%20at%20making%20the%20most%20of%20my%20free%20time.%20With%20two%20early%20morning%20clinicals%20this%20semester,%20Rick%20and%20I%20have%20learned%20which%20nights%20we%20can%20see%20each%20other%20and%20which%20ones%20we%20can't.%20Wednesdays%20and%20Thursdays%20have%20become%20our%20week%20nights%20together.%20Last%20week%20(yes,%20I%20know,%20I%20suck%20;)%20),%20we%20used%20some%20chicken%20that%20Rick%20had%20thawed%20out%20to%20make%20this%20recipe.%20Instead%20of%20doing%20the%20crostini%20that%20is%20included%20with%20the%20lemon%20chicken,%20we%20did%20a%20different%20version.%20I%20made%20the%20different%20version%20again%20over%20the%20weekend%20when%20my%20dad%20and%20stepmom%20were%20in%20town.%20I%20don't%20have%20pictures%20of%20these%20because,%20well,%20the%20chicken%20didn't%20look%20as%20yummy%20as%20it%20is%20in%20real%20life.%20Hopefully,%20however,%20my%20dad%20and%20stepmom%20will%20send%20me%20a%20picture%20of%20the%20stack%20of%20meat%20that%20we%20grilled%20out%20this%20past%20weekend.%20We%20used%20that%20awesome,%20awesome,%20awesome%20seasoning%20that%20Rick%20got%20from%20his%20parents%20and%20took%20advantage%20of%20the%20great%20sale%20that%20Food%20Lion%20had%20on%20t-bones!%3C/p%3E%3Cp%3ECooking%20has%20become%20somewhat%20dangerous%20with%20the%20kittens%20playing%20in%20the%20kitchen%20floor.%20As%20I%20sit%20here%20and%20compose%20this%20post,%20little%20Ty%20is%20%22chasing%22%20the%20little%20squares%20in%20the%20kitchen%20tile...and%20then%20in%20a%20flash,%20he%20and%20Weezy%20are%20off%20to%20terrorize%20some%20other%20part%20of%20the%20condo.%20What%20amazes%20me%20about%20the%20pets%20that%20I%20have%20had%20in%20my%20life%20is%20that%20the%20smell%20of%20sauteing%20garlic%20can%20bring%20them%20in%20the%20kitchen%20within%20seconds.%20Can%20someone%20please%20explain%20that%20to%20me???%3C/p%3E%3Cp%3EHere%20are%20the%20recipes%20for%20your%20culinary%20enjoyment....%3C/p%3E%3Cp%3EKatie's%20Crostini%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EOne%20baguette%20of%20bread%20(I%20like%20to%20get%20my%20cut%20at%20Publix,%20but%20if%20your%20grocery%20store%20baker%20won't%20do%20it,%20cut%20to%20about%201/4%20to%201/2%20inch%20thick)%3C/p%3E%3Cp%3E1%20can%20of%20diced%20tomatoes,%20drained%3C/p%3E%3Cp%3E1/4%20cup%20fresh%20basil,%20minced%3C/p%3E%3Cp%3Eolive%20oil%20(extra%20virgin)]%3C/p%3E%3Cp%3EParmesan%20cheese,%20shredded/grated%3C/p%3E%3Cp%3EItalian%20seasoning%20grinder%3C/p%3E%3Cp%3EGarlic%20powder%3C/p%3E%3Cp%3E1/2%20onion,%20minced%3C/p%3E%3Cp%3E2%20cloves%20of%20garlic,%20minced%3C/p%3E%3Cp%3EBalsamic%20vinegar%3C/p%3E%3Cp%3EA%20splash%20of%20white%20wine%3C/p%3E%3Cp%3ECooking%20spray%3C/p%3E%3Cp%3EPreparations%3C/p%3E%3Cp%3EAdd%20drained%20can%20of%20diced%20tomatoes,%20minced%20garlic,%20diced%20onion,%20fresh%20basil,%20three-four%20twists%20of%20the%20Italian%20seasoning%20grinder%20in%20a%20bowl.%20Cover%20and%20refrigerate.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20degrees.%20Spray%20a%20cookie%20sheet%20or%20pizza%20pan%20with%20cooking%20spray.%20In%20a%20small%20plate,%20pour%20some%20olive%20oil.%20Add%20two%20to%20three%20twists%20of%20the%20Italian%20seasoning%20and%20garlic%20powder%20to%20taste%20and%20stir.%3C/p%3E%3Cp%3EPlace%20pieces%20of%20baguette%20on%20the%20sprayed%20pan%20(you%20may%20have%20several%20pieces%20left%20over).%20Brush%20pieces%20of%20bread%20with%20olive%20oil%20mixture%20and%20place%20back%20on%20the%20pan.%20Toast%20bread%20for%204-5%20minutes%20or%20until%20slightly%20browned.%20Remove%20from%20oven.%3C/p%3E%3Cp%3EChange%20oven%20setting%20to%20broil.%3C/p%3E%3Cp%3ESpoon%20a%20little%20bit%20of%20balsamic%20vinegar%20on%20each%20piece%20of%20baguette%20toast.%20Next,%20add%20a%20spoonful%20of%20the%20tomato-onion%20mixture%20to%20each%20piece%20of%20baguette%20toast.%20Sprinkle%20each%20piece%20with%20Parmesan%20cheese.%20Broil%20until%20cheese%20melts%20about%201-2%20minutes.%20Serve%20immediately.%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EMake%20crostini:%3C/p%3E%3Cp%3EPlace%20bread%20on%20baking%20sheet.%20Spread%20tomato%20paste%20over.%20Top%20each%20with%201%20tomato%20slice.%20Sprinkle%20cheese%20atop.%3C/p%3E%3Cp%3EMake%20chicken:%3C/p%3E%3Cp%3EPound%20each%20chicken%20breast%20between%20sheets%20of%20plastic%20to%201/4-inch-thickness.%20Sprinkle%20chicken%20with%20salt%20and%20pepper.%20Place%20flour%20in%20bowl.%20Heat%201%20teaspoon%20oil%20in%20large%20nonstick%20skillet%20over%20high%20heat.%20Lightly%20coat%202%20chicken%20with%20flour;%20shake%20off%20excess.%20Transfer%20to%20skillet%20and%20cook%20until%20brown%20and%20cooked%20through,%20about%202%20minutes%20per%20side.%20Transfer%20chicken%20to%20plate%20and%20tent%20with%20foil.%20Repeat%20with%201%20teaspoon%20oil,%20flour%20and%20remaining%20chicken.%3C/p%3E%3Cp%3EHeat%201/2%20teaspoon%20oil%20in%20same%20skillet%20over%20low%20heat.%20Add%20green%20onions%20and%20garlic;%20saut%C3%A9%20until%20tender,%20about%202%20minutes.%20Stir%20in%20broth%20an
