,%20so%20we%20swapped%20books%20and%20I%20read%20through%20her%20copy%20of%20Cooking%20Made%20Easy.%20Whilst%20most%20of%20the%20recipes%20were%20pretty%20simple,%20as%20if%20the%20title%20didn't%20already%20give%20you%20an%20idea,%20I%20stumbled%20upon%20her%2021st%20century%20Cheese,%20Ham%20and%20Chive%20bread%20and%20the%20mind%20started%20scheming%20as%20to%20how%20much%20time%20I%20had%20before%20I%20had%20to%20start%20work..%3C/p%3E%3Cp%3EI%20love%20the%20taste%20of%20home-made%20bread,%20but%20combining%20shift%20work,%20cooking%20mostly%20for%20one%20and%20a%20weakness%20for%20anything%20freshly%20baked%20means%20that%20home-made%20bread%20is%20rarely%20on%20the%20menu%20chez%20Anne%E2%80%99s%20Kitchen.%20However%20what%20instantly%20grabbed%20me%20was%20the%20use%20of%20self-raising%20flour%20%E2%80%93%20no%20yeast%20to%20rise%20the%20bread,%20therefore%20no%20rising%20time%20either!%20Within%20an%20hour%20of%20leaving%20my%20friends%20house%20I%20had%20two%20of%20the%20loaves%20nearly%20cooked%20in%20the%20oven,%20and%20believe%20me%20I%20am%20not%20exactly%20speedy%20freak%20in%20the%20kitchen!%20It%20pretty%20is%20much%20mix%20and%20stir%20and%20bake,%20you%20really%20can%E2%80%99t%20mess%20it%20up!%3C/p%3E%3Cp%3EDue%20to%20what%20I%20had%20to%20hand%20at%20the%20time,%20the%20cheese%20got%20substituted%20for%20some%20vegan%20soya%20based%20cheese%20I%20was%20trialling,%20I%20omitted%20the%20ham%20and%20also%20the%20spring%20onions,%20one%20thing%20I%20did%20add%20thought%20was%20a%20good%20sprinkle%20of%20some%20chilli%20sea%20salt%20I%20bought%20recently%20on%20impulse%20%E2%80%93%20this%20was%20so%20made%20for%20topping%20bread!%20Little%20spicy,%20salty%20crystals%20that%20burst%20in%20your%20mouth,%20yum!%3C/p%3E%3Cp%3EThe%20bread%20itself%20was%20pretty%20impressive%20for%20something%20so%20quick.%20Naturally%20due%20to%20the%20missing%20yeast%20element,%20its%20more%20spongy%20like%20in%20texture%20and%20a%20little%20heavier%20than%20compared%20to%20a%20white%20loaf%20but%20is%20definitely%20going%20to%20become%20a%20regular%20feature,%20purely%20for%20the%20ease%20if%20anything%20and%20also%20that%20undeniable%20self%20smugness%20of%20having%20home-made%20bread!%3C/p%3E%3Cp%3EI%20think%20the%20original%20quantities%20would%20make%20a%20fairly%20large%20beast%20but%20I%20split%20my%20finished%20dough%20in%20two,%20and%20baked%20two%20smaller%20loaves,%20stashing%20the%20spare%20into%20the%20icy%20depths%20of%20the%20freezer%20until%20girlfriend%20came%20over%20and%20we,%20er,%20devoured%20the%20whole%20thing%20in%20one%20sitting,%20but%20we%20did%20eat%20it%20with%20smoked%20mackerel%20salad%20and%20enough%20pickles%20to%20almost%20deter%20her%20soon%20to%20be%20husband,%20so%20was%20fairly%20balanced%20on%20the%20grand%20scheme%20of%20things!%3C/p%3E%3Cp%3EIngredients%20for%20my%20version:%3C/p%3E%3Cp%3EPre-heat%20oven%20to%20200o/%20gas%206%3C/p%3E%3Cp%3EMix%20the%20dry%20ingredients%20and%20the%20basil%20in%20a%20bowl,%20saving%20a%20small%20handful%20of%20the%20cheese.%20Stir%20in%20200ml%20of%20the%20water,%20adding%20extra%20if%20needed%20to%20form%20a%20dough,%20use%20your%20hands%20to%20knead%20together%20until%20smooth.%3C/p%3E%3Cp%3EShape%20into%20one%20large,%20or%20two%20small%20rounds,%20place%20on%20a%20baking%20tray%20lined%20with%20parchment%20paper%20and%20flatten%20slightly.%20Score%20the%20tops%20if%20you%20remember.%20Sprinkle%20over%20the%20remaining%20cheese%20and%20a%20pinch%20of%20your%20spicy%20sea%20salt.%20Quickly%20squirt%20(or%20throw%20a%20cupful)%20of%20water%20into%20the%20bottom%20of%20the%20oven%20to%20create%20steam%20and%20bake%20for%20approx.%2035%20minutes,%20or%20until%20sounds%20hollow%20when%20tapped%20on%20its%20bottom%20and%20your%20bread%20is%20lovely%20and%20golden%20in%20colour.%3C/p%3E%3Cp%3EAllow%20to%20cool%20a%20little%20before%20grabbing%20the%20butter%20and%20your%20bread%20knife.%3C/p%3E){kind=link}
