.%20We%20had%20a%20friend%20joining%20us%20so%20I%20tried%20to%20have%20dinner%20ready%20by%205%20pm%20but%20as%20always%20I%20was%20a%20off%20by%20an%20hour.%20I%20assumed%20that%20the%20stores%20were%20closed%20because%20of%20the%20holiday,%20so%20I%20had%20to%20throw%20a%20nice%20dinner%20together%20with%20the%20left%20overs%20from%20the%20week.%3C/p%3E%3Cp%3EI%20was%20a%20bit%20perplexed%20when%20I%20saw%20that%20my%20roast%20was%20wearing%20this%20elastic%20girdle%20but%20quickly%20figured%20out%20that%20it%20was%20a%20clever%20way%20to%20%22tie%22%20the%20roast.%20I%20studded%20the%20roast%20with%20garlic%20and%20lemon%20before%20coating%20it%20in%20salt%20&%20rosemary%20which%20infused%20a%20lot%20of%20flavor%20throughout%20the%20meat.%20I%20was%20happy%20that%20I%20got%20the%20roast%20on%20the%20right%20side%20of%20med-%20rare/%20med%20line%20and%20everyone%20was%20happy.%20I%20added%20a%20side%20of%20raspberry%20chipotle%20maple%20glazed%20carrots,%20asparagus%20wrapped%20in%20bacon%20and%20finally%20a%20baked%20potato%20(simple%20but%20delicious!).%20I%20also%20served%20a%20small%20salad%20to%20start%20-%20mixed%20greens%20salad%20topped%20with%20pear%20and%20cheese%20(pictured%20above).%3C/p%3E%3Cp%3E6)%20place%20pan%20in%20350%20F%20oven%20for%2090%20-100%20min%20(until%20145%20F)%20and%20let%20sit%20for%2010-15%20min%20to%20rest%20before%20carving.%3C/p%3E%3Cp%3E7)%20to%20make%20a%20pan%20gravy%20by%20add%20some%20Wondra%20flour%20and%20herbs%20to%20the%20juices%20left%20in%20the%20pan%20and%20reduce%20till%20thick.%3C/p%3E){kind=link}
