%20Strawberry%20Squares%3C/p%3E%3Cp%3EHello%20again%20everyone!%20The%20summer%20months%20sure%20are%20flying%20by,%20aren't%20they?%20Its%20hard%20to%20believe%20that%20in%20just%204%20days%20I%20will%20be%20a%20married%20woman!!!%20Gonna%20be%20a%20good%20weekend%20:)%3C/p%3E%3Cp%3EBut%20enough%20about%20that%20and%20let's%20get%20talking%20about%20that%20dessert.%20(I%20have%20to%20apologize%20for%20the%20quality%20of%20the%20pic...%20I%20had%20to%20do%20it%20myself%20and,%20well,%20my%20skills%20stop%20at%20the%20kitchen%20:p)%3C/p%3E%3Cp%3EI%20came%20home%20to%20my%20parents'%20a%20few%20days%20ago%20and%20one%20of%20the%20first%20things%20we%20did%20was%20go%20to%20a%20U-Pick%20for%20some%20fresh%20strawberries.%20We%20left%20the%20field%20with%20almost%2020%20cups%20of%20strawberries!!!%20The%20very%20first%20thing%20my%20dad%20asked%20for%20was%20a%20pan%20of%20strawberry%20squares%20and%20I%20couldn't%20say%20no%20:)%20But%20if%20you%20follow%20along%20on%20this%20blog%20at%20all%20you%20know%20I%20avoid%20using%20any%20packages%20in%20my%20baking%20and%20prefer%20to%20do%20everything%20from%20scratch%20-%20and%20those%20strawberry%20squares%20have%20gelatin%20in%20them%20to%20keep%20them%20nice%20and%20firm%20once%20they%20cool.%20So%20I%20done%20a%20bit%20of%20googling%20to%20find%20a%20gelatin%20substitute%20and%20what%20I%20actually%20found%20out%20was%20what%20gelatin%20is%20made%20out%20-%20bones,%20hooves,%20and%20connective%20tissue!%20(I%20am%20done%20with%20anything%20jelly%20and%20jiggly)%20It%20was%20time%20to%20find%20another%20way%20to%20make%20these%20squares.%3C/p%3E%3Cp%3ESo%20I%20put%20myself%20to%20work%20in%20the%20kitchen%20and%20whipped%20up%20a%20nice%20syrup,%20added%20my%20berries,%20and%20thickened%20it%20all%20with%20some%20cornstarch%20and%20water,%20and%20with%20my%20fingers%20crossed%20I%20put%20the%20squares%20in%20the%20fridge%20and%20hoped%20for%20the%20best.%3C/p%3E%3Cp%3EAlthough%20they%20don't%20cut%20out%20with%20the%20same%20clean%20edges%20as%20the%20jelly%20version,%20they%20are%20so%20tasty%20and%20bone-free%20that%20my%20dad%20forgave%20me%20:)%20What%20do%20you%20think?%3C/p%3E%3Cp%3E-%20Bring%20sugar%20and%20water%20to%20a%20boil,%20stirring%20often.%3C/p%3E%3Cp%3E-%20Once%20it%20reaches%20a%20boil,%20reduce%20heat%20and%20let%20simmer%20for%2010%20minutes,%20stirring%20often.%3C/p%3E%3Cp%3E-%20Add%20berries%20and%20cook%20for%2010%20minutes,%20stirring%20often.%3C/p%3E%3Cp%3E-%20Mix%20cornstarch%20with%20enough%20water%20to%20make%20a%20liquid,%20not%20a%20paste.%20Add%20to%20berry%20mixture%20all%20at%20once%20and%20stir%20quickly.%3C/p%3E%3Cp%3E-%20Continue%20to%20cook%20for%205%20more%20minutes,%20stirring%20often.%3C/p%3E%3Cp%3E-%20Put%20a%20large%20sieve%20over%20a%20large%20bowl.%20Pour%20berry%20mixture%20through%20sieve.%20(This%20will%20separate%20the%20berries%20from%20the%20syrup%20and%20remove%20any%20lumps%20of%20the%20cornstarch%20mixture.%3C/p%3E%3Cp%3E-%20Let%20cool%20for%2030%20minutes.%3C/p%3E%3Cp%3EGraham%20Cracker%20Bottom%3C/p%3E%3Cp%3E2%201/2%20cups%20graham%20cracker%20crumbs%3C/p%3E%3Cp%3E1/2%20cup%20butter,%20melted%3C/p%3E%3Cp%3E1%20tsp%20cinnamon%3C/p%3E%3Cp%3E-%20Preheat%20oven%20to%20350F%20degrees.%3C/p%3E%3Cp%3E-%20Mix%20together%20all%20three%20ingredients%20and%20press%20into%20a%209X9%20glass%20baking%20dish.%3C/p%3E%3Cp%3E-%20Bake%20for%20about%2010%20minutes,%20or%20just%20until%20it%20starts%20to%20brown.%3C/p%3E%3Cp%3E-%20Remove%20from%20oven%20and%20set%20aside.%3C/p%3E%3Cp%3EChantilly%20Whipped%20Cream%3C/p%3E%3Cp%3E500%20ml%20whipping%20cream,%20cold%3C/p%3E%3Cp%3E1/2%20cup%20icing%20sugar%3C/p%3E%3Cp%3E1%20tsp%20vanilla%3C/p%3E%3Cp%3E-%20In%20a%20cold%20bowl%20with%20cold%20beaters,%20whip%20the%20cream%20until%20soft%20peaks%20form%20(it%20will%20take%20a%20while%20so%20don't%20give%20up!)%3C/p%3E%3Cp%3E-%20Add%20the%20icing%20sugar%20and%20vanilla%20and%20whip%20until%20stiff%20peaks%20form.%3C/p%3E%3Cp%3E-%20Keep%20cold%20until%20ready%20to%20use.%3C/p%3E%3Cp%3EAssembly%3C/p%3E%3Cp%3E-%20Place%20cooled%20strawberries%20from%20sieve%20on%20top%20of%20graham%20cracker%20bottom.%3C/p%3E%3Cp%3E-%20Pour%20enough%20syrup%20over%20the%20berries%20to%20cover.%20(The%20leftover%20syrup%20is%20excellent%20for%20crepes!!!!)%3C/p%3E%3Cp%3E-%20Let%20set%20in%20fridge%20until%20stiff.%3C/p%3E%3Cp%3E-%20Cover%20with%20whipped%20cream.%20(The%20leftover%20cream%20is%20excellent%20for%20crepes!!!!)%3C/p%3E%3Cp%3EStrawberry%3C/p%3E){kind=link}
