%20since%20I%20last%20attended%20school,%20no%20matter%20that%20my%20daughter's%20school%20follows%20a%20completely%20different%20calendar,%20to%20my%20mind,%20the%20months%20of%20April%20and%20May%20will%20forever%20be%20associated%20with%20school%20holidays.%3C/p%3E%3Cp%3ETwo%20months%20spent%20with%20nary%20a%20care%20in%20the%20world,%20gallivanting%20barefoot%20in%20the%20scorching%20sun,%20playing%20chor-police%20or%20lagori%20or%20dodge%20ball%20or%20simply%20riding%20the%20bicycle%20aimlessly%20around%20the%20neighbourhood.%3C/p%3E%3Cp%3EBy%20noon,%20sweaty,%20tired%20and%20thirsty%20from%20spending%20long%20hours%20in%20the%20hot%20sun,%20we'd%20run%20home,%20open%20the%20fridge%20and%20glug%20down%20whatever%20juice%20or%20sherbet%20my%20mother%20would%20have%20made.%20Sometimes,%20it%20would%20be%20kokum%20sherbet,%20sometimes,%20nimbu%20pani;%20April%20and%20May%20being%20the%20mango%20season,%20most%20of%20the%20times,%20there%20would%20be%20kairi%20panha%20sitting%20in%20the%20fridge.%20Cold,%20tangy%20and%20sweet%20with%20a%20hint%20of%20cardamom,%20it%20was%20manna%20from%20heaven,%20the%20best%20thirst%20quencher%20ever.%3C/p%3E%3Cp%3EI%20haven't%20had%20kairi%20panha%20in%20many%20years%20now,%20to%20be%20frank,%20I%20haven't%20even%20missed%20it%20too%20much.%3C/p%3E%3Cp%3EHowever,%20that%20day,%20after%20my%20little%20trip%20down%20memory%20lane,%20I%20just%20had%20to%20have%20it.%20I%20literally%20flew%20out%20of%20the%20house%20and%20to%20the%20Indian%20grocery%20shop%20to%20buy%20some%20raw%20mangoes.%3C/p%3E%3Cp%3EGreen%20(raw)%20mango%20sorbet%20wasn't%20something%20that%20I%20had%20even%20heard%20of.%20Yet,%20as%20I%20churned%20the%20raw%20mango%20pulp%20to%20make%20the%20panha,%20I%20noticed%20that%20it%20was%20incredibly%20smooth%20and%20creamy.%20A%20little%20germ%20of%20an%20idea%20began%20to%20take%20shape....how%20about%20a%20green%20mango%20sorbet.......%3C/p%3E%3Cp%3EAnd%20so,%20with%20the%20next%20batch%20of%20mangoes,%20I%20made%20a%20sorbet.%20Yes%20Dipali,%20you%20were%20absolutely%20right!%20Raw%20mangoes%20is%20what%20went%20into%20this%20sorbet.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3ERaw%20mangoes:%202%20large%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPressure%20cook%20the%20mangoes%20till%20they%20are%20cooked%20through%20-%20about%202%20whistles%20should%20do%20it.%3C/p%3E%3Cp%3EWhen%20they%20are%20cool%20enough%20to%20handle,%20scoop%20out%20the%20flesh%20and%20set%20aside.%20You%20need%201%20cup%20of%20mango%20pulp;%20I%20needed%201%20large%20mango%20for%20that%20amount.%3C/p%3E%3Cp%3EMeanwhile,%20in%20a%20saucepan,%20combine%20the%20jaggery%20and%20water%20and%20simmer%20for%205%20minutes.%20Strain%20and%20cool.%3C/p%3E%3Cp%3EBlend%20together%20the%20mango%20pulp%20and%20the%20jaggery-water%20mixture%20till%20smooth%20and%20creamy%20(taste%20at%20this%20stage,%20you%20might%20need%20to%20add%20more%20jaggery%20if%20your%20mangoes%20are%20too%20sour).%20Add%20in%20the%20cardamom%20powder%20and%20a%20pinch%20of%20salt.%20Chill%20for%20about%203%20hours%20and%20then%20freeze%20in%20your%20ice-%20cream%20maker%20according%20to%20the%20manufacturer's%20instructions.%3C/p%3E%3Cp%3EThis%20sorbet%20is%20best%20eaten%20when%20it%20has%20just%20set;%20else%20leave%20it%20on%20the%20counter%20for%20about%205%20minutes%20before%20serving.%3C/p%3E%3Cp%3EWhat%20can%20I%20say%20about%20the%20taste?%20Suffice%20to%20say%20that%20when%20I%20had%20the%20first%20spoonful,%20I%20did%20a%20little%20dance%20in%20the%20kitchen.%20If%20tangy%20and%20sweet%20is%20to%20your%20taste,%20then%20make%20this%20sorbet%20while%20green%20mangoes%20are%20still%20in%20season.%20I%20pigged%20out%20on%20the%20sorbet%20and%20ended%20up%20with%20a%20severe%20cold%20for%20the%20last%2010%20days%20that%20led%20to%20a%20sore%20throat%20and%20a%20ear%20infection.%3C/p%3E%3Cp%3ENow%20that%20I%20have%20recovered,%20I%20have%20another%20batch%20being%20churned%20in%20the%20ice%20cream%20maker%20even%20as%20I%20write%20this%20post!%3C/p%3E%3Cp%3ESharing%20this%20Green%20Mango%20Sorbet%20with%20'I%20Scream%20For%20Ice%20Cream'%20Challenge%20hosted%20by%20Yasmeen.%3C/p%3E){kind=link}
