Acorn Squash Stuffed With Apple Couscous

Ingredientes

  • 1 c. Couscous
  • 1 c. Apple juice
  • 1/4 c. Prunes, pitted & minced
  • 1/4 c. Dry cranberries
  • 1/4 c. Dry apples
  • 1/4 c. Apple juice concentrate, thawed
  • 1/4 tsp Cardamom, grnd
  • 1 Tbsp. Maple syrup
  • 4 x Acorn squash, halved & seeded
  • 1/4 c. Pecans, toasted & minced, optional

Direcciones

  1. Place couscous in a small mixing bowl. Set aside.
  2. Bring apple juice to a boil in a small saucepan & pour over the couscous. Cover & set aside till the juice is absorbed. This will take 15 min.
  3. Stir in the fruit, apple juice concentrate, cardamom & maple syrup.
  4. Set aside.
  5. Steam squash halves till tender, about 15 min. Drain & place on a baking sheet. Preheat oven to 350F. Fill squash halves with the couscous mix & bake for 20 min. Top with pecans & serve.
