Receta 4 Loaves Of Zucchini Bread

Ingredientes
- 9 large eggs
- 3 c. oil
- 3/4 c. water
- 6 c. sugar
- 2 T vanilla
- 2 T cinnamon
- 1 T ginger
- 1 T cardamom; optional
- 9 c. shredded zucchini
- 2 c. raisins
- 1 c. mixed, candied fruit; optional
- 9 c. flour, some whole wheat
- 1 T salt
- 1 T baking soda
- 3/4 T baking pwdr
- 1 c. minced nuts, pecan or possibly walnut
- 1 c. oatmeal, uncooked
- 1 c. Grape Nuts cereal
Direcciones
- 1. Mix first 7 ingredients together in a large bowl.2. Fold in the remaining ingredients (if you have a food processor, chop/shred the zucchini, skin too, in which).
- 3. Divide equally into 4 greased/floured pans (loaf pans).
- 4. Bake at 350 degrees for 1 hour, 325 degrees if glass loaf pan.
- 5. Cool 1 hour, remove from pan.
- 6. These freeze very well.
