%20No-Fat%20Banana%20Muffins%3C/p%3E%3Cp%3ESo%20a%20recent%20visit%20to%20the%20doctor%20ended%20in%20me%20being%20told%20I%20have%20a%20difficult-to-manage%20digestive%20issue...%20Well,%20that%20sounds%20fun!%20And%20when%20he%20said%20%22difficult-to-manage%22%20he%20wasn't%20joking:%20no%20dairy,%20no%20red%20meat,%20no%20egg%20yolk,%20less%20sugar,%20less%20fat,%20no%20alcohol,%20no%20carbonated%20beverages,%20minimal%20raw%20fruits%20and%20veggies...%20I%20will%20stop%20there%20as%20not%20to%20bore%20you.%20Based%20on%20that%20you%20can%20imagine%20the%20difficulty%20I%20am%20having%20in%20the%20kitchen,%20both%20with%20cooking%20and%20baking.%20I%20have%20a%20pretty%20good%20handle%20on%20the%20cooking%20side%20of%20things,%20finding%20new%20ways%20to%20dress%20up%20chicken%20and%20potatoes,%20but%20I%20am%20still%20struggling%20with%20the%20baking%20-%20I%20mean%20really,%20no%20butter%20and%20no%20egg%20yolks?!?!?!%3C/p%3E%3Cp%3EThis%20recipe%20is%20my%20first%20attempt%20at%20something%20safe%20for%20me,%20and%20I%20gotta%20say%20I%20wasn't%20super%20pleased,%20but%20wasn't%20super%20disappointed%20either.%20The%20muffins%20have%20a%20toughness%20to%20them,%20but%20it%20is%20almost%20forgiven%20due%20to%20the%20intense%20banana%20flavour....%20You%20be%20the%20judge!%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3ESteps%3C/p%3E%3Cp%3E-Preheat%20oven%20to%20350%C2%B0F%20and%20line%2012%20muffin%20cups.%3C/p%3E%3Cp%3E-Stir%20together%20dry%20ingredients.%3C/p%3E%3Cp%3E-In%20another%20bowl,%20mix%20together%20wet%20ingredients.%20I%20left%20some%20small%20chunks%20of%20banana%20in%20my%20mixture%20and%20it%20was%20very%20nice%20in%20the%20end%20product.%3C/p%3E%3Cp%3E-Add%20wet%20ingredients%20to%20dry%20mixture%20and%20stir%20just%20until%20combined.%3C/p%3E%3Cp%3E-Divide%20between%2012%20muffins%20cups.%3C/p%3E%3Cp%3E-Bake%20for%2020-25%20minutes.%3C/p%3E){kind=link}
