Receta A Sweet Treat from South India: Honey Paniyaram

Ingredientes
- 1 cup rice (Idli rice or short-grain rice)
- 1/2 cup jaggery or brown sugar
- 1/4 cup honey
- 1/2 teaspoon cardamom powder
- 1/4 teaspoon salt
- 1/2 cup coconut milk
- 1 tablespoon ghee
- Oil or ghee for frying
Direcciones
- Soak the rice for 4-5 hours, drain the water, and grind it into a smooth paste.
- In a pan, heat the jaggery or brown sugar in 1/4 cup of water and strain to remove any impurities.
- Add the honey, cardamom powder, and a pinch of salt to the jaggery mixture. Mix well.
- Pour this jaggery-honey mixture into the rice batter.
- Add coconut milk to the batter and mix properly. Until it becomes smooth.
- Cover the mixture and let it ferment for 2-3 hours or overnight.
- Heat a non-stick paniyaram pan on medium heat.
- Add a few drops of ghee into each mold, then pour a small amount of batter into the pan.
- Cook until golden brown on one side, then flip and cook for 2-3 minutes.
- Serve hot with your favorite chutney or sambar.
