.%3C/p%3E%3Cp%3EThe%20main%20benefit,%20of%20course,%20to%20my%20working%20fulltime%20is%20the%20extra%20income.%20I%20can%20now,%20once%20again,%20do%20a%20little%20splurging%20at%20the%20grocery%20store.%20%20My%20first%20joyful%20splurge%20was%20in%20the%20cheese%20department.%20I%20love%20cheese!%20For%20too%20long,%20I%20had%20been%20mostly%20limiting%20myself%20to%20the%20store%20brand%20cheeses%20and%20Parmesan%20in%20the%20green%20can.%20How%20delighted%20I%20was%20to%20purchase%20a%20wedge%20of%20Parmesano%20Reggiano%20and%20also%20the%20Tillamook%20cheddar%20cheese,%20which%20I%20used%20to%20make%20this%20sandwich.%20That%20really%20is%20a%20delicious%20cheese.%3C/p%3E%3Cp%3EI%20have%20mentioned%20two%20things%20that%20made%20this%20sandwich%20special--the%20homegrown%20tomato%20and%20the%20Tillamook%20cheese.%20The%20third%20thing%20was%20the%20hearty%20oat%20bread%20I%20purchased%20at%20a%20local%20bakery.%20Lovely.%20%20And%20lastly,%20the%20fact%20that%20I%20smeared%20the%20outside%20of%20the%20bread%20with%20Ghee%20(another%20of%20my%20splurges)%20before%20grilling.%3C/p%3E%3Cp%3EGrilled%20Cheese%20and%20Tomato%20Sandwich%3C/p%3E%3Cp%3E2%20slices%20of%20sturdy%20bread%3C/p%3E%3Cp%3ESlice%20the%20tomato%20and%20place%20the%20slices%20on%20paper%20towels%20for%20about%2030%20minutes%20to%20absorb%20the%20excess%20liquid.%20Salt%20and%20pepper%20the%20slices%20to%20taste.%20Place%20layers%20of%20cheese%20on%20a%20slice%20of%20the%20bread.%20Top%20with%20tomato%20slices,%20then%20more%20cheddar.%20Top%20with%20the%20other%20slice%20of%20bread.%20Spread%20some%20ghee%20on%20the%20outside%20of%20the%20bread,%20then%20place%20ghee%20side%20down%20in%20an%20iron%20skillet%20with%20has%20been%20preheated.%20Before%20turning%20the%20sandwich,%20spread%20the%20other%20slice%20of%20bread%20with%20ghee%20or%20butter.%EF%BB%BF%3C/p%3E){kind=link}
