,%20it%20was%20the%20perfect%20setting%20for%20a%20Girls%20Night%20at%20the%20house.%20I%20even%20managed%20to%20get%20the%20hubs%20to%20locate%20himself%20elsewhere%20for%20the%20evening,%20so%20as%20not%20to%20disrupt%20our%20girliness.%3C/p%3E%3Cp%3ESo%20what%20was%20on%20the%20menu?%20Well,%20God%20bless%20Mark%20Bittman,%20cuz%20he%20knows%20his%20shrimp.%20We%20fired%20up%20the%20grill%20and%20skewered%20some%20of%20his%20Spicy%20Grilled%20Shrimp,%20which%20we%20served%20with%20grilled%20tequila%20pineapple%20skewers%20and%20Mofongo.%20Mofongo%20is%20not%20a%20Bittman%20recipe,%20but%20a%20carryover%20from%20Ginny%E2%80%99s%20recent%20trip%20to%20Puerto%20Rico%20that%20she%20was%20itching%20to%20try%20back%20here%20in%20the%20landlocked%20Midwest.%20It%20is%20a%20dish%20that%20takes%20roasted,%20mashed%20plantains%20to%20a%20new%20level.%3C/p%3E%3Cp%3EAnd%20since%20I%20did%20say%20%E2%80%9Ccocktails%E2%80%9D%20I%20looked%20to%20our%20buddy%20Mark%20again.%20We%20sampled%20a%20variety%20of%20libations,%20including%20his%20Tequila%20Sunrise%20(from%20How%20to%20Cook%20Everything),%20an%20old%20standby%20from%20my%20bartending%20days.We%20also%20had%20Cherry%20Margaritas%20and%20Lemon%20Basil%20Mojitos%20(a%20recipe%20Ginny%20brought%20with%20her%20that%20is%20a%20lovely%20blend%20of%20Bacardi%20Limon,%20our%20fresh%20sour%20mix,%20club%20soda,%20fresh%20mint,%20basil%20and%20lime).TEQUILA%20SUNRISE%3C/p%3E%3Cp%3EFrom%20Mark%20Bittman%E2%80%99s%20How%20to%20Cook%20Everything%3C/p%3E%3Cp%3E1%20cup%20tequila%3C/p%3E%3Cp%3EOrange%20juice%20as%20needed%3C/p%3E%3Cp%3EGrenadine%3C/p%3E%3Cp%3EDivide%20the%20tequila%20evenly%20between%204%20glasses.%3C/p%3E%3Cp%3EAdd%20orange%20juice%20and%20a%20few%20drops%20of%20grenadine,%20as%20desired.%3C/p%3E%3Cp%3EMark%20Bittman's%20Spicy%20Grilled%20Shrimp%3C/p%3E%3Cp%3EFrom%20Fish,%20The%20Complete%20Guide%20to%20Buying%20and%20Cooking,%20by%20Mark%20Bittman%3C/p%3E%3Cp%3EMakes%204%20servingsTime:%2020%20minutes%3C/p%3E%3Cp%3EPeel%20the%20shrimp%20(you%20can%20butterfly%20them%20if%20you%20like;%20just%20cut%20along%20the%20line%20of%20the%20vein,%20a%20little%20deeper%20than%20usual).%20Mince%20the%20garlic%20with%20the%20salt;%20mix%20it%20with%20the%20cayenne%20and%20paprika,%20then%20make%20it%20into%20a%20paste%20with%20the%20olive%20oil%20and%20lemon%20juice.%20Smear%20the%20paste%20all%20over%20the%20shrimp.%20Start%20a%20charcoal%20or%20gas%20grill%20or%20preheat%20the%20broiler;%20the%20fire%20can%20be%20as%20hot%20as%20you%20like.%20Grill%20or%20broil%20the%20shrimp,%202%20to%203%20minutes%20per%20side.Serve%20immediately%20or%20at%20room%20temperature,%20with%20lemon%20wedges.Now,%20clearly,%20as%20a%20former%20bartender,%20I%20didn%E2%80%99t%20need%20a%20recipe%20for%20the%20tequila%20sunrise,%20but%20since%20there%20was%20a%20rendition%20of%20it%20in%20Bittman%E2%80%99s%20HTCE,%20I%20thought%20I%E2%80%99d%20go%20ahead%20and%20include%20it%20here%20for%20your%20reference.%20What%20we%20REALLY%20did%20was%20pour%20a%20shot%20(or%20so)%20of%20good%20tequila%20in%20each%20glass,%20then%20topped%20that%20with%20a%20orange-pineapple%20juice%20blend%20(since%20we%20had%20a%20%E2%80%9Cpineapple%E2%80%9D%20theme%20going%20already).%20Just%20as%20a%20rule%20of%20thumb,%20the%20proportions%20should%20be%20about%202%20to%201.%20Two%20parts%20juice%20to%20one%20part%20alcohol.%20Then,%20very%20carefully,%20drizzle%20a%20little%20bit%20of%20grenadine%20around%20the%20edges%20of%20the%20drink.%20As%20the%20syrup%20falls%20into%20the%20glass,%20it%20makes%20the%20famous%20%E2%80%9Csunrise%E2%80%9D%20effect,%20as%20you%20can%20see%20in%20the%20picture.%3C/p%3E%3Cp%3EFor%20the%20shrimp,%20we%20actually%20followed%20Bittman%E2%80%99s%20recipe.%20Although%20I%20usually%20find%20that%20I%20have%20to%20supplement%20the%20seasonings%20in%20his%20dishes,%20I%20was%20pleasantly%20surprised%20to%20find%20that%20these%20little%20babies%20had%20plenty%20of%20oomph%20just%20as%20they%20were.%20I%20couldn%E2%80%99t%20keep%20myself%20from%20nibbling%20on%20the%20last%20of%20these%20at%20the%20end%20of%20the%20evening,%20even%20though%20I%20was%20much%20too%20full%20to%20be%20eating%20any%20more.%20This%20would%20be%20a%20fabulous%20appetizer%20for%20any%20cocktail%20party!%3C/p%3E%3Cp%3EI%20have%20to%20say,%20the%20traditional%20mojito%20is%20not%20my%20favorite%20drink.%20Apparently,%20even%20though%20I%20like%20mint,%20I%20don%E2%80%99t%20care%20for%20it%20in%20my%20beverages.%20However,%20the%20Lemon%20Basil%20Mojito%20was%20a%20revelation%20that%20I%20look%20forward%20to%20having%20again%20and%20again!%20Tart%20and%20sweet%20at%20the%20same%20time,%20it%20had%20just%20the%20right%20amount%20of%20bite%20with%20an%20herby%20undertone.%3C/p%3E%3Cp%3EAll%20in%20all,%20we%20had%20a%20fabulous%20Girls%20Night%20In!%20A%20few%20cocktails,%20some%20tasty%20treats%20and%20a%20movie%20or%20two%20rounded%20out%20the%20evening%20perfectly.%3C/p%3E){kind=link}
