%20there%20was%20frequent%20bake%20sales%20and%20I%20have%20fond%20memories%20of%20the%20kitchen%20being%20filled%20with%20all%20sorts%20of%20cakes%20but%20my%20favourite%20were%20the%20butterfly%20cakes!%20How%20pretty%20they%20were%20to%20eat%20and%20most%20importantly,%20how%20good%20they%20tasted!%20Nothing%20beats%20a%20home%20made%20cake,%20and%20whilst%20my%20icing%20skills%20are%20erm%20rustic,%20to%20put%20it%20politely%20I%20think%20that%E2%80%99s%20half%20the%20charm%20of%20them!%3C/p%3E%3Cp%3EWhilst%20the%20ones%20my%20mum%20made%20were%20definitely%20aimed%20at%20children,%20these%20ones%20are%20all%20grown-up%20with%20a%20naughty%20spike%20of%20Disaronno%20liqueur,%20and%20a%20heavenly%20mascarpone%20frosting%20on%20top!%20I%20also%20got%20to%20play%20with%20some%20new%20delicious%20100%25%20fruity%20jam%E2%80%99s%20sent%20very%20kindly%20to%20me%20by%20Nell%20from%20Superjam,%20who%20I%20got%20into%20correspondence%20with%20recently%20over%20a%20fantastic%20scheme%20they%20are%20running%20to%20host%20tea-parties%20for%20the%20elderly.%20You%20can%20find%20out%20more%20on%20their%20website!%20Their%20jam%20is%20delicious%20by%20the%20way,%20a%20nice%20balance%20of%20fruit%20and%20nothing%20dodgy%20inside!%3C/p%3E%3Cp%3EAt%20the%20time%20of%20making%20these%20for%20some%20unknown%20reason%20I%20really%20wanted%20to%20add%20some%20ground%20almonds%20but%20couldn%E2%80%99t%20find%20any%20in%20the%20cupboard,%20I%20think%20I%20must%20of%20used%20them%20all%20when%20making%20my%20Christmas%20swirls%20the%20other%20week%E2%80%A6%20However%20these%20cakes%20were%20rather%20glorious%20and%20whilst%20I%20am%20still%20curious%20to%20how%20they%20would%20alter%20the%20taste,%20as%20these%20stand%20they%20are%20pretty%20darn%20perfect!%3C/p%3E%3Cp%3EThe%20mascarpone%20frosting%20is%20amazing,%20if%20I%20do%20say%20so%20myself.%20If%20you%20find%20yourself%20eating%20it%20with%20a%20spoon%20I%20shall%20not%20be%20held%20responsible.%20Its%20easy%20to%20work%20with,%20deliciously%20creamy%20and%20very%20slightly%20boozy%20and%20well,%20need%20I%20say%20more%20really?%3C/p%3E%3Cp%3EMakes%2012%3C/p%3E%3Cp%3EPre-heat%20oven%20to%20160o%20fan/%20180o%20regular%20oven%3C/p%3E%3Cp%3EStart%20by%20beating%20together%20the%20sugar%20and%20butter,%20until%20pale%20and%20fluffy.%3C/p%3E%3Cp%3EBeat%20in%20the%20first%20egg,%20then%20half%20the%20flour,%20repeat%20with%20second%20egg%20and%20flour,%20plus%20the%20baking%20powder.%3C/p%3E%3Cp%3EFold%20in%20the%20cocoa%20mix%20and%20liqueur.%20Stir%20in%20the%20chocolate%20bits.%20A%20hand%20mixer%20is%20advisable%20but%20do%20by%20hand%20if%20you%20like%20manual%20labour!%20I%20love%20my%20new%20allure%20mixer%20toy%20in%20particular!%20My%20Kenwood%20Chef%20is%20in%20storage,%20due%20to%20its%20size%20so%20this%20little%20hand%20whisk%20is%20an%20excellent%20substitute.%3C/p%3E%3Cp%3EFill%20the%20bun%20cases%20and%20bake%20for%2020%20minutes,%20or%20until%20risen%20and%20cooked%20through,%20allow%20to%20cool%20thoroughly%20before%20icing%20them.%20I%20used%20some%20pretty%20Christmassy%20cases%20from%20Sainsburys%E2%80%99.%3C/p%3E%3Cp%3EMascarpone%20frosting:%3C/p%3E%3Cp%3EFills%2012%20butterfly%20cakes,%20plus%20a%20little%20leftover%20for%20chefs%E2%80%99%20perk.%3C/p%3E%3Cp%3E250g%20mascarpone%3C/p%3E%3Cp%3E125g%20icing%20sugar%3C/p%3E%3Cp%3E1%20tbsp%20disaronno%20/%20amaretto%20liqueur%3C/p%3E%3Cp%3EBeat%20all%20the%20ingredients%20together,%20fill%20a%20piping%20bag%20with%20a%20large%20star%20nozzle.%3C/p%3E%3Cp%3EJam:%3C/p%3E%3Cp%3EI%20used%20Superjam%E2%80%99s%20strawberry%20spread.%20This%20or%20a%20similar%20good%20quality%20jam%20would%20be%20ideal.%3C/p%3E%3Cp%3ETo%20assemble:%3C/p%3E%3Cp%3EOnce%20the%20buns%20are%20cool,%20take%20a%20small%20paring%20knife%20and%20carefully%20cut%20the%20top%20off,%20if%20they%20are%20not%20very%20risen%20just%20aim%20the%20knife%20slightly%20inwards,%20cut%20the%20removed%20piece%20in%20half%20to%20form%20two%20%E2%80%98wings%E2%80%99%20and%20trim%20lightly%20if%20necessary.%20Repeat%20with%20the%20remaining%20buns.%3C/p%3E%3Cp%3EPipe%20a%20circle%20on%20the%20cut%20bun,%20leaving%20a%20slight%20indent%20in%20the%20middle,%20fill%20this%20gap%20with%20a%20good%20teaspoon%20of%20jam,%3C/p%3E%3Cp%3EGently%20place%20the%20wings%20carefully%20on%20and%20voila!%20You%20have%20pretty%20butterfly%20cakes!%3C/p%3E){kind=link}
