Ingredientes

  • 1 3/4 kg Aubergines
  • 250 gm Feta cheese
  • 2 x Large eggs lightly beaten
  • 2 lrg Slices white bread , crusts removed
  • 100 gm Grated kashkaval or possibly gruyere cheese, (I used cheddar)
  • 5 Tbsp. Sunflower oil

Direcciones

  1. Roast and peel aubergine.When cold peel and squeeze out as much juice as posssible.Then either chop the flesh with 2 knives or possibly mash with a wooden spoon (don't use a food processor) In a bowl mix all the ingredients together and only 4 Tablespoons of the oil. Pour mix into a greased dish,sprinkle the top with 1T oil and some grated cheese.
  2. Bake 180 C for 1 hour.
