Andalucian asparagus

I really liked this. The tangy, crispy topping was a win in my opinion.

Ingredientes

  • 1 bundle asparagus
  • skank 1/4 c olive oil
  • 1/4 c plain bread crumbs
  • 1/8 c almond meal
  • 3 T minced garlic
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 T red wine vinegar

Direcciones

  1. Heat the oil in a skillet.
  2. Add the garlic, bread crumbs, and almond meal and heat until golden brown and crispy.
  3. Transfer to a bowl and add the paprika, cumin and vinegar.
  4. In the same pan, add a little more oil and the asparagus.
  5. Cook the asparagus until the desired tenderness is reached, adding a little water to steam if needed.
  6. Serve with the bread crumb mixture over top.
