Ingredientes

  • 3 c. Wheat bran cereal, All Bran extra fiber
  • 1 c. Boiling water
  • 1 c. Sugar
  • 1/2 c. Margarine
  • 2 x Egg whites
  • 2 1/2 c. Flour
  • 2 1/2 tsp Baking soda
  • 1 tsp Salt
  • 1/2 tsp Nutmeg
  • 1 tsp Cinnamon
  • 1 pt Buttermilk

Direcciones

  1. Preheat oven to 400 degrees.
  2. Put 1 c. bran in small bowl. Add in boiling water, stir, and let stand. In large bowl, cream sugar and margarine. Beat egg whites slightly and add in to mix. Add in combines flour, baking soda, salt, and spices. Stir till mixed. Add in the softened bran, remaining bran, and buttermilk. Mix well. Store in tightly covered container; chill minimum of 12 hrs. (Will keep up to 6 weeks.)
  3. Line muffin tins with paper baking c., fill 2/3 full. Bake 18 min. (After baking, may dip top of muffin in melted margarine, then in sugar cinnamon mix.)
