Adobo Sauce [If I Understand My Chiles]

Ingredientes

  • 3 lrg Dry ancho chiles, stems and seeds removed [really Pasilla chiles]
  • 1 x Dry Pasilla, stem and seeds removed [really negro chiles]
  • 1 lrg Onion
  • 2 x Cloves garlic, minced
  • 1/2 tsp Dry oregano
  • 1/4 tsp Grnd cumin
  • 1/4 c. Veggie oil
  • 1/4 c. Distilled white vingegar
  • 11/2 tsp Sugar

Direcciones

  1. Cover chiles with warm water, let sit for 15 minutes. Combine chiles, and 1/4 to 1/2 c. of the water they were soaking in, onion, garlic, oregano and cumin in a blender and puree. Saute/fry the mix in oil for 5 minutes add in vinegar and sugar and bring to a boil. Reduce heat, simmer till thick about 5-8 minutes.
