.%3C/p%3E%3Cp%3EPasta%20e%20Fagioli,%20a%20la%20minuto%20di%20New%20York%20(or,%20Pasta%20and%20Beans,%20New%20York%20Minute%20Style)%3C/p%3E%3Cp%3EA%20few%20days%20ago,%20over%20lunch%20with%20some%20of%20my%20colleagues,%20the%20conversation%20took%20a%20turn%20to%20cooking%20at%20home%20(and%20I%20swear%20I%20didn%E2%80%99t%20bring%20it%20up)%20and%20it%20was%20generally%20acknowledged%20by%20the%20group%20that%20while%20cooking%20at%20home%20is%20fantastic,%20it%E2%80%99s%20very%20difficult%20to%20keep%20up%20with%20during%20the%20week%20after%20a%20long%20day%20at%20work.%20Given%20that%20I%20have%20the%20fortunate%20situation%20of%20being%20able%20to%20come%20home%20to%20dinner%20most%20nights%20thanks%20to%20Michael%20having%20a%20non-commute%20(a%20walk%20the%20length%20of%20one%20iPod%20song%20does%20not%20a%20real%20commute%20make),%20I%20kept%20my%20mouth%20shut%20lest%20I%20come%20across%20as%20braggy%20at%20all.%3C/p%3E%3Cp%3EBesides%E2%80%93this%20would%20then%20lead%20me%20to%20explain%20that%20I%20spend%20three%20hours%20each%20day%20on%20public%20transportation,%20and%20really,%20there%E2%80%99s%20no%20need%20to%20start%20moaning%20on%20who%20has%20the%20worst%20commute,%20right?%3C/p%3E%3Cp%3EWell,%20I%E2%80%99m%20not%20sure%20if%20my%20silence%20went%20for%20or%20against%20me%20that%20day,%20because%20later%20when%20I%20called%20Michael%20to%20let%20him%20know%20that%20circumstances%20would%20have%20me%20coming%20home%20much%20earlier%20than%20my%20normal%207:00-ish%20time,%20he%20challenged%20me%20to%20take%20over%20the%20reigns%20for%20dinner,%20promising%20that%20I%20could%20make%20anything%20I%20wanted:%3C/p%3E%3Cp%3EAnything?%20I%20asked,%20curious%20to%20how%20uninterested%20in%20cooking%20he%20actually%20was.%3C/p%3E%3Cp%3EYes,%20anything,%20him%20probably%20thinking%20that%20I%20would%20do%20some%20sort%20of%20pasta%20dish.%20It%E2%80%99s%20all%20on%20you.%3C/p%3E%3Cp%3EDo%20we%20have%20pancetta?%20I%20asked,%20wheels%20whirring%20in%20my%20head.%3C/p%3E%3Cp%3ENo,%20but%20you%20can%20get%20some%20if%20you%20want.%3C/p%3E%3Cp%3EWell%20then!%20I%20took%20that%20express%20from%20White%20Plains%20back%20into%20Harlem-125th,%20promptly(!)%20boarded%20a%20M60%20and%20took%20myself%20down%20to%20Westside%20Market%20to%20pick%20up%20the%20few%20provisions%20I%20needed%20for%20pasta%20e%20fagioli,%20which%20was%20the%20dish%20that%20had%20firmly%20implanted%20itself%20in%20my%20cravings%20as%20well%20as%20in%20my%20mind.%20Maybe%20it%20seems%20counter-intuitive%20to%20make%20soup%20on%20a%20rather%20hot%20day,%20but%20knowing%20that%20we%20both%20had%20enjoyed%20larger-than-normal%20lunches,%20this%20would%20be%20an%20ideal%20light%20meal%20to%20enjoy%20on%20our%20last%20night%20in%20prior%20to%20heading%20down%20to%20Pennsylvania%20for%20a%20long%20weekend.%3C/p%3E%3Cp%3EMore%20importantly,%20it%20only%20took%20a%20little%20more%20than%20an%20hour%20to%20assemble%E2%80%93and%20that%20includes%20transit%20to%20and%20from%20the%20market,%20a%20quick%20stop%20at%20the%20wine%20shop,%20prep%20time%20and%20cook%20time.%20Perhaps%20it%20wasn%E2%80%99t%20as%20quick%20as%20the%20typical%20pre-made%20meal%20that%20many%20at%20Westside%20were%20queueing%20to%20purchase,%20but%20I%20can%20tell%20you%20that%20I%20was%20in%20and%20out%20of%20the%20store%20much%20faster%20than%20any%20of%20the%20people%20with%20a%20takeaway%20carton%20in%20hand.%3C/p%3E%3Cp%3EThis%20is%20in%20part%20based%20on%20a%20Giada%20DeLaurentiis%20recipe%20that%20I%20made%20many%20alterations%20to%E2%80%93in%20particular%20the%20addition%20of%20red%20wine.%20It%20was%20part%20out%20of%20necessity%20(I%20only%20had%20one%20carton%20of%20stock%20on%20hand)%20but%20I%20realized%20in%20other%20soups%20that%20the%20wine%20adds%20some%20nice%20body%20and%20depth%20of%20flavor%20that%20pairs%20well%20with%20the%20pancetta%20and%20the%20cheese%20and%20the%20beans,%20and%20the%20water%20balanced%20the%20aromatics%20of%20the%20wine%20and%20the%20saltiness%20of%20the%20broth.%20Served%20with%20a%20roll%20or%20two%20of%20fresh%20bread,%20and%20you%E2%80%99ve%20got%20a%20dinner%20that%20can%20be%20assembled%20relatively%20quickly%20whether%20you%20have%20a%20well-stocked%20pantry%20or%20you%20have%20to%20dash%20to%20the%20store.%3C/p%3E%3Cp%3EPasta%20e%20Fagioli%20a%20la%20minuto%20di%20New%20York%3C/p%3E%3Cp%3EServes%202%20with%20leftovers%3C/p%3E%3Cp%3EIn%20a%20heavy-bottomed%20pan%20over%20medium%20heat,%20warm%20the%20olive%20oil%20and%20butter%20together.%20Add%20the%20onions,%20and%20garlic%20and%20cook%20for%20about%202%20minutes,%20then%20add%20the%20pancetta%20and%20rosemary%20and%20cook%20for%20another%203%20minutes.%20Add%20the%20broth,%20beans,%20parmesan%20rind%20(if%20using),%20wine%20and%20water;%20cover,%20bringing%20the%20pot%20to%20a%20boil%20over%20high%20heat%20and%20then%20letting%20it%20simmer%20for%2010%20minutes%20or%20so%20on%20medium%20heat.%20If%20desired,%20discard%20the%20rosemary%20sprigs%20now%20(I%20just%20let%20them%20sit%20in%20there,%20though%20discarding%20would%20likely%20be%20a%20better%20idea).%20Add%20the%20ditalini%20and%20bring%20the%20soup%20back%20to%20a%20boil%20to%20let%20the%20pasta%20cook%20until%20al%20dente,%20or%20about%208-9%20minutes.%20Season%20soup%20with%20pepper%20or%20grains%20of%20paradise%20(our%20preferred%20mode%20of%20spice).%3C/p%3E%3Cp%3ELadle%20soup%20into%20bowls,%20sprinkle%20Parmigiano-Reggiano%20on%20top%20if%20not%20using%20the%20rind,%20and%20serve!%3C/p%3E%3Cp%3EBuon%20apetito!%3C/p%3E){kind=link}
