%3C/p%3E%3Cp%3EI%20cut%20up%20my%20own%20chicken%20and%20I%20think%20that%20I%20invented%20parts%20that%20no%20one%20has%20ever%20heard%20of%20before.%20It%20did%20call%20for%2010%20pieces%20and%20there%20were%2010%20pieces%20but%20not%20the%20%22usual%22%2010%20pieces.%20Oh,%20there%20was%20a%20wing%20in%20there%20somewhere.%3C/p%3E%3Cp%3EThis%20recipe%20was%20in%20%22The%20Kimchi%20Chronicles:%20Korean%20Cooking%20for%20an%20American%20Kitchen%22%20a%20new%20cookbook%20that%20we%20bought.%20I%20can't%20tell%20you%20how%20much%20I%20love%20this%20cookbook%20and%20want%20to%20make%20everything%20in%20it.%3C/p%3E%3Cp%3EThis%20one%20was%20called%20%22Easy%20Braised%20Chicken%22%20and%20it%20was%20easy%20and%20good.%3C/p%3E%3Cp%3EThe%20Umma%20Paste%20is%20spicy%20so%20add%20less%20or%20more%20depending%20on%20taste.%3C/p%3E%3Cp%3EMoving%20on%20to%20Chicken%20recipe%20%232!%20I%20loved%20this%20one%20so%20much%20that%20it%20is%20now%20one%20of%20my%20very%20favorites.%20I%20got%20it%20because%20I%20was%20Tweeting%20with%20Cathy%20(Mrs%20Wheelbarrow)%20and%20she%20said%20that%20she%20was%20making%20it%20for%20dinner.%20She%20said%20that%20if%20I%20made%20it%20too%20it%20would%20be%20like%20we%20were%20eating%20dinner%20together.%20I%20made%20it%20and%20boy%20am%20I%20glad%20that%20I%20did!%3C/p%3E%3Cp%3EThe%20spices%20are%20really%20pretty%20together%20(although%20the%20turmeric%20did%20turn%20my%20pretty%20manicure%20to%20yellow).%3C/p%3E%3Cp%3EHow%20beautiful%20is%20this?%20It%20is%20so%20easy%20to%20make%20and%20I%20swear%20you%20wont%20be%20sorry.%3C/p%3E%3Cp%3EI%20also%20made%20with%20roasted%20brussel%20sprouts%20but...%3C/p%3E%3Cp%3EI%20kinda%20got%20distracted%20and%20kinda%20let%20them%20burn.%3C/p%3E%3Cp%3EDidn't%20matter%20because%20this%20was%20an%20awesome%20dinner!%20I%20better%20go%20%22tweet%22%20to%20see%20what%20I%20will%20be%20making%20tonight.%20Mrs%20Wheelbarrow?%20Any%20more%20suggestions?%3C/p%3E%3Cp%3EEasy%20Braised%20Chicken%3C/p%3E%3Cp%3EKimchi%20Chronicles%3C/p%3E%3Cp%3E1.%20Soak%20the%20chicken%20in%20the%20buttermilk%20brine%20for%203-4%20hours.%20I%20use%20a%20ziplock%20bag%20as%20it's%20easier%20to%20get%20the%20buttermilk%20all%20around%20the%20chicken.%3C/p%3E%3Cp%3ERoast%20the%20head%20of%20garlic.%20Slice%20off%20the%20top%20of%20the%20head,%20exposing%20all%20the%20cloves.%20Drizzle%20the%20oil%20in%20between%20all%20the%20cloves,%20and%20wrap%20the%20whole%20thing%20up%20in%20foil.%20Bake%20for%20about%20an%20hour%20at%20350.%3C/p%3E%3Cp%3E2.%20Squeeze%20all%20the%20tasty%20roasted%20garlic%20out%20into%20a%20small%20mixing%20bowl.%20Add%20the%20butter%20and%20spices,%20and%20the%20juice%20of%20one%20of%20the%20limes,%20and%20make%20a%20paste.%3C/p%3E%3Cp%3E3.%20Remove%20the%20chicken%20&%20brine%20from%20the%20refrigerator.%20RInse%20the%20chicken%20and%20pat%20it%20dry.%20Rub%20the%20paste%20under%20the%20skin%20of%20the%20breast%20and%20thighs%20and%20then%20over%20the%20entire%20chicken.%20Tuck%20one%20or%20two%20quartered%20limes%20in%20the%20cavity%20and%20truss%20the%20chicken%20loosely.%3C/p%3E%3Cp%3E4.%20Allow%20the%20chicken%20to%20come%20to%20room%20temperature,%20and%20the%20paste%20to%20season%20the%20chicken,%20for%20about%2030%20minutes.%3C/p%3E%3Cp%3E5.%20Preheat%20the%20oven%20to%20475%20with%20the%20rack%20in%20the%20bottom%20third%20of%20the%20oven.%20In%20good%20weather,%20I%20use%20my%20outdoor%20gas%20grill%20as%20an%20oven.%20It%20heats%20up%20faster%20and%20hotter%20then%20the%20oven.%3C/p%3E%3Cp%3E6.%20Get%20out%20a%20heavy%20cast%20iron%20skillet.%3C/p%3E%3Cp%3E7.%20Heat%20the%20skillet%20for%203%20minutes%20on%20high%20heat.%20Add%20a%20shimmer%20of%20canola%20or%20other%20oil%20and%20get%20that%20good%20and%20hot,%20too.%20Another%20minute%20or%20two.%3C/p%3E%3Cp%3ESlip%20in%20the%20chicken,%20back%20side%20down,%20into%20the%20skillet,%20and%20then%20place%20the%20skillet%20in%20the%20oven.%20(Or%20on%20the%20grill.)%3C/p%3E%3Cp%3EThe%20chicken%20will%20take%20about%2050%20minutes%20to%20one%20hour.%20The%20only%20reliable%20test%20is%20a%20thermometer%20reading%20of%20160.%3C/p%3E%3Cp%3ERemove%20the%20chicken%20from%20the%20oven/grill%20and%20put%20it%20on%20the%20stove,%20over%20high%20heat,%20and%20add%20thyme%20and%201/2%20c%20chicken%20broth,%20then%20spoon%20the%20broth%20over%20the%20chicken.%20Allow%20the%20bird%20to%20rest%20for%2010%20minutes,%20then%20quarter%20and%20serve.%3C/p%3E){kind=link}
