20usually%20do%20when%20in%20need%20of%20some%20self-care:%20I%20poked%20around%20on%20the%20internet%20for%20some%20recipe%20ideas.%20I%20didn%E2%80%99t%20need%20to%20look%20for%20that%20long,%20as%20a%20fellow%20blogger%20had%20that%20day%20posted%20a%20recipe%20from%20Tom%20Colicchio%20for%20a%20salad%20of%20squid%20with%20burst%20tomatoes%20from%20the%20latest%20Food%20+%20Wine.%3C/p%3E%3Cp%3EMichael%20was%20all%20for%20it%20when%20I%20sent%20him%20the%20link.%20But%20to%20be%20completely%20honest,%20I%20kind%20of%20didn%E2%80%99t%20care%20at%20that%20point,%20because%20in%20my%20mind%20I%20was%20determined%20to%20make%20it.%20(Given%20his%20love%20of%20squid,%20I%20really%20didn%E2%80%99t%20think%20this%20would%20be%20much%20of%20a%20hard%20sell%20in%20any%20case.)%3C/p%3E%3Cp%3EThere%20isn%E2%80%99t%20much%20to%20this%20dish,%20aside%20from%20chopping%20garlic,%20slicing%20squid,%20and%20plucking%20about%20a%20cup%E2%80%99s%20worth%20of%20basil%20leaves.%20The%20tomatoes%20you%20leave%20whole,%20as%20they%20will%20slowly%20cook%20with%20the%20garlic%20in%20the%20oil%20and%20begin%20to%20fall%20apart,%20and%20then%20the%20squid%20follows%20and%20cooks%20for%20another%20five%20minutes.%20Michael%20expressed%20some%20concern%20that%20the%20heat%20needed%20to%20go%20up%20to%20avoid%20it%20turning%20tough,%20but%20honestly,%20it%20really%20didn%E2%80%99t:%20the%20squid%20was%20perfectly%20tender%20when%20served.%20Chef%20Colicchio%20finishes%20the%20dish%20with%20the%20basil%20and%20some%20white%20wine%20vinegar,%20but%20I%20was%20in%20the%20mood%20for%20a%20splash%20of%20white%20wine%20instead.%20I%20also%20upped%20the%20garlic%20amount%20specified%20because%20it%E2%80%99s%20what%20I%20like.%3C/p%3E%3Cp%3EOn%20its%20own,%20it%E2%80%99s%20spectacular,%20but%20I%20think%20it%20would%20make%20an%20excellent%20summer%20pasta%20sauce%20if%20you%20were%20so%20inclined.%3C/p%3E%3Cp%3EAdd%20the%20olive%20oil%20to%20a%20large,%20heavy%20skillet%20and%20bring%20the%20olive%20oil%20to%20moderate%20heat.%20Add%20the%20garlic%20and%20tomatoes,%20and%20cook%20for%20about%204%20minutes%20or%20until%20they%20begin%20to%20burst.%20Add%20the%20squid%20and%20cook%20over%20moderately%20low%20heat%20for%20an%20additional%205%20minutes.%20Add%20the%20white%20wine%20and%20cook%20for%20another%20minute%20or%20so,%20and%20then%20stir%20in%20the%20basil.%20Season%20well%20with%20salt%20and%20pepper%20and%20serve%20immediately.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
