%20%20What%20to%20do,%20what%20to%20do?%20%20Saut%C3%A9ed%20squash%20all%20by%20itself%20didn%E2%80%99t%20seem%20like%20enough.%20%20Turning%20the%20oven%20on%20seemed%20like%20a%20waste%20of%20time%20and%20energy.%20%20Should%20we%20eat%20it%20raw?%20%20No%20thank%20you,%20too%20sad.%20%20So,%20with%20thoughts%20of%20the%20Great%20Depression%20and%20stone%20soup%20on%20my%20mind,%20I%20got%20out%20my%20biggest%20pot.%3C/p%3E%3Cp%3EFirst,%20I%20chose%20a%20large%20onion%20from%20the%20bunch%20and%20chopped%20it%20up.%20%20Knowing%20that%20all%20good%20things%20start%20with%20an%20onion%20sweating%20in%20a%20pan,%20I%20threw%20them%20into%20the%20pot%20with%20a%20heaping%20tablespoon%20of%20olive%20oil.%20%20Next,%20a%20clove%20of%20garlic.%20%20Once%20the%20onions%20started%20to%20soften%20up,%20I%20threw%20in%20all%20the%20squash%20I%20had%20(about%202%20lbs,%20chopped%20into%20manageable%20chunks).%20%20I%20cooked%20the%20squash%20with%20the%20onions%20and%20garlic%20for%20longer%20than%20I%20normally%20would%20when%20making%20soup.%20%20Since%20I%20didn%E2%80%99t%20have%20vegetable%20stock%20on%20hand,%20I%20didn%E2%80%99t%20want%20to%20have%20to%20boil%20too%20long%20with%20plain%20old%20water.%20%20So,%20I%20cooked%20the%20squash%20until%20it%20was%20nice%20and%20soft,%20letting%20everything%20get%20a%20tiny%20bit%20of%20brown%20color%20even.%20%20Finally,%20I%20poured%20in%20enough%20water%20to%20just%20cover%20the%20squash/onion%20mixture.%20%20I%20added%20salt%20and%20pepper,%20covered%20it%20all,%20and%20let%20it%20boil%20for%20about%2010%20minutes.%20%20I%20took%20it%20off%20the%20heat,%20and%20busted%20out%20the%20immersion%20blender.%20%20I%20added%202%20tsp%20of%20dry%20thyme%20to%20give%20the%20soup%20some%20sort%20of%20point%20of%20view,%20and%20I%20finished%20it%20off%20with%20a%20little%20more%20olive%20oil%20(about%20a%20tablespoon)%20to%20make%20it%20smooth%20and%20creamy%20without%20the%20cream.%3C/p%3E%3Cp%3EIt%20was%20great.%20%20We%20ate%20every%20bit.%20%20Necessity%20is%20the%20mother%20of%20invention,%20as%20is%20poverty%20sometimes.%20%20It%20probably%20cost%20about%203%20bucks%20to%20make,%20total.%20%20Thank%20god,%20because%20sometimes%203%20bucks%20is%20all%20we%20have.%20%20I%E2%80%99d%20be%20willing%20to%20bet%20you%20could%20make%20soup%20out%20of%20anything%20this%20way.%20%20Water,%20onion,%20and%20a%20little%20ingenuity.%20%20Ah,%20Recession%20Soup,%20food%20for%20the%20starving%20wallet.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E){kind=link}
