Receta Acorn Squash Stuffed with Walnuts and Mushrooms; I hate unreliable problems
My winter squashes were strange this year. Most of them didn’t form until late in the season, which meant I had to leave them a lot longer before they were ripe.
Fine, I can deal with that.
But they were also all different sizes. I have spaghetti squash that range from single-serving size to feed-the-village size and the same with the acorn squash.
The small acorn squashes look like acorn squash; the big ones look more like flying saucers with scalloped edges and they have a lot of seeds in a very tiny center….. Not at all good for stuffing.
So I stuff the little ones for a first course.
I give up on trying to understand / figure out my vegetable garden.
Fortunately, everything tastes good.
Acorn Squash Stuffed with Walnuts and Mushrooms
Total time: 40 minutes
Ingredients:
- 1 small acorn squash
- 3 medium shallots, sliced
- 3oz (90gr) mushrooms, quartered
- 1/2 cup walnut halves
- 1 tbs olive oil
- 1 tbs butter
- 1 tbs tamari (substitute soy sauce)
- 1/2 tsp chili powder
- 1/4 tsp powdered ginger
Instructions:
Cut squash in half and scoop out seeds.
Place cut-side down in a baking dish, bake for 25 minutes at 400F.
15 minutes before squash is done slice shallots; clean and cut mushrooms
Heat the oil and butter in a skillet over medium heat.
Sauté the shallots until tender, about 5 minutes.
Add mushrooms and sauté 5 more minutes
Turn heat to medium high and add walnuts, chili powder, ginger and tamari. Stir-fry until glazed
Remove squash and fill center with stuffing, dividing evenly..
Bake 5 minutes longer
Remove and serve..
My new computer is misbehaving.
I hate it when they do that…..
It turns itself off for no apparent reason, right in the middle of me doing stuff.
Yes, I know that’s called ‘crashing’ but this seems different.
I’ve had lots of computers crash for lots of reasons and usually one gets some sort of warning. Mine is just on one second, then everything is completely off….. no fan winding down, fading light on the monitor, blue screen of death…. nothing.
And it won’t turn back on. I hit the power button and the light comes on but nothing else happens. The disc doesn’t engage, no fan, no noise of any kind – just the pretty blue light.
A few hours later it works fine and keeps working fine for several days, non-stop.
So I have two problems:
The computer is unreliable.
I can’t reproduce the problem to narrow it down for repair.
Fortunately the computer guy knows that I’m not totally computer illiterate so at least he’ll listen to me.
I hope….
