,%20maldon%20sea%20salt,%20freshly%20cracked%20black%20pepper%20.%20.%20.%20premium%20quality%20balsamic%20vinegar.%20%20Not%20the%20most%20expensive%20one,%20but%20not%20a%20cheap%20one%20either%20.%20.%20.%20good%20quality%20Spanish%20black%20olives.%3C/p%3E%3Cp%3EI%20always%20make%20my%20own%20croutons.%20%20%20No%20stale%20loaf%20of%20good%20bread%20ever%20gets%20wasted%20in%20my%20house.%20%20I%20always%20cut%20it%20into%20cubes%20and%20then%20toss%20it%20with%20some%20olive%20oil%20and%20seasonings%20(a%20bit%20of%20salt,%20pepper,%20garlic%20powder,%20some%20herbs)%20and%20then%20I%20roast%20them%20on%20a%20baking%20tray%20in%20a%20hot%20oven%20until%20they%20are%20crisp.%20%20I%20could%20eat%20them%20like%20potato%20chips.%20%20They%20are%20that%20good.%3C/p%3E%3Cp%3EI%20did%20reserve%20the%20stems%20from%20my%20tomatoes%20so%20I%20could%20put%20them%20on%20top%20when%20I%20went%20to%20serve%20them,%20but%20I%20also%20saved%20some%20tiny%20sprigs%20of%20basil,%20which%20also%20looked%20lovely.%20%20And%20that%20way%20you%20don't%20have%20to%20worry%20about%20anyone%20eating%20them.%3C/p%3E%3Cp%3EThis%20was%20a%20beautiful%20salad.%20%20Pretty%20to%20look%20at.%20%20%20Simple%20to%20make.%20%20%20Delicious%20to%20the%20taste.%20%20Well%20presented.%20%20I%20would%20make%20this%20again,%20and%20again.%20%20It%20made%20the%20perfect%20light%20summer%20lunch.%3C/p%3E%3Cp%3E*A%20Simple%20Caprese%20Salad*%3C/p%3E%3Cp%3EServes%202%3C/p%3E%3Cp%3EProof%20positive%20that%20simple%20ingredients%20beautifully%20presented%20can%20actually%20be%20quite%20impressive.%3C/p%3E%3Cp%3EBring%20a%20saucepan%20of%20water%20to%20the%20boil.%20%20%20Cut%20a%20small%20x%20on%20the%20bottom%20of%20each%20tomato%20and%20immerse%20them%20into%20the%20boiling%20water%20for%20about%2030%20seconds.%20%20Scoop%20out%20and%20place%20into%20a%20bowl%20of%20ice%20water%20to%20cool.%20%20%20Using%20a%20sharp%20knife,%20and%20beginning%20at%20the%20x,%20peel%20away%20the%20skin%20and%20discard.%20%20Cut%20a%20thin%20sliver%20from%20off%20the%20bottoms%20of%20each%20tomato%20so%20that%20they%20will%20stand%20upright.%20%20%20Have%20ready%20two%20chilled%20salad%20plates.%20%20%20Arrange%20one%20tomato%20on%20each%20plate.%20%20You%20can%20either%20garnish%20the%20top%20with%20reserved%20tomato%20stems%20or%20some%20small%20basil%20leaves%20which%20look%20like%20a%20stem.%20%20Arrange%20the%20mozzarella,%20torn%20around%20the%20tomatoes,%20placing%20half%20on%20each%20plate.%20%20Add%20half%20of%20the%20olives%20to%20each%20plate%20and%20a%20basil%20sprig.%20%20%20Make%20a%20little%20pile%20of%20the%20salt%20and%20pepper.%20%20Place%20half%20of%20the%20olive%20oil%20and%20half%20of%20the%20vinegar%20into%20a%20very%20tiny%20bowl%20and%20place%20onto%20each%20plate.%20%20%20Add%20a%20pile%20of%20crisp%20croutons.%20%20%20Serve%20immediately.%3C/p%3E%3Cp%3EDrizzle%20with%20the%20olive%20oil%20and%20vinegar%20to%20eat,%20along%20with%20a%20sprinkle%20of%20the%20salt%20and%20pepper.%3C/p%3E%3Cp%3EI%20would%20serve%20this%20to%20my%20favourite%20people%20without%20blinking%20an%20eye!%20%20I%20am%20sure%20they%20would%20love%20it.%3C/p%3E){kind=link}
