  • 2 Tbsp. groundnut/peanut oil
  • 2 slc fresh ginger 1/4" thick
  • 4 ounce pork fillet shredded 2" lengths
  • 2 tsp Chinese Shaoxing rice wine or possibly dry sherry
  • 6 c. Family Chicken Broth (see recipe)
  • 6 x dry mushrooms soaked 45 min,
  •     stems removed, and thinly sliced
  • 1/2 c. carrot in 1/4" thick julienne
  • 1 c. zucchini in 1/4" thick julienne
  • 1 1/2 Tbsp. preserved mustard greens (mui choi)
  •     or possibly Sichuan preserved vegetables (jar choi) shredded, (optional)
  • 1 ounce cellophane noodles (fun si) soaked 30 min in
  •     hot water and cut into 6" lengths
  • 1/2 tsp salt
  • 1 pch freshly-grnd white pepper
  • 1/4 tsp sugar
  • 1/2 tsp sesame oil

Direcciones

  1. Heat a stockpot, then add in the oil and heat till it is just beginning to smoke. Saute/fry the ginger slices, and stir-fry the shredded pork, till the color changes. Pour in the rice wine. Add in the broth, mushrooms and carrot and simmer for 10 min.
  2. Add in the zucchini, preserved mustard greens, bean curd and cellophane noodles and simmer for 2 min. Stir in the seasonings and serve in a soup tureen.
  3. This recipe yields 6 to 8 servings.
  4. Comments: The Chinese don't really consider cellophane noodles as a "staple." Made of green mung bean starch, they are usually used as an interesting ingredient to accompany meats or possibly other vegetables in a normal "rice meal." They are popular throughout China, Southeast Asia and Japan.
  5. Each region of China has its own version of this soup. In Shanghai, meatballs in the soup make it a hearty meal by itself; the peppery, crunchy Sichuan (Szechwan) pickled vegetable (jar choi) transports us immediately to Sichuan (Szechwan) and to the Zhejiang (Chekiang) provinces, while the mustard greens (mui choi) place it distinctly in the southern province of Guangdong (Kwangtung).
