Ingredientes

  • 9 large eggs
  • 3 c. oil
  • 3/4 c. water
  • 6 c. sugar
  • 2 T vanilla
  • 2 T cinnamon
  • 1 T ginger
  • 1 T cardamom; optional
  • 9 c. shredded zucchini
  • 2 c. raisins
  • 1 c. mixed, candied fruit; optional
  • 9 c. flour, some whole wheat
  • 1 T salt
  • 1 T baking soda
  • 3/4 T baking pwdr
  • 1 c. minced nuts, pecan or possibly walnut
  • 1 c. oatmeal, uncooked
  • 1 c. Grape Nuts cereal

Direcciones

  1. Mix first 7 ingredients together in a large bowl.2. Fold in the remaining ingredients (if you have a food processor, chop/shred the zucchini, skin too, in which).
  2. Divide equally into 4 greased/floured pans (loaf pans).
  3. Bake at 350 degrees for 1 hour, 325 degrees if glass loaf pan.
  4. Cool 1 hour, remove from pan.
  5. These freeze very well.
