.%20This%20market%20has%20only%20been%20running%20for%20a%20year%20or%20so,%20and%20has%20attracted%20a%20couple%20of%20new%20meat%20producers%20recently.%20A%20while%20back%20I%20tried%20some%20lamb%20from%20Peradon%20Organic%20farm%20(http://www.peradonorganicfarm.co.uk/),%20which%20I%20made%20into%20Spit%20Roast%20Lamb%20and%20Wild%20Garlic%20Mash%20-%20unfortunately%20never%20got%20a%20chance%20to%20blog%20about%20that%20one.%20However%20last%20week%20I%20decided%20to%20plump%20for%20Beef%20instead%20from%20West%20Kidland%20farm%20(http://www.westkidland.co.uk/)-%20what%20what%20a%20piece%20of%20beef%20it%20was!%3C/p%3E%3Cp%3EAnyone%20who%20has%20read%20this%20blog%20before%20will%20know%20that%20I%20also%20have%20a%20weakness%20for%20Rib%20of%20Beef%20on%20the%20bone,%20so%20it's%20not%20really%20like%20me%20to%20choose%20Topside,%20but%20it%20looked%20like%20a%20lovely%20piece%20of%20meat%20and%20a%20bargain%20at%20%C2%A315%20for%202kg.%20It%20was%20very%20well%20hung%20too.%20I%20won't%20go%20into%20the%20way%20I%20cooked%20it%20this%20time,%20suffice%20to%20say%20that%20it%20was%20a%20pretty%20standard%20roast,%20that%20I%20served%20with%20a%20rather%20large%20yorkshire%20pudding,%20carrots,%20peas%20(in%20their%20pods)%20and%20new%20potatoes.%20Lovely%20stuff,%20which%20you%20can%20see%20on%20my%20Picasa%20food%20site%20if%20you're%20interested.%3C/p%3E%3Cp%3EBut%20what%20I%20really%20want%20to%20talk%20about%20is%20not%20the%20roast%20beef,%20it's%20what%20I%20did%20with%20the%20leftovers%20-%20Vitello%20Tonnato.%3C/p%3E%3Cp%3EVitello%20Tonnato%20aka%20Veal%20in%20Tuna%20Sauce%3C/p%3E%3Cp%3EOK,%20first%20things%20first,%20obviously%20I%20wasn't%20using%20veal.%20But%20you%20don't%20really%20need%20to,%20to%20be%20honest.%20We've%20done%20this%20before%20with%20not%20only%20beef,%20but%20also%20lamb%20and%20even%20chicken.%20What%20is%20it?%20Basically%20it's%20cold%20meat%20dressed%20with%20a%20tuna%20sauce.%20It's%20simplicity%20itself%20to%20make,%20but%20like%20all%20simple%20food%20if%20the%20right%20ingredients%20are%20combined%20in%20the%20correct%20way%20then%20a%20few%20simple%20things%20can%20be%20transformed%20into%20something%20much%20greater%20than%20the%20sum%20of%20their%20parts.%20It%20should%20also%20be%20done%20with%20mayonnaise%20to%20be%20truly%20original,%20but%20as%20we're%20expecting%20our%20first%20child%20at%20the%20moment%20raw%20eggs%20are%20off%20the%20menu,%20so%20we%20are%20tending%20to%20use%20creme%20fraiche%20instead%20and%20that%20works%20out%20pretty%20well.%3C/p%3E%3Cp%3EIngredients%20(for%20four%20hungry%20people)%3C/p%3E%3Cp%3ESauce:%3C/p%3E%3Cp%3E(doesn't%20really%20need%20seasoning)%3C/p%3E%3Cp%3EPreparation%3C/p%3E%3Cp%3EMix%20all%20the%20sauce%20ingredients%20together%20-%20easiest%20done%20in%20a%20blender%20if%20you%20have%20one.%3C/p%3E%3Cp%3ELayout%20beef%20on%20a%20serving%20platter,%20slightly%20overlapping.%3C/p%3E%3Cp%3EDress%20with%20a%20thickish%20layer%20of%20the%20sauce,%20then%20leave%20to%20come%20to%20room%20temperature.%3C/p%3E%3Cp%3EServe%20the%20platter%20in%20the%20centre%20of%20the%20table,%20and%20allow%20people%20to%20help%20themselves.%3C/p%3E%3Cp%3EAccompaniments%3C/p%3E%3Cp%3EBoiled%20potatoes%20work%20well,%20or%20saute%20(my%20preference)%20-%20again%20left%20over%20from%20the%20roast.%3C/p%3E%3Cp%3EA%20fresh%20green%20salad%20with%20cucumbers%20and%20tomatoes%20works%20well.%3C/p%3E%3Cp%3EIt's%20a%20fab%20dish%20for%20a%20hot%20summers%20day,%20and%20a%20very%20tasty%20way%20of%20using%20up%20leftover%20beef.%20I%20must%20admit%20I%20was%20a%20bit%20suspicious%20when%20the%20Italian%20first%20suggested%20this%20dish%20many%20years%20ago,%20but%20have%20enjoyed%20it%20many%20times%20since.%20I%20do%20urge%20you%20to%20give%20it%20a%20try,%20hopefully%20you'll%20be%20pleasantly%20surprised.%3C/p%3E){kind=link}
