.%20When%20I%20first%20moved%20down%20here,%20I%20would%20still%20make%20my%20mothers%20classic%20meat%20sauce%20and%20use%20jarred%20sauce%20for%20those%20friends%20who%20didn't%20eat%20meat.%20But%20when%20I%20made%20things%20like%20lasagna%20where%20the%20sauce%20was%20already%20mixed%20in,%20we%20ran%20into%20problems.%20The%20fix%20was%20easy%20-%20learn%20to%20make%20a%20marinara%20sauce%20that%20would%20rival%20the%20deep%20flavors%20of%20any%20meat%20sauce.%3C/p%3E%3Cp%3EWhen%20I%20looked%20on%20the%20internet%20for%20example%20recipes%20(usually%20I%20like%20to%20look%20at%204%20or%205%20different%20versions%20then%20decide%20which%20ingredients%20and%20methods%20I%20will%20go%20with),%20I%20wasn't%20happy%20seeing%20additions%20of%20sugar,%20powdered%20spices%20and%20other%20ingredients%20that%20my%20mother%20(never%20mind%20my%20grandmother!)%20would%20never%20have%20put%20in%20sauce.%20I%20decide%20to%20make%20up%20my%20own%20version%20and%20over%20the%20past%20year%20or%20so%20I%20feel%20that%20it%20is%20really%20a%20great%20substitute.%20Nothing%20will%20compare%20to%20a%20meat%20sauce%20and%20those%20nicely%20browned%20up%20bits%20of%20meaty%20surprise%20that%20are%20well%20incorporated%20into%20the%20sauce%20lending%20it%20flavors%20that%20are%20uniquely%20carnivorous.%20But%20this%20sauce%20avoids%20some%20of%20the%20most%20common%20pitfalls%20of%20vegetarian%20sauces,%20too%20many%20vegetables%20(don't%20get%20me%20wrong%20I%20love%20my%20veggies%20but%20this%20is%20pasta%20sauce%20not%20minestrone%20soup!),%20too%20thin%20and%20watery%20(I%20simmer%20low%20and%20slow%20just%20like%20a%20meat%20based%20sauce),%20too%20much%20%22raw%22%20tomato%20taste%20(the%20addition%20of%20carrots%20seems%20to%20add%20enough%20sweetness%20to%20balance%20the%20acidity%20of%20the%20tomatoes)%20and%20with%20a%20rich%20base%20that%20gives%20this%20flavor%20to%20spare%20(onion,%20garlic%20and%20a%20splash%20of%20red%20wine).%3C/p%3E%3Cp%3EBut%20first%20some%20pics%20of%20our%20gnocchi%20making%20session...%203%20girls,%2015%20lbs%20of%20potatoes%20and%203%204%20%20hours%20of%20work.%20Somehow%20things%20always%20seem%20to%20take%20a%20lot%20longer%20than%20they%20should%20but%20at%20least%20when%20you%20are%20making%20dinner%20there%20is%20a%20great%20reward%20for%20you%20at%20the%20end!%3C/p%3E%3Cp%3EJess%20and%20Tova%20ricing%20the%20potatoes%3C/p%3E%3Cp%3EMe%20trying%20my%20hand%20at%20the%20ricer%3C/p%3E%3Cp%3EPouring%20beaten%20eggs%20into%20the%20potato%3C/p%3E%3Cp%3EMaking%20the%20ridges%20in%20the%20fresh%20gnocchi%3C/p%3E%3Cp%3EA%20close%20up%20of%20the%20finished%20goods!%3C/p%3E%3Cp%3EKeep%20reading%20for%20the%20marinara%20recipe%3C/p%3E%3Cp%3EMarinara%20Sauce%3C/p%3E%3Cp%3E6)%20Once%20sauce%20has%20come%20back%20to%20a%20low%20boil,%20reduce%20heat%20and%20stir%20occasionally%20for%202-%205%20hrs%20(sauce%20will%20lose%20water%20and%20thicken%20during%20this%20time%20add%20some%20water%20if%20it%20gets%20undesirably%20thick)%3C/p%3E%3Cp%3E7)%20About%2030%20min%20before%20serving,%20add%20basil%20and%20salt%20&%20pepper%20to%20sauce%20to%20taste%3C/p%3E%3Cp%3ESauce%20can%20be%20canned%20in%20glass%20jars%20for%20long%20term%20storage%20or%20frozen%20in%20containers.%3C/p%3E){kind=link}
