%20was%20a%20visit%20to%20Lavington%20Green%20Shopping%20Centre.%20Mum%20would%20take%20my%20brother%20off%20to%20the%20sweet%20shop%20probably%20via%20the%20fishmongers%20as%20I%20browsed%20the%20wonderful%20books%20in%20the%20bookshop%20trying%20to%20decide%20which%20ones%20I%20should%20spend%20all%20my%20pocket%20money%20on.%20As%20I%20came%20to%20read%20more%20challenging%20books,%20I%20would%20usually%20have%20a%20dictionary%20by%20my%20side%20to%20look%20up%20words%20that%20I%20didn%E2%80%99t%20know%20and%20couldn%E2%80%99t%20make%20sense%20of.%20One%20day%20I%20realised%20that%20these%20definitions%20included%20a%20little%20note%20on%20the%20origin%20of%20the%20word%20%E2%80%93%20many%20hours%20were%20spent%20trawling%20through%20the%20dictionary%20and%20marvelling%20at%20where%20our%20words%20came%20from.%3C/p%3E%3Cp%3EI%20have%20always%20been%20fascinated%20by%20provenance.%20What%20is%20the%20history%20behind%20things/people/ideas/languages/recipes?%20On%20a%20recent%20Bank%20Holiday%20Monday,%20I%20found%20myself%20sitting%20up%20at%20the%20bar%20in%20Polpo%20at%20lunch%20time%20in%20what%20can%20only%20be%20described%20as%20%E2%80%9Ccontinuing%E2%80%9D%20birthday%20celebrations%20for%20my%20dear%20friend%20C%20which%20had%20started%20on%20the%20Thursday%20prior.%20Polpo%20model%20themselves%20on%20a%20Venetian%20%E2%80%9Cb%C3%A0caro%E2%80%9D%20which%20literally%20translates%20as%20House%20of%20Bacchus%20%E2%80%93%20Bacchus%20being%20the%20Roman%20God%20of%20wine%20.%20A%20b%C3%A0caro%20is%20a%20small%20Venetian%20bar%20which%20serves%20local%20wines%20and%20little%20plates%20of%20cicchetti%20%E2%80%93%20tidbits%20of%20delicious%20food%20-%20predating%20the%20more%20well%20known%20Spanish%20custom%20of%20tapas%20by%20a%20few%20centuries.%20Polpo%20had%20run%20out%20of%20a%20couple%20of%20items%20on%20the%20menu%20(annoying)%20but%20had%20whipped%20up%20some%20replacements%20(laudable)%20one%20of%20which%20was%20an%20utterly%20delicious%20green%20olive%20tapenade%20crostini.%20As%20C%20and%20I%20discussed%20the%20ingredients%20in%20a%20tapenade,%20I%20found%20myself%20curious%20as%20to%20why%20something%20so%20intrinsically%20Provencal%20was%20being%20served%20somewhere%20which%20prides%20itself%20on%20its%20(utterly%20delicious)%20Venetian%20roots.%20Turns%20out%20that%20olive%20tapenades%20with%20anchovies%20can%20be%20found%20in%20ancient%20Roman%20cookbooks%20dating%20back%20to%20thousands%20of%20years%20before%20the%20appearance%20of%20the%20French%20word%20tapenade,%20or%20indeed%20the%20French%20language%20itself.%20The%20earliest%20known%20tapenade%20recipe,%20Olivarum%20conditurae,%20appears%20in%20Columella%E2%80%99s%20De%20re%20Rustica,%20written%20in%20the%20first%20century%20AD%E2%80%A6%20So%20much%20lovely%20provenance%20in%20this%20story!%3C/p%3E%3Cp%3EThere%20are%20many%20recipes%20for%20tapenade%20but%20they%20all%20have%20the%20same%20basic%20ingredients%20%E2%80%93%20olives%20(usually%20black),%20capers,%20garlic,%20anchovies,%20lemon/vinegar%20and%20olive%20oil%20%E2%80%93%20in%20varying%20amounts.%20This%20is%20my%20take%20on%20it%20inspired%20by%20our%20visit%20to%20Polpo.%3C/p%3E%3Cp%3EINGREDIENTS%3C/p%3E%3Cp%3EPREPARATION%3C/p%3E%3Cp%3EYou%20can%20either%20finely%20chop%20the%20first%20five%20ingredients%20for%20a%20more%20rustic%20texture%20or%20blitz%20them%20in%20a%20food%20processor%20for%20a%20minute%20or%20two.%20Either%20way,%20then%20stir%20in%20the%20sun-dried%20tomato%20paste%20and%20drizzle%20in%20some%20olive%20oil.%20Taste.%20Give%20the%20mixture%20a%20squeeze%20of%20lemon%20and%20taste%20it%20again.%20Adjust%20the%20flavours%20to%20your%20liking%20bearing%20in%20mind%20that%20they%20mellow%20as%20time%20goes%20on.%20Salt%20shouldn%E2%80%99t%20be%20necessary%20as%20there%20is%20plenty%20in%20the%20olives,%20capers%20and%20anchovies.%3C/p%3E%3Cp%3EStore%20it%20in%20an%20extremely%20clean%20jar,%20and%20cover%20with%20a%20thin%20layer%20of%20olive%20oil.%20It%20should%20keep%20for%20at%20least%20a%20week%20in%20the%20fridge%20%E2%80%93%20the%20only%20danger%20here%20is%20of%20it%20going%20mouldy%3C/p%3E%3Cp%3EUSES%3C/p%3E%3Cp%3ESpread%20on%20grilled%20or%20toasted%20slices%20of%20ciabatta%20or%20baguette%20and%20enjoy%20with%20a%20glass%20of%20something%20suitable%3C/p%3E%3Cp%3ESpread%20a%20couple%20of%20tablespoons%20under%20the%20skin%20of%20a%20chicken%20before%20roasting%3C/p%3E%3Cp%3EMake%20a%20slit%20in%20the%20side%20of%20a%20thick%20fillet%20of%20cod/haddock%20and%20spread%20a%20little%20of%20the%20tapenade%20inside%20before%20cooking%3C/p%3E%3Cp%3ETop%20a%20thinner%20fillet%20of%20fish%20with%20a%20smear%20of%20tapenade%20before%20cooking%3C/p%3E%3Cp%3EMix%20a%20couple%20of%20tablespoons%20into%20an%20oil%20and%20vinegar%20dressing%20and%20spoon%20over%20just%20boiled%20new%20potatoes%3C/p%3E%3Cp%3E51.508530%3C/p%3E%3Cp%3E-0.125740%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
