,%20in%20a%20very%20good%20way%20of%20course.%20She's%20been%20talking%20to%20me%20about%20the%20health%20benefits%20of%20coconut%20oil%20over%20the%20past%20weeks%20and%20so%20recently%20I%20bought%20some%20to%20try%20out%20for%20myself.%20She%20only%20uses%20coconut%20oil,%20and%20even%20makes%20biscuits%20with%20them.%3C/p%3E%3Cp%3EThe%20health%20benefits%20of%20coconut%20oil%20include%20hair%20care,%20skin%20care,%20stress%20relief,%20maintaining%20cholesterol%20levels,%20weight%20loss,%20increased%20immunity,%20proper%20digestion%20and%20metabolism,%20relief%20from%20kidney%20problems,%20heart%20diseases,%20high%20blood%20pressure,%20diabetes,%20HIV%20and%20cancer,%20dental%20care,%20and%20bone%20strength.%20These%20benefits%20of%20coconut%20oil%20can%20be%20attributed%20to%20the%20presence%20of%20lauric%20acid,%20capric%20acid%20and%20caprylic%20acid,%20and%20its%20properties%20such%20as%20antimicrobial,%20antioxidant,%20antifungal,%20antibacterial,%20soothing,%20etc.%3C/p%3E%3Cp%3EShe%20eats%20lots%20of%20grains%20and%20sprouts%20her%20own%20lentils,%20makes%20her%20own%20yoghurt%20.%20.%20.%20eats%20lots%20of%20fruits%20and%20fresh%20veg,%20etc.%20all%20organic%20.%20.%20.%20and,%20I%20have%20to%20admit%20it%20shows%20.%20.%20.%20for%20a%20woman%20of%2054,%20she%20is%20in%20incredibly%20good%20shape%20and%20is%20very%20fit.%20So%20.%20.%20.%20I%20bought%20some%20organic%20virgin%20coconut%20oil%20for%20myself.%3C/p%3E%3Cp%3EIt%20is%20purpoted%20to%20be%20one%20of%20the%20healthiest%20of%20oils%20and%20superfoods,%20and%20is%20ideal%20to%20be%20used%20as%20a%20high%20temperature%20cooking%20oil%20as%20it%20can%20be%20heated%20to%20much%20higher%20temperatures%20than%20normal%20oil.%20I%20also%20heard%20it%20makes%20really%20good%20popcorn!%3C/p%3E%3Cp%3EI%20decided%20to%20use%20it%20in%20this%20baked%20chicken%20recipe%20of%20mine,%20which%20I%20think%20is%20fairly%20healthy%20.%20.%20.%20except%20for%20the%20fat%20bit.%20Normally%20I%20would%20use%20butter%20for%20this%20.%20.%20.%20but%20on%20this%20day%20I%20used%20coconut%20oil,%20which%20went%20really%20well%20with%20the%20other%20elements%20of%20the%20dish.%3C/p%3E%3Cp%3EI%20like%20to%20use%20free%20range,%20organic%20boneless%20skinless%20chicken%20breasts.%20(I%20know%20you%20don't%20need%20to%20use%20these,%20but%20if%20I%20am%20eating%20meat%20or%20chicken,%20I%20want%20it%20to%20be%20happy%20meat%20or%20chicken.%20To%20me%20it%20just%20tastes%20better.)%20I%20pounded%20them%20just%20a%20bit%20to%20make%20them%20a%20bit%20more%20tender%20.%20.%20.%20and%20then%20lightly%20spiced%20them%20with%20a%20medium%20strength%20curry%20powder,%20some%20fine%20seasalt%20and%20black%20pepper%20.%20.%20.%3C/p%3E%3Cp%3EThen%20I%20dipped%20them%20into%20some%20coconut%20oil%20and%20rolled%20them%20in%20a%20mixture%20of%20crushed%20flaked%20almonds%20and%20flaked%20unsweetened%20coconut.%3C/p%3E%3Cp%3EBaked%20for%2020%20minutes,%20they%20came%20out%20perfectly%20moist%20and%20delicious.%20The%20coconut%20oil%20only%20slightly%20flavoured%20them,%20but%20in%20a%20good%20way%20.%20.%20.%20not%20overpowering%20at%20all%20.%20.%20.%20and%20the%20nuts%20and%20coconut%20got%20nicely%20browned%20and%20gave%20a%20nice%20bit%20of%20crunch!!%20Probably%20a%20lot%20more%20nutritious%20than%20bread%20crumbs%20too%20.%20.%20.%20with%20plenty%20of%20protein%20and%20texture.%3C/p%3E%3Cp%3EI%20served%20them%20with%20a%20simple%20sweet%20and%20spicy%20mayo%20that%20I%20made%20by%20stirring%20together%20some%20low%20fat%20Hellman's%20and%20a%20really%20good%20Mango%20Chutney.%20(I%20like%20Geeta's%20Premium%20myself.)%3C/p%3E%3Cp%3EWhat%20can%20I%20say%20.%20.%20.%20Yummy%20Scrummy!%20I%20am%20looking%20forward%20to%20experimenting%20even%20more%20with%20it%20now%20.%20.%20.%20the%20coconut%20oil%20that%20is.%20I'll%20keep%20you%20all%20posted!%3C/p%3E%3Cp%3E*Almond%20and%20Coconut%20Crusted%20Chicken%20with%20a%20Sweet%20and%20Spicy%20Mayo%20Dip*%3C/p%3E%3Cp%3EServes%202%3C/p%3E%3Cp%3EIf%20you%20like%20coconut,%20you%20will%20love%20this.%20Moist%20chicken%20with%20a%20crisp%20and%20coconutty%20crust,%20served%20up%20with%20a%20spicy%20sweet%20mayo%20on%20the%20side.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20200*C/%20400*D/%20gas%20mark%206.%20Butter%20a%20small%20shallow%20baking%20dish,%20and%20set%20aside.%3C/p%3E%3Cp%3EMix%20together%20the%20crushed%20almonds%20and%20coconut%20in%20a%20shallow%20bowl.%20Put%20the%20melted%20coconut%20oil%20in%20another%20one.%20Place%20the%20chicken%20breasts%20into%20a%20ziplock%20baggie%20and%20bash%20them%20a%20bit%20with%20a%20rolling%20pin%20to%20give%20you%20an%20equal%20thickness%20and%20to%20tenderize%20them.%20(Don't%20over%20do%20this%20stage.%20You%20don't%20want%20them%20to%20be%20over%20large,%20just%20more%20even.)%20Mix%20together%20the%20curry%20powder,%20salt%20and%20pepper.%20Pat%20the%20chicken%20breasts%20dry%20and%20then%20season%20them%20all%20over%20with%20the%20spice%20mixture.%20Dip%20the%20chicken%20into%20the%20coconut%20oil,%20allowing%20any%20excess%20to%20drip%20off.%20Dredge%20in%20the%20coconut/almond%20mixture.%20Place%20into%20the%20prepared%20baking%20dish,%20leaving%20space%20between%20each.%20Sprinkle%20any%20remaining%20coconut%20and%20nuts%20over%20top%20and%20then%20drizzle%20with%20any%20remaining%20coconut%20oil.%20Bake%20for%20about%2020%20minutes,%20until%20golden%20brown%20and%20cooked%20through.%20The%20juices%20should%20run%20clear.%3C/p%3E%3Cp%3EWhile%20the%20chicken%20is%20cooking,%20stir%20together%20the%20mayonnaise%20and%20chutney%20until%20well%20mixed.%20Serve%20the%20hot%20chicken%20breasts%20with%20some%20of%20the%20chutney%20mayo%20on%20the%20side.%3C/p%3E%3Cp%3EMy%20sister%20is%20in%20Canada%20and%20she%20buys%20her%20coconut%20oil%20here.%3C/p%3E%3Cp%3EI%20got%20mine%20here%20in%20the%20UK%20at%20this%20place.%3C/p%3E%3Cp%3EIt's%20not%20cheap,%20but%20I%20got%20it%20at%20a%20very%20good%20price,%20almost%20half%20the%20cost%20it%20normally%20is.%3C/p%3E%3Cp%3ECoconut%20oil%20.%20.%20.%20tis%20good%20for%20your%20health.%20I%20hear%20it%20also%20makes%20a%20fabulous%20skin%20cream!%3C/p%3E){kind=link}
