%3C/p%3E%3Cp%3ELooks%20like%20some%20salads%20are%20in%20order.%20What%20would%20you%20make%20with%20these%20ingredients?%3C/p%3E%3Cp%3EBonus!%20Week%202%20Revisited!%3C/p%3E%3Cp%3EIf%20you%20read%20the%20posts%20about%20last%20week's%20share,%20you%20may%20remember%20that%20I%20did%20my%20volunteer%20shift%20and%20took%20home%20some%20extra%20vegetables%20during%20week%20two.%20I%20wanted%20to%20let%20you%20know%20that%20I%20did,%20in%20fact,%20try%20the%20bok%20choy%20skillet%20supper%20recipe%20I%20found%20online.%20It%20uses%20bulgar%20wheat,%20which%20I'd%20never%20cooked%20with%20before%20--%20but%20which%20is%20very%20easy%20to%20prepare.%20It%20was%20pretty%20quick,%20too.%20Most%20of%20the%20time%20spent%20on%20this%20dish%20is%20in%20cutting%20and%20chopping%20veggies%20during%20prep.%20Finished,%20it%20was%20surprisingly%20flavorful%20--%20especially%20considering%20some%20of%20the%20online%20reviews%20suggested%20it%20wouldn't%20be.%20Since%20I%20had%20%22full-sized%22%20bok%20choy%20(the%20recipe%20calls%20for%20baby),%20I%20just%20cut%20the%20greens%20off%20and%20arranged%20them%20alongside%20the%20stalks%20in%20the%20pan.%3C/p%3E%3Cp%3EModifications:%20We%20are%20not%20vegetarians,%20so%20we%20used%20chicken%20stock%20(which%20changes%20the%20flavor),%20and%20we%20also%20subbed%20in%20portobello%20mushrooms%20(chopped)%20for%20the%20button%20mushrooms.%20I%20also%20doubled%20the%20tomatoes,%20and%20it%20could%20have%20handled%20even%20more.%20Our%20skillet%20is%20pretty%20large.%20Oh,%20and%20I%20%22cheated%22%20when%20it%20came%20to%20the%20garlic-infused%20oil,%20by%20doing%20it%20on%20the%20fly%20with%20some%20smashed%20cloves%20of%20garlic%20in%20the%20pan%20with%20olive%20oil.%20I%20removed%20them%20before%20finishing%20the%20dish%20(and%20ate%20them%20on%20their%20own:%20yum!).%20This%20dish%20used%20up%20our%20remaining%20bok%20choy%20and%20garlic%20scapes%20(I%20used%20the%20scapes%20in%20place%20of%20shallots).%20Top%20with%20a%20drizzle%20of%20soy%20sauce.%3C/p%3E%3Cp%3EHere's%20the%20recipe,%20in%20case%20you'd%20like%20to%20try%20it.%20Toddler-%20and%20grownup-approved!%3C/p%3E%3Cp%3EWhat%20are%20you%20making%20this%20week?%3C/p%3E){kind=link}
