%3C/p%3E%3Cp%3EOne%20of%20my%20favourite%20ways%20to%20use%20it%20is%20in%20this%20fabulously%20moist%20and%20rich%20Dulce%20de%20Leche%20cake.%20%20That%20lovely%20rich%20caramelized%20sweetened%20milk%20is%20used%20not%20only%20in%20the%20batter%20but%20also%20in%20it's%20indulgent%20and%20delicious%20filling%20and%20frosting.%3C/p%3E%3Cp%3EThe%20batter%20also%20uses%20soft%20light%20brown%20sugar.%20%20%20Any%20time%20you%20use%20brown%20sugar%20in%20a%20batter,%20it%20will%20result%20in%20a%20terrifically%20moist%20cake.%20%20There%20is%20also%20ground%20almonds%20in%20it%20(almond%20meal.)%20%20This%20also%20helps%20to%20make%20a%20moist%20cake%20into%20a%20light%20cake.%3C/p%3E%3Cp%3EThe%20Dulce%20de%20Leche%20is%20used%20as%20well%20to%20help%20create%20a%20fabulously%20rich%20filling%20and%20frosting%20for%20the%20cake.%20%20It's%20absolutely%20delicious.%20%20Just%20look%20at%20the%20richness%20of%20that%20filling%20and%20that%20moist%20crumb%20%20.%20.%20.%20and%20then%20that%20frosting%20over%20the%20top.%20%20%20Just%20beautiful.%20%20Rich%20flavours,%20beautiful%20textures%20.%20.%20.%20moist%20caramel%20deliciousness!%20%20In%20any%20case,%20it%20makes%20full%20use%20of%20one%20tin%20of%20dulce%20de%20leche%20without%20any%20leftovers.%20%20(I%20would%20have%20had%20to%20eat%20it%20with%20a%20spoon,%20and%20we%20can't%20have%20that!)%3C/p%3E%3Cp%3EA%20bit%20of%20crunch%20is%20added%20by%20scattering%20a%20handful%20of%20toasted%20flaked%20almonds%20over%20top,%20adding%20to%20the%20pleasure%20of%20this%20cake.%20%20By%20all%20means%20leave%20them%20out%20if%20you%20are%20not%20fond%20of%20them,%20but%20if%20you%20are%20.%20.%20.%20%20then%20do%20add%20them.%20%20They%20add%20yet%20another%20depth%20of%20flavour%20and%20texture%20to%20what%20is%20already%20a%20beautiful%20cake.%3C/p%3E%3Cp%3EDo%20give%20your%20cake%20plenty%20of%20time%20to%20cool%20down%20prior%20to%20frosting%20it.%20%20I%20was%20a%20bit%20impatient%20and%20so%20my%20frosting%20got%20a%20bit%20warm%20and%20didn't%20say%20on%20the%20top%20like%20it%20should%20have%20done,%20but%20never%20mind%20.%20.%20.%20%20it%20tastes%20just%20as%20good%20oozing%20down%20the%20sides%20as%20it%20does%20laying%20on%20top.%20It's%20just%20not%20as%20pretty%20as%20it%20could%20have%20been.%20%20You%20will%20want%20to%20enjoy%20this%20with%20either%20a%20nice%20cold%20glass%20of%20milk,%20or%20a%20nice%20warm%20cuppa.%20%20Either%20way,%20frosting%20dripping%20down%20the%20sides%20or%20not%20.%20.%20.%20%20this%20is%20a%20cake%20that%20pleases%20on%20multiple%20levels.%20%20%20Go%20on%20.%20.%20.%20%20make%20it%20for%20Dad.%20It's%20his%20weekend%20after%20all!%3C/p%3E%3Cp%3E*Dulce%20de%20Leche%20Cake*%3C/p%3E%3Cp%3EMakes%20one%207%20inch%20layer%20cake%3C/p%3E%3Cp%3EA%20deliciously%20scrummy%20cake%20stogged%20full%20of%20the%20richness%20of%20creamy%20caramel%20flavoured%20Dulce%20de%20Leche.%20%20Moist%20and%20rich,%20and%20yet%20so%20light.%20%20A%20Dulce%20de%20Leche%20filling%20and%20Frosting,%20along%20with%20the%20crunch%20of%20toasted%20almonds%20sprinkled%20on%20top%20completes%20it.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20180*C/350*F/%20gas%20mark%204.%20%20Butter%20two%20round%207%20inch%20cake%20tins%20and%20line%20the%20bottoms%20with%20baking%20paper.%20%20Butter%20the%20baking%20paper.%3C/p%3E%3Cp%3ECream%20the%20butter%20and%20brown%20sugar%20together%20until%20light%20and%20fluffy.%20%20%20Beat%20in%20the%20vanilla%20and%20dulce%20de%20leche%20until%20smooth.%20%20%20Beat%20in%20the%20eggs%20one%20at%20a%20time.%20%20Stir%20in%20the%20ground%20almonds%20and%20the%20flour%20until%20the%20mixture%20is%20well%20combined.%20%20Divide%20the%20batter%20between%20the%20two%20prepared%20pans.%20%20Bake%20in%20the%20heated%20oven%20for%2025%20minutes%20until%20a%20toothpick%20inserted%20in%20the%20centre%20comes%20out%20clean.%20%20Allow%20to%20cool%20in%20the%20pans%20for%20five%20minutes%20before%20running%20a%20sharp%20knife%20around%20the%20edges%20and%20tipping%20out%20onto%20a%20wire%20rack%20to%20finish%20cooling.%20%20Carefully%20remove%20the%20baking%20paper%20once%20cold.%3C/p%3E%3Cp%3ETo%20make%20the%20icing%20and%20filling,%20beat%20the%20butter%20with%20the%20dulce%20de%20leche%20until%20smooth.%20%20Beat%20in%20the%20vanilla%20and%20%20then%20gradually%20beat%20in%20the%20icing%20sugar%20until%20you%20have%20a%20smooth%20somewhat%20thick%20mixture.%3C/p%3E%3Cp%3EPlace%20one%20cake%20layer%20upside%20down%20on%20a%20plate.%20%20Spoon%20about%20one%20third%20of%20the%20filling/frosting%20on%20top%20of%20it%20and%20spread%20it%20out%20almost%20to%20the%20edge.%20%20%20Place%20the%20second%20layer%20of%20the%20cake%20on%20top,%20right%20side%20up.%20%20Spread%20the%20rest%20of%20the%20filling/frosting%20over%20top%20just%20to%20the%20edges.%20%20Sprinkle%20with%20flaked%20almonds.%20%20%20Cut%20into%20wedges%20to%20serve.%3C/p%3E%3Cp%3ENote:%20%20Dulce%20de%20leche%20is%20boiled%20sweetened%20condensed%20milk.%20%20You%20can%20buy%20ready%20made%20Dulce%20de%20Leche,%20which%20is%20sold%20as%20Dulce%20de%20Leche%20or%20caramel,%20or%20if%20you%20wish%20you%20can%20make%20your%20own.%20%20%20To%20make%20your%20own,%20boil%20unopened%20tins%20of%20condensed%20milk%20for%202%20hours.%20%20Cool%20completely%20before%20opening.%20%20You%20can%20prepare%20a%20few%20tins%20at%20a%20time%20and%20keep%20them%20in%20the%20cupboard%20unopened.%20%20They%20will%20keep%20for%20a%20long%20time.%3C/p%3E){kind=link}
