%20we%20all%20have%20teachers%20from%20elementary%20or%20high%20school%20or%20college%20who%20really%20left%20an%20impression%20on%20our%20lives.%20I%20consider%20myself%20very%20fortunate%20and%20am%20grateful%20that%20there%20were%20so%20many%20men%20and%20women%20in%20my%20life%20who%20taught%20me%20much%20more%20than%20the%20things%20applying%20to%20the%20subject%20at%20hand.%3C/p%3E%3Cp%3EOne%20of%20those%20wonderful%20people%20is%20a%20women%20named%20Se%C3%B1ora%20Maiz.%20She%20was%20my%20high%20school%20Spanish%20teacher,%20and%20she%20was%20(and%20undoubtedly%20still%20is)%20one%20of%20the%20most%20passionate%20instructors%20I%20ever%20had.%20She%20loved%20her%20job,%20her%20students,%20and%20her%20language.%20One%20thing%20I%20that%20stands%20out%20in%20my%20mind%20about%20her%20is%20that%20even%20though%20her%20children%20attended%20a%20rival%20school%20in%20our%20district,%20she%20still%20fervently%20cheered%20for%20her%20students%20at%20track%20meets%20and%20the%20like.%3C/p%3E%3Cp%3EI%20still%20remember%20a%20surprising%20amount%20of%20the%20Spanish%20she%20taught%20me,%20including%20several%20catchy%20songs.%20We%20also%20had%20a%20day%20each%20semester%20where%20we%20got%20to%20eat%20lots%20of%20delicious%20Mexican%20food,%20including%20delights%20like%20homemade%20enchiladas%20and%20fresh%20sopapillas.%20This%20batch%20of%20cupcakes,%20with%20its%20popular%20combination%20of%20cayenne%20pepper,%20cinnamon,%20and%20cocoa%20powder,%20is%20dedicated%20to%20Se%C3%B1ora%20Maiz.%3C/p%3E%3Cp%3EMexican%20Chocolate%20Cupcakes%3C/p%3E%3Cp%3E(makes%20about%2024!)(but%20it's%20very%20easy%20to%20halve!)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees%20F.%20Line%20standard%20muffin%20tins%20with%20paper%20liners;%20set%20aside.%20Sift%20together%20cocoa%20powder,%20flour,%20sugar,%20baking%20soda,%20baking%20powder,%20salt,%20cinnamon,%20and%20cayenne%20pepper%20into%20a%20large%20bowl.%20Add%20eggs,%20warm%20water,%20buttermilk,%20oil,%20and%20vanilla,%20and%20mix%20until%20smooth,%20about%203%20minutes.%20Scrape%20down%20the%20sides%20and%20bottom%20of%20bowl%20to%20assure%20batter%20is%20well%20mixed.%20Divide%20batter%20evenly%20among%20prepared%20cups,%20filling%20each%202/3%20full.%20Bake%20until%20tops%20spring%20back%20when%20touched,%20about%2020%20minutes,%20rotating%20pan%20once%20if%20needed.%20Transfer%20to%20a%20wire%20rack;%20let%20cool%20completely.%3C/p%3E%3Cp%3ETo%20make%20the%20frosting,%20beat%20the%20butter%20with%20an%20electric%20mixer%20for%20a%20few%20minutes.%20Add%20the%20powdered%20sugar%20gradually%20until%20the%20frosting%20is%20thick%20enough%20to%20spread%20easily,%20then%20beat%20in%20the%20cayenne%20pepper.%20Apply%20frosting%20generously%20to%20the%20cooled%20cupcakes,%20top%20each%20with%20a%20sprinkling%20of%20cinnamon%20sugar,%20and,%20after%20giving%20the%20components%20a%20few%20minutes%20to%20get%20to%20know%20each%20other,%20devour.%3C/p%3E){kind=link}
