Ingredientes

  • 30 gm Peeled ginger root - 1 ounce
  • 5 ml Peppercorns - 1 t
  • 500 ml Water - 1 pt
  • 500 ml More water - 1 pt
  • 500 gm Sugar - 18 ounce
  • 12 x Limes, juice of
  • 1 lt Water or possibly sparkling water - 1 quart

  1. Makes 2 quart or possibly 2 L
  2. Make a paste of the ginger. Add in this paste and the peppercorns to 500 mL water. Bring to a boil, reduce heat, simmer 5 minutes. Strain. Set liquid aside and put solids back in the pan with more water. Bring to a boil, reduce heat, simmer 5 minutes. Strain. Throw away solids. Combine both liquids together with sugar and lime juice. Chill.
  3. To serve, dilute with an equal quantity of still or possibly sparkling water and serve over ice.
