,%20bacon%20shows%20up%20in%20an%20average%20of%2013%25%20of%20all%20recipes%20in%20Paleo%20cookbooks.%20In%20my%20book,%20bacon%20shows%20up%20in%203%25%20of%20the%20recipes.%20That%E2%80%99s%20not%20a%20dig%20against%20bacon%20or%20the%20presence%20of%20bacon%20in%20other%20cookbooks.%20It%E2%80%99s%20more%20of%20a%20way%20to%20highlight%20the%20diversity%20you%E2%80%99ll%20find%20in%20The%20Ancestral%20Table.%3C/p%3E%3Cp%3EGiang%20shooting%20Shrimp%20Ceviche,%20Guacamole,%20and%20Tostones%3C/p%3E%3Cp%3E2.%20I%20didn%E2%80%99t%20do%20all%20of%20the%20photography%20on%20my%20own.%20One%20of%20my%20best%20friends,%20Giang%20Cao,%20flew%20out%20from%20London%20twice%20to%20help%20me%20shoot%20the%20majority%20of%20The%20Ancestral%20Table.%20We%20basically%20spent%20two%20different%20two-week%20periods%20cooking%20and%20shooting%20all%20day%20(8am%20to%20midnight,%20about%207%20dishes%20a%20day).%20We%20also%20timed%20his%20second%20trip%20so%20that%20he%20could%20come%20out%20and%20assist%20with%20our%20Baconpalooza%20win.%20Having%20a%20second%20set%20of%20eyes%20around%20during%20the%20shooting%20really%20helped,%20and%20Giang%E2%80%99s%20sense%20of%20style%20is%20always%20perfect.%20Most%20times%20we%20would%20each%20use%20our%20own%20cameras%20to%20shoot%20the%20same%20arrangement,%20and%20then%20pick%20the%20best%20photo%20out%20of%20the%20group.%3C/p%3E%3Cp%3EFunny%20story%20about%20how%20I%20met%20Giang:%20in%20a%20previous%20life%20(about%207%20years%20ago),%20I%20wrote%20for%20a%20small%20music/movie/videogame%20blog,%20which%20is%20now%20offline.%20Giang%20was%20one%20of%20the%20main%20commenters%20on%20the%20blog;%20he%20eventually%20became%20a%20writer%20for%20the%20blog%20and%20our%20relationship%20grew%20from%20there.%20If%20you%20want%20to%20see%20some%20of%20his%20work,%20here%20is%20his%20blog.%3C/p%3E%3Cp%3ECorned%20Beef%20Hash,%20Halva%3C/p%3E%3Cp%3E3.%20Some%20recipes%20didn%E2%80%99t%20make%20the%20cut.%20There%20were%20dozens%20that%20we%20eventually%20took%20off%20the%20list%20during%20the%20first%20few%20months%20of%20brainstorming,%20but%20others%20were%20last-minute%20removals,%20like%20the%20two%20you%20see%20above.%3C/p%3E%3Cp%3EThe%20Corned%20Beef%20Hash%20recipe%20was%20delicious,%20but%20I%20didn%E2%80%99t%20like%20the%20idea%20of%20expecting%20the%20reader%20to%20already%20have%20the%20leftover%20corned%20beef%20necessary%20for%20the%20recipe,%20without%20offering%20a%20corned%20beef%20recipe%20of%20my%20own.%20By%20the%20time%20I%20realized%20this,%20it%20was%20too%20late%20to%20corn%20some%20beef%20and%20shoot%20it%20for%20the%20book%20(we%20came%20to%20this%20conclusion%20only%20a%20couple%20of%20days%20before%20turning%20in%20the%20book).%3C/p%3E%3Cp%3EAnother%20recipe,%20Halva,%20simply%20didn%E2%80%99t%20turn%20out;%20true%20Halva%20has%20an%20airy%20consistency%20and%20is%20impossible%20to%20make%20without%20a%20special%20machine,%20and%20the%20Halva%20we%20were%20able%20to%20make%20wasn%E2%80%99t%20very%20true%20to%20what%20we%20had%20in%20mind.%3C/p%3E%3Cp%3EPictured:%20attempt%20%232%20and%20attempt%20%235%20(final%20attempt)%3C/p%3E%3Cp%3E4.%20It%20took%20five%20dedicated%20sessions%20(and%20dozens%20of%20pizzas)%20to%20finally%20nail%20the%20cover.%20Initially%20I%20was%20going%20to%20go%20with%20a%20stew%20for%20the%20cover,%20but%20after%20one%20session%20we%20realized%20that%20it%20wasn%E2%80%99t%20an%20ideal%20subject%20for%20a%20cookbook%20cover.%20Luckily%20the%20shot%20from%20that%20session%20still%20made%20it%20into%20the%20book%20(%E2%80%9CHearty%20Stew%E2%80%9D,%20page%20126).%20From%20there,%20we%20did%20four%20different%20pizza%20sessions%20before%20settling%20on%20the%20cover%20you%20see%20today.%3C/p%3E%3Cp%3EPictured:%20family%20prepping%20the%20Gnocchi,%20then%20me%20pretending%20to%20make%20the%20Gnocchi%20on%20my%20own%3C/p%3E%3Cp%3E5.%20This%20whole%20book%20was%20a%20family%20affair.%20Even%20though%20the%20book%20is%20written%20from%20a%20single%20person%E2%80%99s%20perspective,%20it%20was%20a%20group%20project.%20My%20wife%20Janey%20was%20instrumental%20in%20the%20planning%20and%20logistics%20of%20the%20book,%20and%20we%20involved%20our%20son%20Oliver%20as%20much%20as%20possible%20as%20well.%20Even%20at%20the%20age%20of%20four,%20he%20understood%20what%20we%20were%20working%20on%20and%20was%20happy%20to%20see%20the%20finished%20product.%3C/p%3E%3Cp%3EMy%20cousin%E2%80%99s%20house%20in%20Chevy%20Chase,%20MD.%3C/p%3E%3Cp%3E6.%20The%20Ancestral%20Table%20was%20shot%20in%20several%20homes.%20While%20most%20of%20the%20book%20was%20shot%20in%20front%20of%20the%20single%20window%20I%20use%20for%20all%20of%20my%20shots,%20other%20people%20graciously%20opened%20their%20homes%20to%20us%20so%20that%20we%20had%20more%20locations%20to%20work%20with.%20My%20cousin%20in%20Chevy%20Chase,%20MD%20hosted%20two%20sessions,%20and%20a%20friend%20in%20Annapolis,%20MD%20hosted%20another%20session.%20I%20should%20also%20confess%20that%20nearly%20every%20shot%20taken%20at%20my%20house%20was%20done%20while%20wearing%20pajama%20pants.%3C/p%3E%3Cp%3EYakitori,%20Beef%20Rendang%3C/p%3E%3Cp%3E7.%20The%20two%20most%20difficult%20dishes%20to%20photograph%20were%20Yakitori%20and%20Beef%20Rendang.%20These%20dishes%20seem%20simple%20enough,%20but%20we%20had%20a%20hard%20time%20with%20them.%20For%20example,%20we%20cooked%20and%20re-shot%20the%20Rendang%20at%20least%20four%20times%20(over%20the%20course%20of%20a%20year)%20to%20get%20it%20right.%3C/p%3E%3Cp%3ENew%20England%20Clam%20Bake%3C/p%3E%3Cp%3E8.%20We%20ate%20everything%20we%20cooked.%20Unlike%20many%20cookbooks,%20we%20didn%E2%80%99t%20do%20any%20styling%20beyond%20what%20came%20naturally%20from%20cooking%20and%20arranging%20the%20food.%20No%20blowtorches,%20hairsprays,%20or%20Scotch%20Guards%20were%20used.%20Nothing%20went%20to%20waste,%20and%20for%20the%20times%20that%20we%20needed%20to%20empty%20the%20fridge%20to%20make%20room%20for%20new%20groceries,%20I%20would%20drop%20food%20off%20at%20work%20for%20my%20co-workers%20to%20enjoy.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
