%3C/p%3E%3Cp%3ESimnel%20Cake%20is%20a%20cake%20that%20is%20quite%20traditional%20over%20here%20in%20the%20UK%20during%20the%20Easter%20Season.%20It%20is%20a%20type%20of%20light%20fruitcake,%20similar%20to%20a%20Christmas%20Cake,%20except%20that%20a%20layer%20of%20Marzipan%20is%20baked%20into%20the%20centre%20of%20it,%20and%20it%20is%20covered%20with%20another%20layer%20of%20marzipan%20on%20top,%20with%20no%20frosting.%3C/p%3E%3Cp%3EOn%20the%20top%20of%20the%20cake,%20around%20the%20edge,%20are%20eleven%20marzipan%20balls%20to%20represent%20the%20true%20apostles%20of%20Jesus;%20Judas%20is%20omitted.%20In%20some%20variations%20Christ%20is%20also%20represented,%20by%20a%20ball%20placed%20at%20the%20centre.%3C/p%3E%3Cp%3EOriginally%20they%20were%20a%20Mothering%20Sunday%20tradition,%20when%20young%20girls%20in%20service%20would%20make%20one%20to%20take%20home%20to%20their%20mothers%20on%20their%20day%20off.%20There%20is%20a%20popular%20legend%20however,%20that%20attributes%20their%20creation%20to%20the%20English%20pretender%20Lambert%20Simnel,%20who,%20according%20to%20the%20legend,%20devised%20it%20during%20the%20time%20in%20which%20he%20was%20forced%20to%20work%20in%20Henry%20VII's%20kitchens.%3C/p%3E%3Cp%3EEvery%20year%20I%20have%20big%20plans%20to%20make%20one,%20and%20indeed,%20this%20year%20was%20no%20different.%20I%20did%20buy%20all%20that%20I%20needed%20to%20make%20one%20.%20.%20.%20but%20with%20having%20to%20move%20and%20pack%20up%20everything%20etc.,%20I%20have%20just%20run%20out%20of%20time%20.%20.%20.%3C/p%3E%3Cp%3EI%20did%20create%20a%20delicious%20simnel%20tart%20though,%20using%20up%20some%20of%20the%20fruit%20and%20marzipan%20I%20had%20bought,%20along%20with%20some%20puff%20pastry%20that%20I%20had%20in%20the%20freezer%20that%20needed%20using%20up,%20and%20some%20ginger%20jam%20that%20I%20needed%20to%20use%20up%20from%20the%20fridge%20.%20.%20.%3C/p%3E%3Cp%3EThis%20was%20delicious.%20Much%20better%20than%20a%20cake%20I%20think,%20and%20Todd%20was%20in%20agreement,%20if%20the%20way%20he%20snuffled%20it%20up%20was%20any%20indication!!%20I'd%20call%20it%20a%20success!%3C/p%3E%3Cp%3EPerhaps%20I%20have%20started%20a%20new%20tradition?%20What%20do%20you%20think?%20It%20was%20certainly%20a%20lot%20easier%20than%20making%20a%20cake%20and%20it%20was%20also%20done%20lickety%20split,%20in%20no%20time%20at%20all,%20whereas%20a%20cake%20would%20have%20taken%20several%20hours%20baking%20in%20the%20oven.%3C/p%3E%3Cp%3EThat's%20a%20bonus%20in%20my%20books!%3C/p%3E%3Cp%3EImagine%20puff%20pastry,%20slathered%20with%20ginger%20jam%20and%20covered%20with%20dried%20mixed%20fruit%20that%20you%20have%20soaked%20in%20gingerbeer%20.%20.%20.%20if%20you%20were%20so%20inclined%20you%20could%20use%20gingerwine%20.%20.%20.%20and%20then%20mixed%20with%20grated%20marzipan.%20Baked%20in%20a%20hot%20oven%20until%20the%20pastry%20is%20crisp%20and%20brown%20and%20the%20marzipan%20melted%20and%20oozing%20with%20ginger%20jam%20amongst%20the%20gingery%20fruits%20.%20.%20.%20this%20went%20down%20a%20real%20treat,%20served%20up%20warm%20and%20cut%20into%20slabs,%20with%20some%20pouring%20cream%20spooned%20on%20top.%3C/p%3E%3Cp%3E*Simnel%20Tart*%3C/p%3E%3Cp%3EServes%204%20to%206%3C/p%3E%3Cp%3EA%20deliciously%20fruity%20tart%20in%20a%20lovely%20puff%20pastry%20base,%20and%20steeped%20in%20Marzipan%20and%20lucious%20ginger%20jam.%20Oh,%20my%20but%20this%20is%20good.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20220*C/425*F.%20Mix%20the%20dried%20fruit%20with%20the%20gingerbeer%20in%20a%20bowl.%20Set%20aside%20to%20macerate.%3C/p%3E%3Cp%3ELine%20a%20baking%20sheet%20with%20parchment%20paper.%20Roll%20the%20pastry%20out%20onto%20the%20parchment%20paper.%20Mark%20a%20border%20about%201/2%20inch%20from%20the%20border%20all%20the%20way%20around.%20Brush%20the%20jam%20over%20the%20inside%20of%20this%20border.%20Chill%20for%2010%20minutes.%3C/p%3E%3Cp%3ERemove%20from%20the%20refrigerator.%20Drain%20the%20fruit%20and%20then%20mix%20together%20with%20the%20grated%20marzipan.%20Sprinkle%20over%20the%20pastry,%20within%20the%20confines%20of%20the%20border.%20Bake%20for%2020%20minutes,%20until%20the%20pastry%20is%20golden%20brown%20and%20the%20filling%20is%20bubbling.%20Remove%20from%20the%20oven%20and%20allow%20to%20cool%20to%20room%20temperature.%20Serve%20cut%20into%20squares%20with%20or%20without%20cream%20as%20desired.%3C/p%3E){kind=link}
