%3C/p%3E%3Cp%3EBegun%20-%20Brinjal%20/%20Aubergine%20/%20Eggplant%3C/p%3E%3Cp%3EBhaja%20-%20fry%20/%20deep%20fried%3C/p%3E%3Cp%3EMakha%20-%20Mixed%20together%20or%20...%20as%20in%20here%20...%20mashed%20up%20together.%3C/p%3E%3Cp%3EI%20finally%20made%20it%20to%20my%20200th%20post!%3C/p%3E%3Cp%3EI%20know%20...%20much%20as%20I%20want%20to,%20I%20have%20not%20been%20giving%20my%20blog%20enough%20time.%20I%20do%20not%20post%20as%20much%20as%20I%20should.%3C/p%3E%3Cp%3EAnd%20on%20the%20top%20of%20it,%20instead%20of%20cooking%20and%20posting%20exotic%20and%20dfifferent%20recipes,%20I%20go%20ahead%20and%20post%20something%20as%20common%20as%20dal%20&%20rice.%3C/p%3E%3Cp%3EBut%20then,%20this%20is%20my%20favourite%20dish!%20And%20I%20have%20to%20have%20it%20in%20my%20blog!%20I%20love%20this%20simple%20meal%20so%20much%20that%20I%20celebrated%20my%20b'day%20this%20year%20with%20this%20meal%20...%20instead%20of%20going%20out.%3C/p%3E%3Cp%3ESo%20my%20blog%20should%20have%20it%20too.%20:-)%3C/p%3E%3Cp%3EFirst,%20the%20Dal.%3C/p%3E%3Cp%3EI%20have%20taken%20the%20Mushur%20/%20Mushurir%20/%20Masoor%20dal%20/%20Red%20Lentils%20here.%20Cooked%20with%20the%20Paanch%20Phoron,%20this%20dal%20gets%20an%20unique%20flavour.%3C/p%3E%3Cp%3EIdeally%20in%20Bengali%20homes,%20dals%20are%20cooked%20or%20boiled%20first%20and%20then%20tempered%20seperately.%20I%20cook%20directly%20in%20the%20pressure%20cooker%20along%20with%20the%20tempering.%20Saves%20time%20&%20energy.%3C/p%3E%3Cp%3ENeed%20:%3C/p%3E%3Cp%3EHow%20to%20:%3C/p%3E%3Cp%3EWash%20the%20dal%20and%20keep%20aside.%3C/p%3E%3Cp%3EHeat%20oil%20in%20a%20pressure%20cooker.%3C/p%3E%3Cp%3EAdd%20the%20paanch%20phoron%20and%20the%20chilles.%3C/p%3E%3Cp%3EAdd%20the%20sliced%20onion%20and%20fry%20well%20till%20onion%20is%20partly%20cooked%20and%20starts%20to%20brown.%3C/p%3E%3Cp%3EAdd%20the%20dal,%20haldi%20powder%20and%20salt.%20Stir%20well.%3C/p%3E%3Cp%3EAdd%20water,%20cover%20and%20set%20on%20low%20heat.%3C/p%3E%3Cp%3EAfter%202%20whistles,%20switch%20off%20heat.%3C/p%3E%3Cp%3ERemove%20cover%20only%20after%20the%20pressure%20cooker%20has%20cooled.%3C/p%3E%3Cp%3EServe%20hot.%3C/p%3E%3Cp%3ESecond,%20the%20Aloo%20Bhaate.%3C/p%3E%3Cp%3EOr%20the%20Aloo%20Chokha%20..%20as%20it%20is%20known%20in%20certain%20parts%20of%20the%20country.%3C/p%3E%3Cp%3ESince%20the%20rice%20usually%20used%20in%20the%20homes%20of%20Bengal%20takes%20a%20long%20while%20to%20cook%20...%20and%20it%20is%20usually%20cooked%20in%20an%20open%20vessel%20and%20drained%20of%20the%20starch%20water,%20many%20a%20time%20vegetables%20would%20be%20thrown%20in%20to%20get%20cooked%20along%20with%20it.%20This%20way%20there%20was%20no%20need%20to%20boil%20the%20vegetables%20seperately.%20Potatoes%20are%20one%20vegetable%20that%20would%20be%20cooked%20regularly%20this%20way%20..%20though%20other%20boiled%20vegetables%20taste%20wonderfully%20good%20when%20had%20hot%20out%20of%20the%20rice.%3C/p%3E%3Cp%3EBut%20I%20usually%20pressure%20cook%20the%20poatoes%20or%20run%20them%20in%20the%20MW%20Oven.%3C/p%3E%3Cp%3ENeed%20:%3C/p%3E%3Cp%3EPotatoes%3C/p%3E%3Cp%3EWater%3C/p%3E%3Cp%3EGreen%20chillies%3C/p%3E%3Cp%3EMustard%20oil%3C/p%3E%3Cp%3ESalt%20to%20taste%3C/p%3E%3Cp%3EChopped%20oinions%3C/p%3E%3Cp%3EHow%20to%20:%3C/p%3E%3Cp%3ETo%20boil%20the%20potatoes%20:%3C/p%3E%3Cp%3EWash%20the%20potatoes%20well.%20Prick%20them%20with%20a%20fork%20all%20over%20or%20make%20a%20slight%20cut%20in%20each%20of%20them.%3C/p%3E%3Cp%3ETake%20some%20water%20in%20a%20pressure%20cooker%20and%20add%20the%20potatoes%20(%20they%20should%20be%20submerged%20in%20the%20water%20).%3C/p%3E%3Cp%3EClose%20cover%20and%20set%20to%20cook%20on%20low%20heat%20till%20around%204%20to%205%20whistles.%3C/p%3E%3Cp%3ERemove%20cover%20after%20cooker%20has%20cooled.%3C/p%3E%3Cp%3EAlternatively,%20you%20can%20take%20the%20potatoes%20in%20MW%20safe%20bowl%20and%20run%20them%20at%2060%20%25%20for%205%20mins.%3C/p%3E%3Cp%3ERemove%20potatoes%20and%20peel%20them.%3C/p%3E%3Cp%3EMash%20them%20together%20with%20salt,%20mustard%20oil%20,%20chopped%20onions%20and%20crushed%20fresh%20green%20chillies.%20Remember%20to%20crush%20them%20...%20no%20chopping%20allowed.%3C/p%3E%3Cp%3E(If%20you%20do%20not%20like%20the%20flavour%20of%20raw%20mustard%20oil,%20you%20can%20use%20ghee%20...%20just%20give%20the%20onions%20a%20skip).%3C/p%3E%3Cp%3EThis%20is%20wonderful%20when%20hot,%20but%20is%20equally%20tasty%20when%20eaten%20at%20room%20temperature%20too.%3C/p%3E%3Cp%3EIf%20you%20at%20all%20have%20some%20of%20the%20makha%20left,%20you%20an%20make%20aloo%20tikkis%20out%20of%20it%20...%20only%20remember%20to%20remove%20the%20big%20pieces%20of%20green%20chillies.%3C/p%3E%3Cp%3EThird%20,%20the%20Begun%20Bhaja.%3C/p%3E%3Cp%3EBegun%20bhaja%20or%20fried%20Brinjal%20slices%20are%20a%20very%20common%20as%20well%20as%20favourite%20accompaniment%20to%20any%20Bengali%20meal.%20A%20favourite%20combination%20with%20the%20Khichuri%20or%20Luchi%20/%20Puris,%20they%20are%20enjoyed%20best%20right%20out%20of%20the%20wok,%20crisp%20and%20piping%20hot.%3C/p%3E%3Cp%3EIf%20you%20are%20health%20concious,%20you%20can%20grill%20it%20on%20a%20flat%20open%20pan%20too%20...%20like%20I%20usually%20do.%20But%20once%20in%20a%20while,%20it%20is%20ok%20to%20indulge%20in%20some%20deep%20fried%20Begun%20bhaja%20...%20especiall%20if%20it%20is%20raining%20outside%20and%20you%20have%20a%20plateful%20of%20smoking%20hot%20khichuri%20in%20front%20of%20you.%3C/p%3E%3Cp%3ENeed%20:%3C/p%3E%3Cp%3EFresh%20Brinjals%20/%20Eggplants%20/%20Aubergines,%20cut%20into%20thick%20roundels%20(%20just%20make%20sure%20the%20brinjals%20do%20not%20have%20too%20much%20of%20seeds%20in%20them%20)%3C/p%3E%3Cp%3ESalt%3C/p%3E%3Cp%3EMustard%20oil%20to%20deep%20fry%3C/p%3E%3Cp%3EA%20little%20Turmeric%20/%20haldi%20powder%3C/p%3E%3Cp%3EHow%20to%20:%3C/p%3E%3Cp%3EApply%20salt%20and%20turmeric%20to%20the%20brinjals%20and%20keep%20aside.%3C/p%3E%3Cp%3EHeat%20enough%20mustard%20oil%20to%20deep%20fry%20in%20a%20heavy%20kadahi%20or%20wok%20...%20preferrable%20of%20cast%20iron%20...%20but%20never%20of%20steel.%3C/p%3E%3Cp%3ESlowly%20let%20in%20the%20brinjal%20pieces%20carefully%20...%20they%20might%20splutter%20(%20holding%20a%20big%20sized%20cover%20helps).%3C/p%3E%3Cp%3ELet%20them%20cook%20till%20one%20side%20truns%20golden%20brown.%3C/p%3E%3Cp%3ETurn%20them%20over%20carefully%20and%20brown%20the%20other%20side%20too.%3C/p%3E%3Cp%3ESometimes%20they%20need%20to%20be%20covered%20to%20cook%20well%20...%20depends%20on%20the%20kind%20of%20brinjal%20you%20get.%3C/p%3E%3Cp%3ERemove%20and%20drain%20on%20a%20paper%20towel%20of%20extra%20oil.%3C/p%3E%3Cp%3EServe%20hot.%3C/p%3E%3Cp%3EHere's%20a%20plateful.%3C/p%3E%3Cp%3EAnd%20here's%20how%20I%20like%20to%20have%20it%20....%3C/p%3E%3Cp%3E...%20Makha!%3C/p%3E%3Cp%3EAll%20mashed%20up%20together.%20:-)%3C/p%3E%3Cp%3EIf%20you%20have%20been%20patient%20enough%20and%20have%20reached%20here%20finally%20...%20I'll%20tell%20you%20the%20reason%20why%20I%20love%20it%20so%20much.%3C/p%3E%3Cp%3EMy%20Mom%20used%20to%20mash%20everything%20up%20this%20way%20and%20feed%20me%20while%20I%20used%20to%20hurriedly%20get%20ready%20for%20classes.%3C/p%3E%3Cp%3EAnd%20the%20love%20for%20that%20taste%20...%20and%20the%20memories%20...%20remain.%20Every%20mouthful%20would%20have%20a%20combination%20of%20flavours%20...%20mild%20dal%20with%20sharp%20brinjal%20fry%20and%20some%20aloo%20with%20crunchy%20onions%20and%20sometimes%20the%20sharp%20heat%20of%20a%20piece%20of%20green%20chilli.%20:-)%3C/p%3E%3Cp%3EWho%20wants%20a%20spoonful%20of%20home?%20:-)%3C/p%3E%3Cp%3EI'll%20be%20around%20henceforth%20folks.%3C/p%3E%3Cp%3ETake%20care%20all%20!%3C/p%3E){kind=link}
