evaporated%20into%20thin%20air,%20or%20b)disappeared%20into%20the%20deepest%20recesses%20of%20my%20brain,%20probably%20never%20to%20be%20heard%20from%20again.%3C/p%3E%3Cp%3EI%20say%20all%20this%20because%20I%20need%20to%20feel%20better%20about%20the%20blunders%20I%20make%20from%20time%20to%20time.%20My%20most%20recent%20%22Doh!%22%20moment%20came%20while%20making%20my%20first%20batch%20of%20jam%20this%20year.%20I%20had%20a%20hard%20time%20finding%20pectin%20in%20the%20grocery%20store%20(no%20one%20seems%20to%20know%20what%20it%20is!),%20and%20what%20I%20finally%20found%20didn't%20turn%20out%20to%20be%20what%20I%20had%20in%20mind.%20I%20began%20making%20the%20following%20recipe%20and%20when%20it%20came%20time%20to%20mix%20the%20pectin%20in%20the%20water,%20it%20didn't%20look%20quite%20right.%20It%20was%20then%20that%20I%20realized%20I%20had%20purchased%20instant%20pectin%20rather%20than%20classic.%20Fortunately,%20I%20had%20time%20to%20correct%20myself%20and%20everything%20turned%20out%20okay.%3C/p%3E%3Cp%3EThe%20jam%20I%20made%20had%20the%20perfect%20consistency%20for%20spreading%20onto%20bread%20without%20ripping%20it%20to%20pieces%20(a%20pet%20peeve%20of%20mine!)%20and%20a%20balanced%20sweetness%20that%20tasted%20wonderful%20with%20the%20bite%20from%20the%20balsamic%20vinegar.%20For%20the%20longest%20time,%20I%20couldn't%20understand%20why%20people%20liked%20strawberries%20and%20balsamic%20vinegar%20together,%20but%20I'm%20happy%20to%20report%20that%20my%20taste%20buds%20have%20awakened%20and%20I%20finally%20get%20it.%3C/p%3E%3Cp%3EThe%20next%20time%20you%20have%20a%20snafu%20in%20the%20kitchen,%20keep%20in%20mind%20that%20it%20happens%20to%20everyone,%20even%20those%20who%20have%20a%20couple%20of%20degrees%20related%20to%20such%20things.%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ECombine%20crushed%20berries%20with%20lemon%20juice%20in%20a%20large%20bowl.%20Add%20sugar,%20mixing%20thoroughly.%20Let%20stand%2010%20minutes.%3C/p%3E%3Cp%3EIn%20a%20small%20saucepan,%20combine%20the%20water%20and%20pectin;%20bring%20to%20a%20full%20rolling%20boil%20that%20cannot%20be%20stirred%20down,%20stirring%20constantly.%20Boil%20hard%20for%201%20minute,%20continuing%20to%20stir.%3C/p%3E%3Cp%3EAdd%20cooked%20pectin%20mixture%20to%20fruit%20mixture%20and%20stir%20for%203%20minutes,%20then%20stir%20in%20the%20balsamic%20vinegar%20until%20well%20blended.%3C/p%3E%3Cp%3ELadle%20or%20pour%20jam%20into%20sterilized%20freezer%20jars,%20leaving%201/2-inch%20headspace.%20Apply%20clean,dry%20lids%20and%20let%20jam%20stand%20in%20refrigerator%20until%20set,%20about%2024%20hours.%20You%20can%20refrigerate%20this%20jam%20for%203%20weeks%20or%20so%20or%20freeze%20up%20to%201%20year.%3C/p%3E){kind=link}
