.%20Well,%20life%20happens,%20we%20get%20busy%20and%20I%20forgot%20all%20about%20it.%20Somehow,%20I%20never%20got%20around%20to%20making%20the%20peanut%20butter%20cream%20pie.%3C/p%3E%3Cp%3EUntil%20I%20heard%20about%20Mikey%20and%20his%20pie%20and%20I%20desperately%20wanted%20to%20make%20that%20forgotten%20peanut%20butter%20cream%20pie%20for%20Alan.%20After%2031%20years%20of%20marriage,%20it%20was%20time.%20It%20took%20a%20while%20to%20find%20the%20recipe,%20but%20there%20it%20was,%20the%20paper%20folded%20in%20half,%20tearing%20in%20spots%20and%20browning%20at%20the%20edges.%3C/p%3E%3Cp%3EIn%20Mikeys'%20honor,%20here%20it%20is:%3C/p%3E%3Cp%3EWhen%20those%20two%20are%20soft%20and%20creamy%20add%20in%20:%3C/p%3E%3Cp%3EI%20Tbs%20of%20vanilla%3C/p%3E%3Cp%3E2%20Tbs%20of%20melted%20butter%3C/p%3E%3Cp%3EWhip%201%20cup%20of%20whipping%20cream.%3C/p%3E%3Cp%3EFold%20the%20whipped%20cream%20into%20the%20peanut%20butter/cream%20cheese%20mixture.%3C/p%3E%3Cp%3EThen,%20pour%20the%20filling%20into%20the%20pie%20crust.%3C/p%3E%3Cp%3EFill%20the%20crust%20and%20smooth%20things%20out.%3C/p%3E%3Cp%3ETake%20the%20pie%20and%20pop%20it%20into%20the%20fridge%20for%204%20to%205%20hours%20until%20it's%20well%20set.%3C/p%3E%3Cp%3ENow%20for%20the%20topping.%3C/p%3E%3Cp%3EI%20melted%20about%206%20oz%20of%20Valhrona%20dark%20chocolate%20with%204%20Tbs%20of%20unsalted%20butter%20added%20about%201/3%20to%201/2%20a%20cup%20of%20low%20fat%20evaporated%20milk%20and%20a%20pinch%20of%20salt%20for%20a%20salty,%20tangy,%20%20bittersweet,%20fudgy%20glaze%20to%20compliment%20the%20sweetness%20of%20the%20pie.%3C/p%3E%3Cp%3EGene%20used%20to%20bring%20out%20a%20plain%20old%20pitcher%20of%20warm%20fudge%20sauce%20(%20straight%20outta%20the%20jar)%20which%20works%20well%20too.%3C/p%3E%3Cp%3EIce%20the%20firmly%20set%20pie%20and%20put%20it%20back%20into%20the%20fridge%20for%20at%20least%20another%2030%20minutes.%3C/p%3E%3Cp%3EAfter%20that,%20you're%20on%20your%20own.%3C/p%3E%3Cp%3ESo%20there%20it%20is,%20the%20pie%20that%20it%20took%20a%20bit%20over%20three%20decades%20to%20make.%20It%20was%20time,%20for%20Mikey%20and%20for%20my%20family%20too.%20The%20pie%20is%20a%20reminder%20to%20cherish%20life%20in%20every%20bite.%20All%20of%20us%20really%20are%20on%20%20loan%20to%20each%20other.%20We%20%20must%20treat%20each%20other%20gently.%20And%20eat%20pie.%20Jennie,%20our%20thoughts%20and%20prayers%20are%20with%20you%20and%20your%20girls%20and%20Mikey.%3C/p%3E){kind=link}
