A Sweet Treat from South India: Honey Paniyaram

Ingredientes

  • 1 cup rice (Idli rice or short-grain rice)
  • 1/2 cup jaggery or brown sugar
  • 1/4 cup honey
  • 1/2 teaspoon cardamom powder
  • 1/4 teaspoon salt
  • 1/2 cup coconut milk
  • 1 tablespoon ghee
  • Oil or ghee for frying

Direcciones

  1. Soak the rice for 4-5 hours, drain the water, and grind it into a smooth paste.
  2. In a pan, heat the jaggery or brown sugar in 1/4 cup of water and strain to remove any impurities.
  3. Add the honey, cardamom powder, and a pinch of salt to the jaggery mixture. Mix well.
  4. Pour this jaggery-honey mixture into the rice batter.
  5. Add coconut milk to the batter and mix properly. Until it becomes smooth.
  6. Cover the mixture and let it ferment for 2-3 hours or overnight.
  7. Heat a non-stick paniyaram pan on medium heat.
  8. Add a few drops of ghee into each mold, then pour a small amount of batter into the pan.
  9. Cook until golden brown on one side, then flip and cook for 2-3 minutes.
  10. Serve hot with your favorite chutney or sambar.
