%20except%20to%20say,%20%22I%20just%20need%20to%20go%20to%20bed,%20Mommy.%20I%20need%20to%20sleep%20and%20save%20my%20energy.%22%20Very%20odd%20considering%20that%20usually%20when%20we%20arrive%20at%20grandma%20and%20grandpa's%20she%20is%20usually%20a%20ball%20of%20energy%20and%20excitement%20with%20a%20to-do%20list%20a%20mile%20long%20(she%20is%20her%20mother's%20child!)%20Instead%20of%20running%20in%20for%20bear%20hugs%20and%20raiding%20grandma's%20pantry%20for%20her%20favorite%20snacks,%20she%20curled%20up%20on%20their%20sofa%20with%20the%20chills.%20Sure%20enough,%20she%20had%20a%20fever%20of%20102!%20A%20good%20dose%20of%20Motrin%20and%20she%20was%20off%20to%20bed%20where%20she%20stayed%20off%20and%20on%20for%20the%20whole%20weekend.%20Poor%20kid!%20My%20husband%20and%20I%20still%20managed%20to%20attend%204%20holiday%20parties%20over%20the%20weekend%20while%20she%20was%20under%20the%20careful%20care%20of%20grandma%20and%20grandpa.%3C/p%3E%3Cp%3EOn%20Saturday%20night,%20we%20celebrated%20my%20wonderful%20in-law's%2040th%20anniversary.%20I%20sound%20like%20I'm%20kissing%20up%20with%20words%20like%20%22wonderful%22...but%20they%20really%20are.%20They%20are%20caring,%20supportive%20parents%20to%20my%20husband%20and%20his%20siblings%20AND%20doting,%20involved%20grandparents%20to%20their%204%20grandchildren%20(ages%201-5%20years).%3C/p%3E%3Cp%3EWe%20planned%20the%20party%20as%20a%20kind%20of%20relaxed,%20holiday%20cocktail%20party%20where%20family%20and%20friends%20could%20get%20together%20and%20share%20good%20food,%20drinks,%20and%20of%20course,%20memories%20while%20celebrating%20the%20couple's%2040%20years%20together.%20A%20Christmas%20wedding,%20and%20consequently%20a%20Christmastime%2040th%20Anniversary%20lends%20itself%20to%20a%20beautiful,%20festive%20environment.%20That%20magic%20Christmas%20glow%20is%20cast%20over%20the%20celebration%20with%20the%20lights,%20music,%20decorations,%20food,%20and%20the%20whole%20spirit%20of%20the%20holiday.%20My%20mother-in-law%20still%20reminisces%20about%20how%20beautiful%20the%20church%20looked,%20all%20decorated%20for%20Christmas,%20on%20that%20December%20day%20in%201969.%3C/p%3E%3Cp%3EI%20decided%20that%20the%20perfect%20cake%20for%20the%20occasion%20was%20Red%20Velvet%20Cake%20with%20Cream%20Cheese%20Frosting.%20YUM!%20I%20just%20did%203%20concentric%20layers,%20frosted%20with%20cream%20cheese%20frosting,%20sprinkled%20with%20decorative%20red%20sugar,%20added%20borders,%20and%20embellished%20it%20with%20sugar%20snowflakes%20purchased%20at%20my%20local%20candy%20making%20store.%20I%20ordered%20a%20flower%20topper%20from%20the%20local%20grocery.%20This%20topper%20did%20arrive%20much%20larger%20and%20heavier%20than%20I%20anticipated%20it%20would%20be.%20I%20cut%20it%20in%20half%20and%20re-arranged%20the%20flowers%20before%20adding%20it%20to%20my%20cake.%20It's%20still%20pretty%20big,%20but%20the%20flowers%20were%20beautiful%20and%20luckily%20the%20cake%20withstood%20the%20weight.%3C/p%3E%3Cp%3EHere%20is%20a%20view%20of%20the%20back%20of%20the%20cake%20and%20those%20sweet%20(literally%20and%20figuratively)%20sugar%20snowflakes.%3C/p%3E%3Cp%3EEven%20sweeter%20than%20the%20snowflakes%20were%20the%20guests%20of%20honor.%20Here%20they%20are%20cutting%20into%20the%20cake,%20just%20like%20they%20did%2040%20years%20ago.%3C/p%3E%3Cp%3EYou%20can't%20go%20wrong%20with%20Red%20Velvet%20Cake%20at%20the%20holidays...or%20anytime%20for%20that%20matter.%20They%20cocoa%20in%20the%20cake%20paired%20with%20cream%20cheese%20frosting%20is%20fab-U-lous!%20Just%20one%20word%20of%20warning:%20this%20cake%20stains!%20As%20I%20was%20mixing%20up%20the%20batter,%20there%20was%20a%20mixer%20mishap%20and%20it%20flew%20everywhere!%20I%20thought%20that%20I'd%20cleaned%20it%20all%20up,%20and%20then%20later%20found%20that%20I'd%20stepped%20in%20some%20and%20tracked%20it%20all%20over%20the%20tile%20floor.%20The%20kitchen%20sort%20of%20looked%20like%20a%20crime%20scene.%20I%20sure%20had%20a%20fun%20time%20scrubbing.%20NOT!%20So%20be%20careful.%20:%20)%3C/p%3E%3Cp%3EIn%20addition%20to%20Red%20Velvet%20Cake%20and%20lots%20of%20yummy%20appetizers,%20the%20signature%20drink%20of%20the%20evening%20was%20the%20Pomtini.%20I%20got%20this%20recipe%20from%20my%20Aunt%20Lili.%20She's%20famous%20for%20her%20Pomegranate%20Martinis.%20After%20sampling%20one%20(or%20two...),%20I%20know%20why.%20These%20are%20so%20good!%3C/p%3E%3Cp%3ETo%20make%20these%20you%20need%20pomegranate%20juice,%20Citrus%20Vodka,%20Orange%20liqueur,%20limes%20(for%20the%20juice%20and%20slices%20to%20garnish),ice,%20and%20a%20pomegranate.%20Mix%20together%20the%20juice,%20vodka,%20and%20orange%20liqueur.%20I%20quadrupled%20this%20recipe%20and%20kept%20the%20mixture%20in%20a%20pitcher%20to%20pour%20into%20the%20shaker%20for%20each%20batch.%3C/p%3E%3Cp%3EI%20garnished%20each%20glass%20with%20lime%20and%20dropped%20some%20pomegranate%20arils%20into%20the%20bottom.%20Then%20squeeze%20a%20little%20fresh%20lime%20juice%20into%20each.%3C/p%3E%3Cp%3EWhen%20you're%20ready%20to%20serve,%20pour%20the%20juice-vodka-orange%20liqueur%20mixture%20into%20a%20shaker%20with%20ice%20and%20shake,%20shake,%20shake!%20You%20want%20it%20really%20cold,%20so%20shake%20it%20good!%20Then%20pour%20into%20the%20glasses%20and%20serve!%3C/p%3E%3Cp%3EAunt%20Lili's%20Pomtini's%3C/p%3E%3Cp%3Eice%3C/p%3E%3Cp%3ECombine%20pomegranate%20juice,%20vodka,%20Cointreau%20(or%20Triple%20Sec).%20To%20prepare%20glasses:%20sprinkle%20in%20some%20pomegranate%20arils.%20Squeeze%20a%20little%20lime%20juice%20over.%20Add%20the%20POM-Citron-Cointreau%20mixture%20to%20a%20shaker%20with%20ice.%20Shake%20it%20like%20you%20mean%20it!%20(until%20good%20and%20cold).%20Pour%20over%20pomegranate%20arils%20and%20lime%20juice.%20Garnish%20with%20lime,%20if%20desired.%3C/p%3E%3Cp%3EIt%20was%20such%20a%20fun%20party!%20Happy%2040th%20Anniversary%20to%20Nick%20and%20Pam!%3C/p%3E){kind=link}
